1 cup sour cream
2 tablespoons butter
2 tablespoons lemon juice
1 -1 1/2 lb of firm white fish fillet (halibut, or ling cod work well)
salt
pepper
1/2 medium onion, thinly sliced and seperated into rings
1 -1 1/2 cup grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter and blend in the lemon juice and sour cream.
  • Salt and pepper the fish to taste and place in a casserole dish.
  • Spread the onion rings evenly on top.
  • Pour the sour cream mixture over fish, spread evenly and top with the cheese.
  • Bake for 35 minutes or until fish flakes with a fork.

I quite often bake my fish this way. Easy & simple, nothing fancy, but we like the result. I actually do not even measure the ingredients anymore and just throw it together, but these are the original measurements. Sometimes I add a little lemon juice or lemon pepper seasoning and top it all off with a sprinkling of parsley for a little colour.

1 lb fish fillet (I always use haddock)
1/4 cup milk
1/2 onion, thinly sliced (I slice into rings and break them apart and in half if they are too big)
2 tablespoons butter
3/4 cup grated cheddar cheese
salt & pepper

Steps:

  • Place fish in a greased pan with dabs of butter on top.
  • Season with salt& pepper to taste.
  • (this is where I sprinkle on lemon juice or lemon pepper if using) Cover with sliced onion.
  • Pour on milk.
  • Bake at 400 degrees for 12-15 minutes.
  • Remove from oven and sprinkle with grated cheddar cheese and a little parsley if desired.
  • Return to oven until cheese melts.

2 tsp. dried thyme leaves
3 cups mixed small broccoli florets and thinly sliced carrots
6 Tbsp. CHEEZ WHIZ Cheese Dip

Steps:

  • Heat oven to 350°F.
  • Place 1 fish fillet on center of each of 6 large sheets of heavy-duty foil sprayed with cooking spray; drizzle with dressing. Sprinkle with thyme; top with vegetables. Fold to make 6 packets.
  • Place on rimmed baking sheet.
  • Bake 25 min. or until fish flakes easily with fork. Let stand 5 min. Cut slits in foil to release steam before opening packets.

300g medium potatoes (about 3), thinly sliced
2 tbsp milk
40g mature cheddar , finely grated
1 tsp rapeseed oil
1 onion (160g), finely chopped
1 red pepper , deseeded and finely diced (270g)
2 tsp balsamic vinegar
1 tsp vegetable bouillon powder
400g can chopped tomatoes
½ x 30g pack basil , leaves picked and finely chopped
1 garlic clove , finely grated
280g pack skinless cod loins
100g frozen small Atlantic cooked prawns , defrosted
160g broccoli florets

Steps:

  • Boil the potato slices for 10 mins then drain, tip into a bowl and gently mix in the milk and half the cheese. Don't worry if the potatoes break up a little.
  • Meanwhile, heat the oil in a large frying pan and cook the onion until softened. Stir in the pepper and cook for 5 mins more. Spoon in the balsamic vinegar and bouillon powder, then stir in the tomatoes, basil and garlic. Lay the cod fillets on top, then cover and cook for 6-8 mins until the cod flakes when tested. Heat the grill to high.
  • Take off the heat, stir in the prawns and tip into a shallow baking dish, breaking up the cod into large chunks. Cover with the potatoes and sprinkle with the remaining cheese. Grill until golden. While it's grilling, steam or boil the broccoli to serve with the bake.

4 chunky skinless white fish fillets, such as hoki or cod, about 500g/1lb 2oz total weight
oil , for brushing
4 thin slices of ham
50g grated mature cheddar
2 spring onions , sliced at an angle

Steps:

  • Preheat the grill to high and lightly oil a large shallow heatproof dish. Arrange the fillets in the dish, slightly spaced apart, and brush them with a little oil. Grill for 2 minutes.
  • Remove the dish from the grill, turn the fish over and top each fillet with a scrunched slice of ham. Mix together the cheese and onions, scatter over the fish and season with salt and pepper. Return to the grill for 5 minutes until the fish flakes easily when prodded with a knife. Serve with green vegetables - broccoli or stir-fried cabbage would be good.

I grow garlic chives and they are the best just simmered in butter over noodles YUM. I assembled it before running out and put it in the oven when I got home.

2 cups sliced potatoes
1 cup sour cream

2 tsp olive oil
3 leeks , halved and thinly sliced
½ small pack parsley , finely chopped
250g fish pie mix (ours contained haddock and salmon)
2 tsp wholegrain mustard
350ml pot cheese sauce
wholemeal bread to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and heat the oil in a large frying pan. Add the leeks and some seasoning, and cook for 10 mins until really soft. Stir in half the parsley and spoon into 2 gratin dishes.
  • Divide the fish between the 2 dishes, mix the mustard into the cheese sauce and spoon over the top of the fish. Place on a baking tray and cook for 15 mins - you can put the bread in the oven to warm through for the last few mins if it is a little stale. Remove the bread from the oven and turn the grill on to brown the tops of the gratin for 2 mins, then remove from the oven. Scatter the gratin with the remaining parsley and serve with chunks of bread to mop up.
