  • Mix cream cheese spread, guacamole and shredded cheese until well blended; cover.
  • Refrigerate several hours or until chilled.
  • Serve with crackers.

6 ripe avocados
3 limes, juiced
1 medium yellow onion, chopped
1 garlic clove, smashed then minced
2 serrano chiles, cut into rounds
1 big handful fresh cilantro with stems, about 1/2 cup, finely chopped
Extra-virgin olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Halve and pit the avocados. With a tablespoon, scoop out the flesh into a mixing bowl. Mash the avocados using either a fork or potato masher, leaving them still a bit chunky. Add the remaining ingredients, and fold everything together. Drizzle with a little olive oil, adjust seasoning with salt and pepper and give it 1 final mix with a fork.
  • Lay a piece of plastic wrap tight on the surface of the guacamole so it doesn't brown and refrigerate for at least 1 hour before serving.

2 tablespoons extra-virgin olive oil, divided
salt and ground black pepper to taste
3 large cloves garlic
1 ¼ cups shredded sharp white Cheddar cheese
1 (6 ounce) container plain 2% Greek yogurt
1 tablespoon sliced green onions

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Coat cauliflower with 1 tablespoon olive oil. Season with salt and pepper and spread out onto a baking sheet.
  • Chop tops off garlic cloves and place on a sheet of aluminum foil. Drizzle cloves with remaining olive oil and wrap foil to create a pouch; place on the baking sheet with the cauliflower.
  • Roast in the preheated oven, tossing cauliflower halfway through, until tender, about 25 minutes.
  • Remove from the oven and allow cauliflower to cool slightly. Unwrap garlic cloves and discard foil. Reduce oven temperature to 375 degrees F (190 degrees C).
  • Combine 1 cup Cheddar cheese and yogurt in a food processor; blend until smooth. Add cauliflower and squeeze garlic cloves in as well. Process, scraping down the sides as needed, until creamy, 1 to 2 minutes. Transfer to a baking dish and top with remaining Cheddar.
  • Bake until top begins to brown, about 15 minutes. Remove from the oven, garnish with green onions, and serve.
