HAM, POTATO AND BROCCOLI CASSEROLE
This is a great, easy to make, and nutritious casserole. You can add some macaroni pasta or try seasoning the potatoes before you bake. Put this dish in the freezer and bake whenever you're too lazy to cook! Can also be made with leftover cooked chicken.

- Preheat oven to 375 degrees F (190 degrees C).
- Spray a 9x13 inch baking dish with cooking spray. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. In a small bowl mix together soup, milk and mayonnaise. Pour mixture evenly over ingredients in baking dish and sprinkle with cheese.
- Bake uncovered in preheated oven for 40 minutes.

These ham and broccoli twice baked potatoes are stuffed with cheese, ham, and broccoli all put back into a potato shell and baked a second time.

- Preheat oven to 400°F
- Prick potatoes several times with a fork and cook in microwave for 10-15 minutes or until fork tender and fully baked.Let potatoes cool for a few minutes while you prepare the broccoli.
- Place broccoli in a small bowl with a tablespoon of water and cover with a damp paper towel. Cook in microwave for 1-2 minutes or until tender but still bright green.
- Use a sharp knife to cut a circle out of the top of each potato.
- Remove circles from potatoes and hollow out the inside of each potato placing removed portion of potatoes into a large bowl.
- Add butter and cream to the bowl and stir together withe a spoon until potatoes are creamy.
- Add ham, broccoli, and cheese stirring to combine. Add salt to taste.
- Scoop mixture back into the potatoes filling them equally.
- Place potatoes on a baking sheet and bake them in the oven for about 10 minutes or until the potatoes are warm all the way through.
- Remove from oven, sprinkle with a little more shredded cheese and enjoy!

- Preheat the oven to 400 degrees. Mist a 9×13-inch (or other 3-quart) baking dish with nonstick cooking spray.
- In a Dutch oven, large pot, or extra-large skillet over medium-high heat, heat the coconut oil or butter until melted.
- Add the onion and frozen broccoli florets and cook until the vegetables are softened and tender, 4-5 minutes.
- Add the flour, tossing to coat the ingredients, and cook 1 minute more.
- Reduce the heat to low and add the milk, ½ to 1 cup at a time, whisking after each addition. Be patient and whisk slowly as you continue adding the milk until all is added. Stir in the salt, thyme, garlic powder, and pepper. Increase the heat to medium-high and allow the mixture to come to a boil for 1 minute. Remove from the heat.
- Add the frozen shredded potatoes, diced ham, and 1 cup of the cheese into the mixture, stirring until well incorporated.
- Transfer the mixture to the prepared baking dish and spread into an even layer. Top with the remaining ½ cup cheese.
- Bake for 30 minutes.
- After 30 minutes, turn the oven broiler to High and broil the casserole for 3-5 minutes, until the topping is browned, watching carefully so it doesn't burn.
- Garnish with sliced green onions, chives, or parsley.

- Preheat oven to 400°. Scrub potatoes; pierce several times with a fork. Bake until tender, 50-75 minutes. - Heat oven to 425 degrees.
- Bake potatoes for 45-60 minutes (or until done).
- Cut potatoes in half.
- Scoop pulp out.
- Leave skin intact.
- Make mashed potatoes out of the pulp.
- Add margarine, sour cream, salt, pepper, green onions, and 3/4 cheddar cheese and mix well.
- Then fold in broccoli.
- Stir until incorporated.
- Fill potatoes shells with mashed potato mixture and top with remaining cheese and sprinkle paprika on top.
