Maraschino Cherry Almond Cookies image

Pretty pink refrigerator cookies, made with chopped maraschino cherries in an almond-flavored dough, have a shiny white frosting of Royal Icing

Provided by Richd250

Categories     Dessert

Time 1h12m

Yield 48 cookies

Number Of Ingredients 11

1 cup unsalted butter, at room temperature
2/3 cup powdered sugar, sifted
1 1/2 teaspoons almond extract
2 eggs, at room temperature
1/8 teaspoon salt
2 cups all-purpose flour
2/3 cup maraschino cherry, chopped drained
2 egg whites
2 teaspoons lemon juice
1/2 teaspoon vanilla extract
3 cups powdered sugar, sifted

Steps:

  • Place the butter in a mixing bowl, and beat with an electric mixer on high speed until smooth and creamy, about 2 minutes. Gradually beat in 2/3 cup of confectioners' sugar, then add almond extract, eggs, and salt, and beat until the mixture is fluffy and well combined, about 3 more minutes. Reduce mixer speed to medium, and gradually beat in flour until the dough is smooth, about 1 minute. Gently stir in the maraschino cherries.
  • Form the dough into 2 logs about 1 inch in diameter, roll each log in plastic wrap or waxed paper, and refrigerate until thoroughly chilled, at least 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Line several baking sheets with parchment paper.
  • Cut each dough log into about 25 slices about 1/2-inch thick, and place the cookies on the prepared baking sheets, leaving about 1/2 inch of space between each cookie.
  • Bake in the preheated oven until the cookies are set but not browned, 12 to 14 minutes. Remove to cooling racks to cool to room temperature, about 15 minutes.
  • To make icing, beat egg whites with lemon juice until frothy, about 1 minute, then beat in vanilla extract and confectioners' sugar, a cupful at a time, until the icing is smooth and spreadable. Spread about 1 teaspoon of icing on each cooled cookie, and let the icing harden before stacking.

CHERRY ALMOND WHITE CHOCOLATE SANDWICHES

Cherry Almond White Chocolate Sandwiches image

Jeff Mauro uses almond butter for the cookie filling, which gives it a nutty flavor you won't get from extract. Whip it up while the cookies bake.

Provided by Jeff Mauro, host of Sandwich King

Categories     dessert

Time 1h15m

Yield 24 cookies, 12 medium sandwiches and 24 sandwich-halves.

Number Of Ingredients 15

2 cups plus 2 tablespoons bleached all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 1/2 sticks (6 ounces) unsalted butter, melted and cooled slightly
1 cup packed light or dark brown sugar
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
1 large egg
1 large egg yolk
1/2 cup dried sour cherries, roughly chopped
1/2 cup white chocolate chunks or chips
3/4 cup almond butter
1/4 cup confectioners' sugar
1/4 cup unsalted butter, softened
1/8 teaspoon fine salt

Steps:

  • For the cookies: Preheat the oven to 325 degrees F, with racks in the upper and lower thirds of the oven. Line two rimmed baking sheets with parchment paper and set aside.
  • Mix the flour, baking soda and salt in a small bowl until combined. In the bowl of a stand mixer, beat the butter and both sugars on medium speed until smooth and incorporated. Add the vanilla, egg and egg yolk and mix until incorporated. Then add the flour mixture, sour cherries and white chocolate. Mix until incorporated.
  • Scoop a level tablespoon of dough, roll in a ball and, using fingertips, pull apart into two equal pieces. (You'll have 36 to make 18 sandwiches.) Place the formed dough balls on one of the prepared baking sheets, about 2 inches apart. Bake until the edges are slightly golden and the middles are still soft but not wet, 12 to 15 minutes. Let the cookies cool for 20 to 30 minutes on the baking sheets.
  • For the filling: While the cookies are cooling, beat the almond butter, confectioners' sugar, butter and salt with a hand-held mixer until whipped and light, about 2 minutes. Chill the filling until ready to assemble the cookies.
  • To assemble: Spread 1 tablespoon of the filling onto the bottom side of a cookie. Place another cookie, bottom-side down, onto the filling. Repeat with the remaining cookies.

CHERRY BUTTER COOKIES

Cherry Butter Cookies image

This is not a real sweet cookie. It is more like a shortbread cookie. This is a nice "tea cookie" for brunch or the holidays.....or anytime in my opinion! It tastes excellent with a cup of coffee or hot tea. You could also add a 1/2 cup of almond chips or ground almonds to this recipe, if you like.

Provided by Olive

CHERRY-ALMOND SUGAR COOKIE COBBLER

Cherry-Almond Sugar Cookie Cobbler image

Easy elegance is what this dessert is all about. Dark, sweet cherries get baked under an almond-sugar cookie crust and served with a warm vanilla cream sauce for a cobbler that brings the best of summer to the table, any time of the year. That's right, this recipe is made with frozen sweet cherries and utilizes a couple of other clever shortcuts-the "easy" part! There's no pitting involved when you use frozen cherries and the sugar cookie crust starts with Betty's quick mix. Folding cream cheese and chopped almonds into the sugar cookie dough makes them extra moist and flavorful, but the best part is that this crust doesn't need to be rolled out. Just drop balls of cookie dough on top of the cherries, and you'll be ready to bake. There's always time for dessert with this recipe at the ready!

Provided by By Betty Crocker Kitchens

Categories     Dessert

Time 1h5m

Yield 12

Number Of Ingredients 15

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
1/2 cup butter, softened
2 oz (from 8-oz package) cream cheese, softened
1 egg
1/2 cup coarsely chopped almonds
1 1/4 cups granulated sugar
1/4 cup cornstarch
8 cups frozen dark sweet cherries, thawed
1 teaspoon almond extract
1 tablespoon coarse sparkling sugar
1/3 cup granulated sugar
4 teaspoons cornstarch
1 1/2 cups half-and-half
2 tablespoons butter
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, stir cookie mix, 1/2 cup softened butter, the cream cheese and egg until soft dough forms. Stir in almonds. Set aside.
  • In 4-quart saucepan, mix 1 1/4 cups granulated sugar and 1/4 cup cornstarch. Stir in cherries. Cook over medium-high heat 10 to 12 minutes, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir in almond extract. Pour into baking dish. Drop dough by rounded tablespoonfuls evenly over filling (some cherries will show). Sprinkle coarse sparkling sugar on tops of cookie dough.
  • Bake 30 to 34 minutes or until cookies are golden brown and edges of fruit filling are bubby. Cool 15 minutes before serving.
  • Meanwhile, in 1-quart saucepan, mix 1/3 cup granulated sugar and 4 teaspoons cornstarch. Stir in half-and-half until smooth. Heat to boiling over medium heat, stirring constantly. Boil about 2 minutes or until slightly thickened. Remove from heat; stir in butter and vanilla. Keep warm until ready to serve.

I usually bake them around Christmas, but they are super any time of year. They are particularly great with a hot cup of coffee, I hope you enjoy these as much as my family does!
