SUNNY'S EASY CHEESY MEATBALL SUB CASSEROLE

Nonstick cooking spray, for the baking dish
3 tablespoons olive oil
1/2 onion, diced
1 green bell pepper, cored, seeded and diced
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 teaspoon Italian seasoning
Half a 32-ounce bag frozen store-bought meatballs, defrosted and sliced in half
One 32-ounce jar marinara sauce
Two 8-ounce bags Italian cheese blend
One 5-ounce bag garlic croutons, crushed

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray.
  • Heat the olive oil in a medium skillet over medium heat. Add the onion and green pepper, then sprinkle with salt and pepper and saute until tender, about 5 minutes. Add the garlic and Italian seasoning and cook for another 1 to 2 minutes. Remove from the heat and set aside.
  • In a large bowl, combine the meatballs, marinara sauce and cheese. Add the cooked onion and pepper mixture. Mix to combine, then transfer to the prepared baking dish. Top with the crushed croutons. Bake until the cheese is melted and bubbling, 30 to 35 minutes. (If the topping starts to get too brown, loosely cover with foil toward the end of the bake.)

1 large egg, beaten
1 cup (3 handfuls), Italian bread crumbs
1 medium onion, chopped fine
4 cloves garlic, crushed and minced
1/2 teaspoon crushed red pepper flakes
2 teaspoons (several drops) Worcestershire sauce,
1/4 cup (a couple of handfuls) flat-leaf parsley leaves, chopped
1/4 cup (a couple of handfuls) grated Parmigiano or Romano
Coarse salt and black pepper
2 tablespoons extra-virgin olive oil, (2 turns around the pan)
4 cloves garlic, crushed and chopped
1/2 teaspoon crushed red pepper flakes
A handful flat-leaf parsley leaves, chopped, about 2 tablespoons
1/2 teaspoon dried oregano
One 28-ounce can crushed tomatoes
One 14-ounce can chunky style crushed tomatoes
Salt and freshly ground black pepper
4 semolina crusty sub rolls, with or without sesame seeds
One 10-ounce bag (2 1/2 cups) shredded Provolone or Italian 4-cheese blend
Shredded basil (sweet) or shredded arugula (spicy) leaves, for garnish
Oven Fries, as an accompaniment, recipe follows
4 medium white skinned potatoes, each cut into 8 wedges lengthwise
Extra-virgin olive oil, to coat
Grill seasoning blend or coarse salt and black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Place ground sirloin in a large mixing bowl and punch a well into the center of meat. Fill well with the egg, bread crumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese, and a little salt and pepper. Mix up meatball ingredients until well combined, yet not over-mixed. Divide mix into 4 equal parts, roll each part into 4 balls and space equally onto a nonstick baking sheet. Place meatballs in oven and roast about 12 minutes. Break a meatball open and make sure meat is cooked through before removing from the oven.
  • Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add herbs and crushed pepper. Allow oil to infuse for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a bubble, reduce heat, and simmer until meatballs are removed from oven.
  • Combine meatballs and sauce and pile into sub rolls, 4 meatballs per sub. Top with shredded cheese and place under subs under broiler to melt cheese. Top with shredded basil or arugula and serve with a pile of Oven Fries.
  • Drizzle potatoes with a generous pour of extra-virgin olive oil. Toss potatoes with seasoning blend or coarse salt and pepper. Place potatoes on a nonstick baking sheet and roast 20 minutes or until just tender. Give the baking sheet a good shake after 10 minutes to avoid sticking.

500 g (1lb) pork mince / ground pork ((optional))
500 g (1lb) beef mince /ground beef
1 large onion (finely chopped)
3 garlic cloves (crushed)
3 slices white bread (crusts removed, soaked in ½ cup milk)
handful fresh parsley (finely chopped)
1 teaspoon fresh thyme leaves
1 teaspoon freshly cracked pepper
2-3 teaspoons salt (to taste)
1 onion (finely chopped)
4 garlic cloves (crushed)
800 g (28oz) chopped tomatoes
2 teaspoons tomato paste
1 cup beef stock
5 fresh thyme sprigs
1 sprig fresh rosemary
2 teaspoons sugar
salt & pepper to taste
2 Baguettes
200 g (7oz) mozzarella

Steps:

  • To make the meatballs, fry the onion and garlic in a splash of olive oil until soft and fragrant. Allow to cool.
  • Place the pork, beef and onion mixture in a large bowl.
  • Squeeze the soaked bread slices to get rid of any excess milk and add to the meat. Add the herbs salt and pepper then mix well. Fry a teaspoon of the mixture in a hot pan to check the seasoning and adjust accordingly.
  • Form golf-ball sized meatballs and place on a clingfilm-lined tray.
  • Brown the meatballs in a large, oven-proof pan then remove and set aside.
  • To make the tomato sauce, add a splash of oil to the pan you used for the meatballs then fry the onion and garlic until soft and fragrant. Add the chopped tomatoes, tomato paste, beef stock, herbs, sugar and seasoning and allow to simmer, uncovered, for approximately 10 minutes or until the sauce has reduced by a quarter.
  • In the meantime, pre-heat the broiler/grill of your oven.
  • Place the meatballs back into the sauce then allow to simmer for 10 minutes.
  • Cut the baguettes into 10-15cm pieces then stuff each piece with meatballs, sauce and mozzarella.
  • Place on a sheetpan and into the oven. Allow to cook until the mozzarella has melted and the the edges of the bread is toasted, approximately 10 minutes.
  • Remove from the oven and serve.

  • Meanwhile, fold all the cheese mixture ingredients in a medium bowl until well combined. Spread the cheese mixture all over the bottom of a baking dish at least 10-inches in diameter. I used this one.

Depending on how many you have and the size of your baking dish, you may or may not have space between each ball. It really doesn’t matter how you do this part, just make sure they all fit somehow.

  • Prepare fresh or frozen meatballs according to package directions. If using our meatball recipe, you can microwave the frozen meatballs at 50% power for about 4-5 minutes. Add the marinara and meatballs to a medium saucepan and heat on medium-low until warmed through.
  • While the meatballs are warming, prepare the sub rolls. Heat a large non-stick skillet over medium heat and add the olive oil. Once the oil is shimmering, place the sub rolls cut side down in the pan. Heat until the bread is toasted and golden brown. Remove from the pan and place the bottoms of the rolls on a small baking sheet. Rub all four toasted sides of the rolls with the cut side of the garlic. Be generous with the garlic! Discard the used garlic. Sprinkle with Parmesan cheese.
  • Preheat oven on Low-Broil. Divide the meatballs on the bottom half of each roll (no need to broil the other half of the sub roll as it's already toasted) Add a little extra sauce on top of each, then top with the provolone cheese. Place the pan on the center rack of the oven and broil on low until the cheese is melted. Garnish with fresh chopped parsley.
  • Immediately place the top of the roll on the meatballs and press gently. Secure with a toothpick if desired. Serve immediately.
