2 cups uncooked elbow macaroni
1 tablespoon all-purpose flour
1 cup heavy whipping cream
1 cup half-and-half cream
1/4 cup sour cream
1 large egg
1/2 teaspoon ground mustard
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
8 ounces Monterey Jack cheese, cubed
8 ounces cheddar cheese, cubed
2 cups shredded cheddar cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large bowl, whisk the flour, cream, half-and-half, sour cream, egg, mustard, cayenne, salt, pepper and nutmeg until smooth., Drain pasta. Transfer to a greased 2-1/2-qt. baking dish. Stir in cubed cheeses. Top with cream mixture. Sprinkle with shredded cheese., Bake, uncovered, at 350° until bubbly and golden brown, 30-40 minutes.

3 cups elbow macaroni, uncooked
1-1/2 pkg. (8 oz. each) KRAFT Mozzarella & Cheddar Cheese Deliciously Paired for Mac 'n Cheese (3 cups)
6 Tbsp. butter, divided
1/4 cup flour
3 cups milk
1 VELVEETA Fresh Packs (4 oz.), cut into 1/2-inch cubes
1/4 cup crumbled blue cheese
1/2 tsp. GREY POUPON Dijon Mustard
1/4 cup KRAFT Grated Parmesan Cheese, divided
1/4 cup panko bread crumbs

Steps:

  • Heat oven to 375°F.
  • Cook macaroni as directed on package, omitting salt and reducing the cooking time by 2 min. Rinse macaroni under cold water; drain. Combine shredded cheeses; reserve 1/2 cup for topping.
  • Melt 5 Tbsp. butter in Dutch oven on low heat. Add flour; mix well. Cook 2 min. or until hot and bubbly, stirring constantly. (Do not cook until browned.)
  • Whisk milk gradually into butter mixture; cook on medium heat 5 min. or until sauce comes to boil and thickens, stirring constantly. Remove from heat.
  • Add remaining shredded cheese mixture to the sauce along with the VELVEETA, blue cheese, mustard and 2 Tbsp. Parmesan; cook 3 to 5 min. or until VELVEETA is completely melted, stirring constantly. Add macaroni; mix well. Spoon into 13x9-inch baking dish sprayed with cooking spray.
  • Melt remaining butter; mix with bread crumbs, reserved shredded cheese mixture and remaining Parmesan. Sprinkle over macaroni mixture.
  • Bake 25 to 30 min. or until top is golden brown, and macaroni and cheese is hot and bubbly around edges.

1 large onion, diced
2 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon smoked paprika
Pinch crushed red pepper flakes, optional

1 pound ground beef, 80/20
2 tablespoons tomato paste
1 tablespoon Dijon mustard
5 cups low-sodium chicken stock or broth
10 ounces elbow macaroni
2 cups shredded Cheddar, about 8 ounces
4 ounces cream cheese
1 cup flat-leaf parsley leaves and tender stems, chopped, plus more for garnish, optional

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the chili powder, smoked paprika, red pepper flakes (if using), 1 teaspoon salt and a few grinds of black pepper and stir to combine. Add the beef and break it up into small pieces with a large spoon; cook, stirring occasionally, until beef is cooked through and no longer pink in the center, 6 to 7 minutes. Stir in the tomato paste and Dijon until combined. Pour in the chicken stock and 1 teaspoon salt, stir to combine and bring to a boil, 6 to 7 minutes. Add the elbow macaroni and cook, stirring occasionally, until the sauce has thickened and the pasta is al dente, 9 to 11 minutes. 2 cups macaroni
4 tablespoons butter
3 cups milk
5 tablespoons flour
salt and pepper
1 1/2 lbs cheddar cheese, medium and old, diced
1/2 cup breadcrumbs
2 tablespoons butter, melted

Steps:

  • Cook macaroni, drain.
  • Melt butter over medium heat, add flour and cook briefly while stirring, until slightly golden in colour. Meanwhile, heat milk in microwave or on stove in separate pot until warm.
  • Slowly add milk to flour and butter mixture; cook while whisking until sauce thickens. Add salt and pepper.
  • Put half the cooked macaroni in a 9x13 pan; layer half the cheese, and half the sauce. Repeat.
  • Top with breadcrumbs.

This is a family favorite that I learned from my Mom. It has been passed down and I am sure it has changed over the years, but everyone that has it loves it. I use it anytime I need a nice side dish in a pinch!! The left overs reheat nicely and never stick around more than a day or so! I tend to cook by sight, so I did my best to approximate the measurements. I like to make this with fried chicken, grilled salmon, pork roast,etc with a fresh salad or veggie. It really is a versatile dish that leaves you free to tend to your main dish or dessert prep!!

1 (12 ounce) bag elbow macaroni
1 pint heavy whipping cream
1 (8 ounce) bag shredded sharp cheddar cheese
1 (8 ounce) bag shredded four cheese blend
2 tablespoons butter or 2 tablespoons margarine
1 cup chopped onion (walla walla or vidalia if available)
garlic powder
ground black pepper

Steps:

  • Pre-heat oven to 400.
