I actually won a local contest with this recipe. Our favorite restaurant who served the best dip closed down...and we could not find another that was even close, so I came up with this home-made replica, which is just as delicious!

1 (10 ounce) package frozen chopped spinach (thawed and drained well)
1 (6 1/4 ounce) jar marinated artichokes (drained and chopped) (optional)
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 -3 garlic clove, minced, to taste (or more)
1/4 teaspoon salt
serve with French bread (toasted) or sourdough bread (toasted)
1/2 cup half and half milk or 1/2 cup heavy cream
1/2 cup sour cream

Steps:

  • Preheat oven to 375 degrees.
  • Combine all ingredients (except bread) into a mixing bowl, gently fold together until combined.
  • Pour into a greased or oiled 8" or 9" pie plate or other baking dish.
  • Bake in oven at 375 degrees for 25 to 35 minutes or until browned and bubbly.
  • Let stand to cool down it will be very hot.

  • Slice bread 1/4" to 1/2" and place directly on oven rack to toast for the last 5 to 10 minutes of baking time.

I like adding the Cheddar because it adds color and a little more flavor.

1 tablespoon olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese

2 dashes Worcestershire sauce

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated

One 14-ounce can artichoke hearts, drained well and coarsely chopped

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.

300g chopped frozen spinach, defrosted
250g soft cheese
150ml soured cream
100g mayonnaise
2 large garlic cloves, finely grated
75g vegetarian hard cheese, grated
100g grated mozzarella
100g grated vegetarian cheddar
2 x 280g jars artichokes, drained and roughly chopped
tortilla chips and crudités of your choice, to serve

Steps:

  • Heat the oven to 180C/160C fan/ gas 4. Lightly oil a small baking dish. Tip the defrosted spinach into a sieve set over the sink and press down with the back of a large spoon to remove as much liquid as possible. Set aside.

2 ounces pimento peppers, drained

1/8 teaspoon salt
1/2 teaspoon pepper
1 cup Daisy Brand Sour Cream

Steps:

  • 1.Mix all of the ingredients, except for the sour cream, in a large bowl.
  • 2.Microwave on low heat, stirring often, until the cheese melts and the mixture is smooth.

  • Thaw and squeeze the water out of the spinach either by hand or with a cheesecloth or paper towel. You just want to remove as much water as possible to avoid a watery dip. You don’t have to squeeze the water out of the artichokes like you would the spinach, just let them drain for a few minutes on their own in a colander, then give the artichokes a quick rough chop. However, if your artichokes are very watery, give them a light press to help remove most of the water so that you don’t have a watery dip, or use paper towels to absorb any excess liquid. I cut the very ends of each artichoke heart off, but you don’t have to.
  • Mix all ingredients together until well combined. TASTE IT! Make sure it’s seasoned to your liking before you bake it. Transfer mixture to your baking dish and bake on the middle rack of your oven until it’s hot and bubbly, about 25 to 45 minutes. Sprinkle the remaining ½ cup of mozzarella cheese on top then bake an additional 10 to 15 minutes until cheese is hot and bubbly and lightly golden brown. *Alternately, you could turn on your broiler and melt that cheese that way, just don’t put the dish directly under the broiler or you risk burning the cheese too quickly. Keep it on the middle rack and broil until cheese is bubbly and lightly golden brown.
