This is a quick and delicious side dish that I make all the time to serve with Mexican food. I know it's not authentic, but my family loves it!

Yield 4-6 serving(s)

Number Of Ingredients 5

1 cup long grain rice
2 cups water (or broth)
1 cup salsa (more or less to your taste)
1 cup shredded cheddar cheese (more or less to your taste)
salt and pepper

Steps:

  • Cook rice according to your preference. (I use a rice steamer.).
  • When rice is done, quickly add salsa, cheese, and salt and pepper to taste. Mix well.
  • Additional cheese may be sprinkled on top.
  • Serve.

This is great for people always on the go like me. I love rice so i put this together one day. These are all easy on-hand ingredients. The cheese and the fixin's is what makes this recipe! Also gluten-free!

1 cup cooked white rice
1/4 cup cheddar cheese
1/4 cup salsa (fresh tastes best)
2 tablespoons sour cream
salt & pepper

Steps:

  • Prepare white rice (20 minutes to prepare stove top).
  • Layer bowl with hot rice 1st.
  • Top with cheddar cheese, salsa, and sour cream.
  • Sprinkle salt & pepper to taste.
  • Enjoy!
