ABSOLUTELY WONDERFUL CHEESY CREAMY SPINACH ARTICHOKE DIP
I actually won a local contest with this recipe. Our favorite restaurant who served the best dip closed down...and we could not find another that was even close, so I came up with this home-made replica, which is just as delicious!

CREAMY CHEESY SPINACH DIP
This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

THE BEST SPINACH ARTICHOKE DIP
This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Steps:
- Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
- Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
- Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.
HOT ARTICHOKE AND SPINACH DIP II
This dip is amazing -- so cheesy and fragrant. If you don't like artichokes, don't worry -- you'll never know they're in there! My only question is: Is it okay to just eat it with a spoon right out of the dish?

- Thaw and squeeze the water out of the spinach either by hand or with a cheesecloth or paper towel. You just want to remove as much water as possible to avoid a watery dip. You don’t have to squeeze the water out of the artichokes like you would the spinach, just let them drain for a few minutes on their own in a colander, then give the artichokes a quick rough chop. However, if your artichokes are very watery, give them a light press to help remove most of the water so that you don’t have a watery dip, or use paper towels to absorb any excess liquid. I cut the very ends of each artichoke heart off, but you don’t have to.
- Mix all ingredients together until well combined. TASTE IT! Make sure it’s seasoned to your liking before you bake it. Transfer mixture to your baking dish and bake on the middle rack of your oven until it’s hot and bubbly, about 25 to 45 minutes. Sprinkle the remaining ½ cup of mozzarella cheese on top then bake an additional 10 to 15 minutes until cheese is hot and bubbly and lightly golden brown. *Alternately, you could turn on your broiler and melt that cheese that way, just don’t put the dish directly under the broiler or you risk burning the cheese too quickly. Keep it on the middle rack and broil until cheese is bubbly and lightly golden brown.

- Soak cashews for 1 hour in very hot water (uncovered) or in cool water overnight. Then drain and set aside.
- In the meantime, heat a large oven-safe metal or cast-iron skillet over medium heat. Once hot, add oil, garlic, and shallot. Sauté for 1-2 minutes. Then lower heat to medium/low and sauté for 2-3 minutes more or until just golden brown and slightly caramelized. Set off the heat to cool.
- Once cashews are soaked and drained, preheat oven to 375 degrees F (190 C). To a blender, add soaked and drained cashews, half of the sautéed garlic and shallot, almond milk, nutritional yeast, sea salt, and pepper and blend into a creamy purée, scraping down sides as needed.
- Taste and adjust seasonings as needed. Dip should be cheesy in flavor and well salted, so consider adding more nutritional yeast for cheesiness or another pinch sea salt for saltiness. Set aside.
