CHEESY MUSTARD MASH
Serve up a side that's lower in fat than most mash recipes, plus has a crispy cheddar cheese topping and thyme flavour

Steps:
- Boil the potatoes in salted water for 20 mins or until tender, then drain.
- Heat the grill to high. Mash the potatoes until smooth, then beat in the crème fraîche and half the cheese. Season to taste, then spoon the hot mash into a medium baking dish and smooth the top.
- Mix together the rest of the cheese, the mustard and thyme leaves. Spread over the mash with a spatula or the back of a spoon. Grill until the cheese is melting and golden, then serve with the beef.

CAULIFLOWER MASH
It might be tough to imagine that anything could taste better than mashed potatoes. But cauliflower mash captures all the flavors of beloved potatoes, and you won't be able to taste the difference. Not only is this mash cheesy, buttery and silky smooth, it also brings along a stellar lineup of vitamins and nutrients. Plus it's lower in carbohydrates and calories than its potato counterpart.

Steps:
- Bring an inch of water to a boil in a large saucepan. Place the cauliflower in a steamer basket set over the boiling water. Cover and steam for about 5 minutes, until the florets are fork tender. Transfer the florets to a high-powered blender or food processor.
- Add the garlic, cheese, heavy cream, butter, salt and pepper to the cauliflower. Blend until smooth and creamy, 1 to 2 minutes. After 1 minute, if there are still chunks, use a rubber spatula to scrape down the sides, then process again until light, fluffy and completely smooth. Taste and adjust the seasoning if needed.
- Let the mash sit for 2 minutes to settle. Top with chives and serve with extra butter.
CHEESY MUSTARD
Steps:
- Combine the mustard, cheese spread and Worcestershire in a saucepot. Heat, whisking, until evenly combined. Serve warm, with pretzels.

- Cook the potatoes - put the peeled potato chunks into a panful of cold water – I add a pinch of salt to the water. Bring the pan to the boil and then simmer over a low heat for around 20-30 minutes or until the potatoes are tender. Drain the potatoes once cooked.

- Heat a frying pan over a medium heat. Add your chicken breasts and fry off for a couple of mins until golden, crisp and tender. Remove from the pan.
- Add half your butter to the pan. When melted, add your onion and fry for 5-10 mins until soft and starting to caramelise. Add your garlic and cook out for 1 min.
- Tip the rest of your butter into the pan and, once melted, add your flour. Cook out for 2 mins, then gradually pour in your milk in small increments, whisking all the while until you have a smooth sauce.
- Once all the milk has been added, bring to a boil then simmer for 2 mins until thickened. Add your cheddar, mozzarella, nutmeg, salt and pepper. Stir until your cheese melts.
