Cheesy Southwest Breakfast Casserole is an easy-to-make breakfast win! The secret ingredient packs a punch of protein to start your day!

2 cups frozen O'Brien Style (with peppers and onions Hash Brown Potatoes, thawed)
1 cup small curd cottage cheese
8 ounces fully cooked turkey breakfast sausage (chopped into small pieces)
1 cup shredded sharp cheddar cheese (divided)
1/2 cup shredded Pepper-jack cheese
1/2 cup finely chopped onion
6 large eggs (beaten)
Salt and pepper (to taste)
Sour cream (for garnish)
Sliced green onions (for garnish)

Steps:

  • Preheat oven to 375 degrees F. Spray an 8" x 8" baking dish with cooking spray and set aside.
  • In large bowl, combine all ingredients. Pour mixture into prepared baking dish and spread evenly.
  • Top the casserole with the reserved cheddar cheese.
  • Bake in oven for 40-45 minutes or until set and golden brown on top.
  • Allow to sit for 10-15 minutes before cutting in squares.

1 package (12 oz) bulk chorizo* or spicy pork sausage
1/2 cup chopped onion
3/4 cup chopped bell pepper (any color)
10 eggs
1/4 cup whipping cream
2 cups shredded pepper Jack or Mexican cheese blend (8 oz)
1 teaspoon red pepper flakes
1 can (16.3 oz) Pillsbury™ Grands!™ Flaky Layers refrigerated original biscuits
1 tablespoon vegetable oil

Steps:

  • Heat oven to 375°F. In 12-inch ovenproof skillet, cook sausage, onion and bell pepper over medium-high heat, stirring frequently, until sausage is no longer pink; drain. Remove mixture from skillet; set aside.
  • In large bowl, beat eggs and cream. Stir in 1 cup of the cheese, the pepper flakes and sausage mixture. Separate dough into 8 biscuits. Cut each biscuit into 6 pieces.
  • Spread oil in bottom of skillet. Place biscuits in skillet. Pour sausage mixture over biscuits. Top with remaining 1 cup cheese.
  • Bake 25 to 30 minutes or until egg mixture is set and crust is deep golden brown. Cool 5 minutes before serving.

4 tablespoons unsalted butter, at room temperature
3 cups chopped mustard greens
1 clove garlic, minced
Kosher salt and freshly ground black pepper
12 large eggs, lightly beaten
1/2 cup milk
1/2 cup baking mix, preferably Bisquick
2 cups grated sharp yellow Cheddar
2 cups grated Monterey Jack cheese
2 cups frozen hash browns

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon softened butter.
  • Melt the remaining 3 tablespoons butter in a skillet over medium heat. Add the mustard greens, garlic and a pinch of salt and pepper and saute just until wilted, 2 to 3 minutes. Remove from the heat and cool slightly.
  • Whisk together the eggs, milk, baking mix, 1/2 teaspoon salt and some pepper in a bowl until well incorporated. Stir in the mustard greens, cheeses and hash browns. Pour into the greased baking dish. Bake until puffed lightly, golden brown and soft-set in the middle, 45 to 50 minutes. Cool slightly before slicing and serving warm.

3 cups shredded Monterey Jack cheese (12 oz)
2 cups canned black beans, drained, rinsed
1 cup canned diced tomatoes with green chiles, drained, rinsed
3 green onions, chopped
1 cup Original Bisquick™ mix
2 cups milk
6 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
Sriracha or other Frank's™ RedHot™ Original cayenne pepper sauce, if desired

Steps:

  • In large bowl, stir 2 cups of the cheese, the black beans, diced tomatoes with green chiles and green onions until combined.
  • In another large bowl, beat Bisquick® mix, milk, eggs, salt and pepper until well blended. Pour over cheese-bean mixture; stir to combine.
  • Lightly spray bottom and sides of 13x9-inch pan with cooking spray. Pour egg mixture into pan. Cover pan with plastic wrap. Refrigerate at least 8 hours but no longer than 24 hours.
  • Heat oven to 350°F. Sprinkle remaining 1 cup cheese on top of egg mixture.
  • Bake about 45 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Cool 5 minutes before slicing. Serve with Sriracha sauce.

Steps:

  • In a large bowl, beat eggs. Combine flour, baking powder and salt; stir into eggs (batter will be lumpy). Add cheeses, butter and chiles. Pour into a greased 13x9-in. baking dish. 12 (5 inch) corn tortillas, cut into 1 inch strips and divided
10 large eggs, lightly beaten
1 cup half-and-half
1 (12 ounce) container low fat cottage cheese
3/4 teaspoon salt
1/2 teaspoon pepper
1 cup Mexican blend cheese, shredded
4 green onions, thinly sliced
1 1/2 cups salsa

Steps:

  • Place tortilla strips on an ungreased baking sheet.
  • Bake at 325 degrees for 10 minutes or until crisp; cool.
  • Whisk eggs in a large bowl; stir in half and half, cottage cheese, salt and pepper.
  • Stir in three-fourths of the tortilla strips, 1 cup cheese, and green onions. Pour mixture into a lightly greased 13 x 9 inch baking dish. Cover with foil, and chill 8 hours.
  • Bake casserole, covered, at 325 degrees for 40 minutes or just until set. Remove casserole from oven, and let stand 5 minutes. (casserole will continue to get firms it cools).
  • Cut casserole into 12 squares. Spoon 2 tablespoons salsa over each serving, sprinkle with remaining tortilla strips.
