1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup KRAFT Shredded Mozzarella Cheese
1/2 cup OSCAR MAYER Real Bacon Bits
1/2 cup green onion slices
1/2 of a medium red pepper, cut into thin strips

Steps:

  • Preheat oven to 350°F. Beat eggs lightly in large bowl. Add all remaining ingredients except the red peppers; mix well.
  • Pour into greased 9-inch pie plate.
  • Bake 40 minutes or until center is set. Top with peppers.

200g pack feta cheese
2 x 250g tubs ricotta
3 x 100g bags baby spinach , chopped
1 bunch spring onions , finely sliced
50g parmesan , grated
1 egg
good grating nutmeg
100g breadcrumbs
2 tbsp olive oil
6 sheets filo pastry

Steps:

  • Heat oven to 180C/ 160C fan/gas 4. Mash feta in a large mixing bowl, add the ricotta and mash again to thoroughly mix. Stir in the spinach, spring onions, Parmesan, egg, nutmeg and plenty of seasoning with half the breadcrumbs.
  • Brush a 20 x 30cm tin with a little oil. Layer in half the filo sheets, brushing each with oil before adding the next. Scatter remaining breadcrumbs evenly over the base. Spoon in the ricotta filling and gently spread, so as not to dislodge the breadcrumbs. Cover with remaining filo, brushing with oil as you go, then score into portions. Bake for 35-40 mins until golden and crisp. When cool, freeze in individual squares. Defrost overnight in the fridge and eat cold, or warm in a microwave.

1/2 cup sour cream
1/4-1/2 teaspoon black pepper
1 cup milk
1/4 cup butter, melted and cooled
1/2 cup all-purpose flour
3/4 teaspoon baking powder
2 cups Baby Spinach, tightly packed and roughly chopped (about 4 ounces)
2 large shallots, peeled and finely chopped (heaped 1/2 cup)
1 1/2 cups gouda cheese, grated
2 -4 tablespoons asiago cheese, grated
1/4 cup artichoke heart, finely diced (no woody bits)
1 cup lean bacon, diced

Steps:

  • Heat oven to 350°F.
  • In a medium-sized bowl, beat eggs lightly, then beat in sour cream and black pepper. Stir in milk and butter, and set aside.
  • In a small bowl, sift together flour and baking powder. Stir several times and set aside.
  • In a large bowl, combine, in order, the spinach, shallots, cheeses, artichoke hearts and bacon. Stir well after each addition.
  • Add flour mixture and stir well.
  • Add egg mixture and stir well.
  • Pour into a greased 11x7 pan (I used a glass one). Note: a 10-inch pie pan also works.
  • Bake in the pre-heated oven for 30-40 minutes, until golden on top.
  • Let rest for at least 10 minutes before slicing.
  • Can be served warm but is best at room temperature.

1/2 cup onion, chopped
2 cloves garlic, minced
2 tablespoons butter

1 tablespoon tamari, a soy sauce
1 dash salt

Steps:

  • Follow package directions to make 2 cups cooked brown rice.
  • Over medium heat, cook garlic and onions with 1 1/2 tablespoons butter until soft.
  • Add spinach, saute for 2 minutes, remove from heat.

2 (10-ounce) boxes frozen spinach, thawed and squeezed dry

Steps:

  • Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.

One 12-ounce box fiber-and-calcium-enriched penne
1 tablespoon olive oil
1/2 teaspoon fennel seeds, crushed
3 cloves garlic, thinly sliced
One 28-ounce can no-salt-added crushed tomatoes
1 sprig fresh basil plus 1/2 cup leaves, torn, for garnish
Freshly ground black pepper
One 8-ounce block part-skim mozzarella (half grated, half cubed)
One 16-ounce container 1-percent cottage cheese
1/4 cup grated Parmesan
One 10-ounce block frozen chopped spinach, thawed and squeezed dry

Steps:

  • Preheat the oven to 400 degrees F. Mist a 2 to 2 1/2-quart rectangular or oval baking dish with nonstick cooking spray.
  • Bring a large pot of salted water to a boil. Add the penne and cook according to package directions for al dente.
  • While the pasta cooks, heat the oil in a medium pot set over medium heat. Add the fennel seeds and garlic and cook until aromatic, about 2 minutes. Add the tomatoes, basil sprig, 1 teaspoon salt and 1/4 teaspoon pepper. Simmer, lowering the heat if the sauce bubbles too vigorously, until the sauce has thickened slightly, the flavors have blended together and the raw tomato taste has cooked out, 10 to 15 minutes. Remove from the heat, discard the basil and season with additional salt and pepper. Pour over the cooked pasta and toss well to coat. Add the cubed mozzarella and transfer half the pasta to the prepared baking dish.
  • Put the cottage cheese in the bowl of a food processor and process until smooth. Add the shredded mozzarella and Parmesan and pulse two to three times. Combine half the cottage cheese mixture with the spinach and mix to break up the spinach. Drop in spoonfuls over the pasta in the baking dish. Top the spinach layer with the rest of the pasta and then the remaining cottage cheese mixture.
  • Bake until bubbly and golden brown on top, about 30 minutes. Let stand for 10 minutes, and then scatter the torn basil over the top.

1 ¼ cups heavy cream
¼ cup butter
2 tablespoons minced garlic

Steps:

  • Heat a large skillet over medium-high heat. Add spinach and cook until wilted, stirring constantly. Remove from the skillet and drain in a colander. Try to squeeze out as much liquid as possible.

2 tbsp milk
40g mature cheddar , finely grated
1 tsp rapeseed oil
1 onion (160g), finely chopped
1 red pepper , deseeded and finely diced (270g)
2 tsp balsamic vinegar
1 tsp vegetable bouillon powder
400g can chopped tomatoes
½ x 30g pack basil , leaves picked and finely chopped
1 garlic clove , finely grated
280g pack skinless cod loins
100g frozen small Atlantic cooked prawns , defrosted
160g broccoli florets

Steps:

  • Boil the potato slices for 10 mins then drain, tip into a bowl and gently mix in the milk and half the cheese. Don't worry if the potatoes break up a little.
  • Meanwhile, heat the oil in a large frying pan and cook the onion until softened. Stir in the pepper and cook for 5 mins more. Spoon in the balsamic vinegar and bouillon powder, then stir in the tomatoes, basil and garlic. Lay the cod fillets on top, then cover and cook for 6-8 mins until the cod flakes when tested. Heat the grill to high.
  • Take off the heat, stir in the prawns and tip into a shallow baking dish, breaking up the cod into large chunks. Cover with the potatoes and sprinkle with the remaining cheese. Grill until golden. While it's grilling, steam or boil the broccoli to serve with the bake.

½ cup butter
1 onion, chopped
2 cups milk
2 cups grated Cheddar cheese

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13-inch baking dish.
  • Bring a large pot of water to a boil and add spinach. Cover, reduce heat, and cook until heated through, 5 to 6 minutes. Drain well, squeezing out excess moisture with your hands. Set aside to cool.
  • Melt butter in a saucepan over medium heat; stir in onion and cook until soft and translucent, 5 to 10 minutes.

225ml bag baby leaf spinach
6 large eggs
425ml milk
1 tbsp English mustard powder
200g bread (about 3 thick slices)
200g mature vegetarian cheddar
4 clusters of cherry tomatoes on the vine

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C and butter a shallow 2-litre dish. Tip the spinach into a colander in the sink and pour a kettleful of boiling water over it. Leave it to wilt while you make the cheesy base. (Or microwave the spinach according to the packet instructions.)
  • Break the eggs into the bowl of a food processor, pour in the milk, add the mustard and 1 tsp salt. Tear in the bread, crusts and all, then whizz together until smooth. Tip the mixture into a large bowl and grate in three-quarters of the cheese.
  • Squeeze the spinach, to get rid of all the water, then stir it into the cheese mixture and tip into the dish. Grate over the remaining cheese, top with the tomato clusters and bake for 30-35 minutes until risen and golden. Cool and allow to settle a little before serving.

2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups 4% cottage cheese
1-1/2 cups cubed Velveeta
3 large eggs, lightly beaten
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt

Steps:

  • In a large bowl, combine all ingredients. Pour into a greased 3-qt. slow cooker. Cover and cook on high for 1 hour. Reduce heat to low; cook 4-5 hours longer or until a knife inserted in the center comes out clean.
