CHERRY BELL COOKIES
My mother, who was an avid collector of cookie recipes, always baked this cookie for Christmas. It is one of the many had in her special recipe book, which held only her favorite recipes.

Steps:
- Sift together: 3 cups flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon ginger and 1/2 teaspoon instant coffee. Put aside.
- Cream 1 cup butter or margarine. Add 1 1/4 cups brown sugar. Cream well. Blend in dark corn syrup, egg, and cream. Add dry ingredients and mix well.
- Roll out dough, 1/3 at a time on floured board to 1/8 inch thickness. Cut cookies into 2 1/2 inch rounds. Place on ungreased cookie sheet.
- To Make Filling: Combine 1/3 firmly packed brown sugar, 1 tablespoon butter, 3 tablespoons cherry juice. Stir in 1 1/2 cups chopped nuts, chopped fine.
- Place 1/2 teaspoon filling in center of each round. Shape into a bell by folding sides of dough to meet over the filling using spatula to fold over sides. Make top of bell narrower than at the clapper end. Place 1/2 of a maraschino cherry (cut side down) at open end of each bell for clapper. Bake at 350 degrees F for 12-15 minutes.

SPICED CHERRY BELLS
Coffee and ginger flavor this old-fashioned recipe Peggy Graving of Butte, Montana received from her mother-in-law years ago. "I always bake up a batch for the dessert buffet I host on Christmas Eve," Peggy writes. "Everyone comments on the taste, and the bell shape of the cookies adds to the festive occasion."

- In a bowl, cream butter and brown sugar. Beat in corn syrup, egg and cream. Combine dry ingredients; gradually add to the creamed mixture and mix well. Cover and refrigerate dough for 2-4 hours or overnight. , On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a 2-1/2-in. cookie cutter. Place 2 in. apart on ungreased baking sheets. , In a bowl, combine the first three filling ingredients; mix well. Stir in pecans. Place 1/2 teaspoon of filling in the center of each cookie. Shape into a cone by folding edges of dough to meet over filling; pinch edges together. Place a piece of cherry at open end of each bell for clapper. , Bake at 350° for 12-15 minutes or until golden brown. Immediately remove to wire racks to cool.

SPICED CHERRY BELL COOKIES
At Christmas, my mother always baked 12 different types of cookies and placed trays of them on our dining room table, along with nuts, candies, and fruits. It was always beautiful. She passed this recipe on to me because it was my absolute favorite. Not too sweet, just right! The dough can bit a bit sticky, so keep it refrigerated until ready to use, and try to work quickly with it.

- For dough:.
- Sift together flour, baking soda, salt, ginger and coffee. Cream butter and gradually add firmly packed brown sugar. Mix well.
- Blend in dark corn syrup, egg and heavy cream. Beat well. Add dry ingredients and mix thoroughly.
- Refrigerate dough for at least one hour. Roll out dough, 1/3 at a time on floured surface to 1/8 inch thickness. Cut into 3-inch rounds. Place on cookie sheet lined with parchment paper.
- For filling:.
- Combine all filling ingredients and mix well. Place 1/2 teaspoons of filling in the center of each round. Shape into a bell by folding the two upper edges of dough toward the center, covering all but the lower edge of the filling, using a spatula if necessary. Place 1/4 or 1/2 of a maraschino cherry just below lower edge of filling for the clapper. Bake at 350 degrees 12-15 minutes.

CHERRY BALL COOKIES (FROSTED)
These were my favorite holiday cookie growing up. I'm not sure why I only make them at Christmas; I love them so much I should make them year round! They are very sweet and a pretty addition to any holiday cookie tray.

Steps:
- Mix together - butter, sugar & vanilla.
- Add flour & salt (will be fairly dry/crumbly, if too dry to wrap around a cherry add a tbsp of cream/milk).
- Mold by tbsp fully around cherry.
- Place on un-greased cookie sheet about 1" apart.
- Bake at 350* for 12-15 minutes until set, but not brown.
- Icing: Mix together 1 Celsius powdered sugar, 1 1/2 tablespoons milk (I like to use leftover cherry juice instead of milk), 1 teaspoons vanilla (add cocoa if desired).
- Dip in frosting mix & set on waxed paper to harden.

- Make filling:
- Stir together brown sugar, butter, and 3 tablespoons cherry juice until combined, then stir in pecans. Set cherries aside.
- Make cookies:
- Put oven racks in upper and lower thirds of oven and preheat oven to 350°F.
- Whisk together flour, ginger, baking soda, salt, and coffee.
- Beat together brown sugar and shortening in a large bowl with an electric mixer at medium-high speed until pale and fluffy, 6 to 8 minutes. Add corn syrup, egg, and cream and beat until combined well.
- Reduce speed to low and add flour mixture, then mix until combined.
- Roll out one third of dough between 2 sheets of wax paper to 1/8-inch thick (about 15 by 11 inches). Chill dough on wax paper on a baking sheet until slightly firm, about 10 minutes. Cut out as many cookies as possible with cutter and transfer with a metal spatula to 2 ungreased large baking sheets, spacing them 1/2 inch apart. Roll out, chill, and cut remaining dough in same manner. Reserve scraps.
- Center 1/2 teaspoon nut filling on lower half of each cookie, then, using spatula, fold sides in toward center to form a cone. (Dough may crack along fold; part of filling will be exposed.)
- Stem and quarter cherries. Place 1 cherry quarter over exposed filling on each cookie to make bell clapper.
- Bake cookies, switching position of sheets halfway through baking, until edges are pale golden, 12 to 16 minutes total. Transfer to racks to cool completely.
- Reroll scraps, then make more cookies in same manner (reroll only twice), baking them on cooled sheets.

- In a stand-mixer bowl, beat the butter and sugar together until smooth and creamy, scraping down the sides a couple of times (3-4 minutes). Beat in the egg yolk and vanilla and blend well. Set the mixer speed to low and add the salt, then gradually add the flour 1/2 cup at a time, scraping down the bowl a couple of times. The dough will be soft and thick.
- Lightly flour a surface and turn out the dough onto it. Form the dough into an 8-inch long log and wrap tightly in plastic wrap. Refrigerate at least 3 hours before slicing (better overnight).
- Preheat the oven to 375°. Prepare a couple of cookie sheets with parchment paper. Slice the log into 1/4" cookies and place on a cookie sheet. The cookies should be about 2 1/2" to 3" round. Let the dough sit on the cookie sheets for about 5 minutes to reach almost room temperature.
- To form the bells, fold two edges of the upper half of the cookie over to the middle of the cookie, overlapping just slightly. Make sure the top of the cookie is a little smaller than the bottom half. (see photos of the cookies) Place half of a cherry in the bottom part of the bell to be the "clapper."
