SEARED HANGER STEAK WITH SALSA PICANTE



Seared Hanger Steak with Salsa Picante image

Hanger steak is an inexpensive, hassle-free piece of meat perfect for a weeknight meal. Sear it quickly and serve with a flavorful salsa picante.

1 1/2 pounds hanger steak
Coarse sea salt
Freshly ground black pepper
2 tablespoons extra-virgin olive oil, divided
1 medium yellow onion, sliced
2 hatch or red fresno chilies, thinly sliced (remove the seeds if desired)
1 clove garlic, thinly sliced
2 tablespoons balsamic vinegar

Steps:

  • To tenderize the steak, poke the steak throughout with a fork or meat prongs. With a sharp knife, cut out and discard the sinew in the center of the steak. Season liberally with salt and coarsely ground black pepper. Heat 1 tablespoon of the oil in a large cast iron skillet over medium-high heat. Add the steak and sear each side, about 3 minutes per side.
  • To make the salsa, cut the onions into rings. Slice the chilies and garlic. Add onions to the pan with the steak, season with salt and pepper.
  • Add the chilies to the pan, and add a little more olive oil, if necessary. After a few minutes, add the garlic to the pan. Drizzle with the vinegar. Continue to cook the steak until it is medium-rare, 10 to 12 minutes. Rest the steak on a cutting board for about 10 minutes. Slice against the grain, season with more salt, pepper and olive oil if desired, and serve with the salsa picante.

1 tablespoon cornstarch
1/2 cup water
1/2 cup picante sauce
2 tablespoons reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot
1 pound boneless beef sirloin steak, cut into 1-inch strips
3 teaspoons canola oil, divided
1 medium green pepper, julienned
1 cup sliced fresh mushrooms
6 green onions, cut into 1/4-inch pieces
1 garlic clove, minced
Hot cooked rice, optional

Steps:

  • In a bowl, combine the cornstarch and water until smooth. Stir in the picante sauce, soy sauce and ginger; set aside. , In a large nonstick skillet or wok, stir-fry meat in 2 teaspoons oil for 1-2 minutes. Remove meat with a slotted spoon and keep warm. Add the pepper, mushrooms, onions, garlic and remaining oil to the skillet. Stir-fry for 3 minutes. , Stir picante sauce mixture and add to skillet with meat. Bring to a boil; cook and stir for 1-2 minutes or until thickened and vegetables are crisp-tender. Serve with rice if desired.

This steak picado recipe is so good and so easy. Its great for nachos or you could have it with beans & rice with a couple of tortillas or it makes a crazy good burrito!! It also makes its own juice so you could probably even add some rice to it and make it a stew. (fyi, i wouldnt leave the broth out as one reviewer suggested, it makes the dish too tomato-ey, more like a chili...its still tasty but its not steak picado)

2 lbs round steaks, cut into 1 x 1/2 inch pieces
2 tablespoons vegetable oil
1 1/2 cups onions, chopped
4 minced garlic cloves
1 bell pepper, diced
2 jalapenos, diced
1 (14 ounce) can diced tomatoes with juice
1 (10 ounce) can green chilies
1 (4 ounce) can el pato salsa fresca or 1 (4 ounce) can tomato sauce
2 tablespoons ketchup
3/4 cup beef broth
1 teaspoon cumin
2 teaspoons chili powder
2 bay leaves
salt & pepper

Steps:

  • generously salt and pepper the steak pieces and lightly brown in a little bit of oil for 3 minutes in a medium sized pot.
  • add onion & garlic, saute for 2 minutes more.
  • add remaining ingredients, bring to a low boil.
  • reduce heat, cover and let it simmer for 45 -60 minutes.
  • this can also be converted to a crock pot recipe. after browning the meat in a skillet, transfer to a crock pot, add remaining ingredients and cook on high for 4 hours or low for 8.

1.5 c fresh mushrooms, sliced
1/2 c onion, chopped
1/4 c green pepper, chopped
1/4 c vegetable oil
2 tsp chili powder
1 c tomato sauce
1 tsp salt
1/4 c olives, sliced
1.5 lb round steak

Steps:

  • 1. Saute mushrooms, onions and green pepper in oil for 5 minutes.
  • 2. Add chili powder, tomato sauce, salt and olives.
  • 3. Place steak in shallow baking dish and pour sauce over steak.
  • 4. Cover and bake at 350 for 1 1/2 hours or until tender.
