Number Of Ingredients 13

2 tablespoons EVOO Extra Virgin Olive Oil
1/3 cup orzo
1 clove garlic
finely chopped or grated
1 cup light brown or white rice
such as Texmati brand
1 3/4 cups chicken stock or broth
regular or low-sodium
Salt and ground black pepper
2 bunches fresh spinach
chopped (about 4 cups) or 1 10-ounce box frozen chopped spinach
defrosted
3/4 to 1 cup grated Parmigiano Reggiano cheese

Steps:

  • Place a medium pot over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Add the orzo to the pan and toast until golden brown, 3-4 minutes
  • Add the garlic to the pan and continue cooking for another 30 seconds
  • Add the rice, broth, salt and pepper to the pan and bring up to a bubble
  • Cover the pot, reduce the heat to medium-low and simmer until all of the liquid has been absorbed, about 15 minutes
  • Fluff the finished rice with a fork and fold in the spinach and cheese
  • Serve alongside Lemon Pepper Chicken

Number Of Ingredients 12

2 cups + 1 Tbl. cold water
2 tsp. Superior Touch Better Than Bouillon Chicken Base
2 tsp. dried minced onion
1½ tsp. minced garlic
1 tsp. dried parsley
1 cup regular white rice
2 Tbl. real butter, cut up
8 oz. Sharp Cheddar Velveeta, cubed
1/2 cup finely grated pecorino-romano cheese
1/4 cup mayo
1/4 cup cream or milk
1/2 of a 10 oz pkg. frozen chopped spinach, thawed and squeezed dry (save rest for another use)

Steps:

  • In medium saucepan, add water and next 7 ingredients.
  • Heat over medium high heat, covered with tight-fitting lid, until it comes to a boil. Stir, recover, turn down to LOW, and let simmer for 16 minutes. *Do not lift lid while simmering!
  • When time is up, remove lid, quickly stir in cheeses, mayo and spinach, and recover.
  • Let sit for 5-8 minutes.
  • When cheeses have melted and are soft, re-stir until creamy and cheeses are stirred in evenly. Serve hot.

10 oz of spinach (canned or frozen/thawed), chopped
4-5 oz of sharp cheddar
Butter

Steps:

  • Scramble eggs in bowl. Add milk and pieces of chopped spinach.
  • Then place into a greased skillet and cook for 2 minutes on medium.
  • Then place shredded cheddar into the pan and scramble it into the egg until cooked. Butter and season to taste.

Finally, a way to get even your pickiest eaters to eat their spinach! This is a filling and quick casserole that can easily be made low fat if you use ground turkey and low-fat cheese. Serve with a green salad and some french bread and dinner is served!

1 lb ground beef
shredded monterey jack cheese
1 (16 ounce) box penne pasta, cooked
salt & pepper
seasoned garlic salt
2 -3 bunches fresh spinach
olive oil
3 -4 garlic cloves
1/2 onion, chopped
1 (10 3/4 ounce) can condensed condensed cream of mushroom & garlic soup

Steps:

  • In a large wok or frying pan heat oil and cook onion and garlic in a small amount of oil until transparent.
  • Add spinach and cook until wilted. Set aside.
  • Brown ground beef and season with garlic salt, salt and pepper to taste. Set aside.
  • Combine cooked pasta, spinach, ground beef, cheese (amount to your preference, my family likes it cheesy!) and soup.
  • Add salt and pepper to taste.
  • Place in a large baking dish, cover in a layer of shredded cheese.
  • Cover with tin foil and place in a 350°F oven for 30 minutes.
  • Uncover and place back in oven for another 10 minutes.

3 tablespoons butter
1 cup soft breadcrumbs (Whole wheat or white)
1/4 cup parmesan cheese
1 (10 ounce) package frozen chopped spinach
2 eggs, beaten
1 (3 ounce) package cream cheese, cubed
1 cup cheddar cheese, shredded
1 1/2 teaspoons instant minced onion
1/2 teaspoon seasoning salt
1/8 teaspoon pepper

Steps:

  • In Skillet, saute bread crumbs in butter until golden brown; remove from heat, stir in parmesan cheese, set aside to keep warm.
  • Cook spinach as per directions on package omiting the salt in a saucepan.Drain.
  • Return spinach to saucepan. Add eggs, cream cheese, cheddar cheese, onion, salt, and pepper mixing well. Cook over medium heat stirring until the cheese is melted and mixture thickens.
  • Turn into heated serving dish; sprinkle bread crumbs over top.
  • Serve Immediately.

Got this from our CSA farm: Springdale Farms. It's from the Asparagus to Zucchini Cookbook. Made this with swiss chard instead of spinach (tastes the same) and doubled the rice, baking in a 2.5 liter Corning Ware dish. I adjusted the recipe a bit.

1 1/2 teaspoons lemon juice
1 cup cooked brown rice
1 1/2 teaspoons dried parsley
2 tablespoons grated parmesan cheese (optional)
1 1/2 tablespoons instant minced onion or 1 small onion, chopped and sauted
salt and pepper
6 -8 cups fresh spinach, chopped and steamed (one large bunch)
1 cup cottage cheese
1 cup grated cheddar cheese
4 eggs
salt and pepper
1 pinch cayenne pepper

Steps:

  • Preheat oven to 350°.
  • Mix the first 7 ingredients together.
  • Separately mix the Spinach Mixture ingredients.
  • Spread the ingredients from the first mixture in the bottom of a greased casserole.
  • Spread the spinach mixture over them and bake at 350 degrees until firm, 45-60 minutes.

For a while my dd was helping out by deciding what's for dinner on thursday night. She found this recipe on Rachael Ray's website. It's become a weeky staple for us.

2 tablespoons extra virgin olive oil
1/3 cup orzo pasta
1 garlic clove, finely chopped
1 cup white rice, like texmati brand
1 3/4 cups chicken stock or 1 3/4 cups broth
salt & freshly ground black pepper
4 cups fresh spinach, chopped
3/4-1 cup grated parmigiano reggeano cheese

Steps:

  • Rinse the rice.
  • Heat the olive oil in a fry pan over medium heat.
  • Toast the orzo to a golden brown.
  • Add the garlic to the pan and cook for another 30 seconds.
  • Add the rice, broth, salt and pepper and bring to a boil.
  • Cover the pot, reduce the heat and simmer for another 15 minutes until the liquid is absorbed.
  • Fold in the chopped spinach and grated cheese.

  • Serve with crisp buttery toast
