CHEESY GARLIC SWEET POTATOES
Cheesy Garlic Sweet Potatoes are the perfect side dish OR snack! Mozzarella cheese and parmesan top these tender garlic butter smothered sweet potatoes!

Steps:
- Heat oven to 220°C | 425°F. Brush the potatoes with the garlic butter and season each potato with salt and pepper. Arrange cut-side down on a lightly greased baking sheet until golden brown and the flesh is tender (about 20-30 minutes, depending on your oven).
- Remove them from the oven, flip them cut-side up (skin side down) and top with the mozzarella, parmesan and parsley.
- Change oven settings to broil on low or medium heat and broil until the cheese is golden and melted (about 2 minutes). Sprinkle with more salt and pepper, if desired. Serve warm.

- Preheat oven to 350. Cook sweet potatoes until they are tender. You can microwave them for 5-7 minutes, or bake for 25-30 minutes.
- While sweet potatoes are cooking, melt butter and mix with garlic and spices.
- Cut sweet potato into coin shapes, smash with a fork and arrange on your baking sheet.
- Pour mixture over sweet potatoes and top with shredded cheese. Bake for 15 minutes, garnish with some more cheese, and broil on low for 2 more minutes.

- Scrub potatoes, prick lightly with a fork and microwave for six minutes, or until done. (Or, bake in oven at 400 degrees F for one hour or until done.) When cool enough to handle, cut the potatoes lengthwise and scoop out the insides into a small mixing bowl. Set aside potato skins.
- Mash the cooked potatoes with the three cheeses and salt and pepper. Distribute the potato mixture evenly among the potato shells. Top each with the sliced green onion and sprinkle paprika on top.
- Return potatoes to the microwave (one minute on high) or oven (10 to 15 minutes at 350 degrees F) or until hot. Wrap or store in a portable container to bring to work or the gym; microwave on high for 1 1/2 to two minutes on high before eating.

Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

Steps:
- Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
- Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
- Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.

- Fill a large pot with 1" water. Place potatoes in a steamer basket and lower into pot. Cover pot and bring to a boil. Steam until potatoes are fork-tender, 25-30 minutes.
- Place an oven rack about 8" from broiler; preheat broiler. Coat a rimmed baking sheet with 1 Tbsp. oil. Arrange potatoes skin side down on prepared pan.
