One-Pot Cheesy Creamed Corn image

3 14 oz Frozen Kernel Corn ** see notes (thawed and drained)
2 Tbsp Butter
8 ounces Cream Cheese (cubed)
1/2 Cup Milk
1/2 Cup Shredded Cheddar
3 Garlic Cloves Minced (or 1 Tbsp garlic powder)
3 Tbsp Chopped Chives *
1 Tsp Chili Flakes (optional)
Salt and fresh ground pepper, to taste

Steps:

  • Melt butter into a skillet over medium-high heat. Add in corn, garlic, salt, and pepper and saute for 4-5 minutes.
  • Add in cream cheese and milk, and mix until fully combined. Stir in shredded cheese and cook until all cheese melts and you get a thicker consistency. Then remove from heat.
  • Serve and garnish with chives and chili flakes. Enjoy!

Steps:

  • Cook and stir bacon in large skillet on medium heat 5 min. or until beginning to brown. Add peppers; cook 5 to 8 min. or until bacon is crisp and peppers are tender, stirring frequently.
  • Stir in corn and milk. Bring to boil; simmer on low heat 2 to 5 min. or until corn is heated through, stirring occasionally.
  • Add VELVEETA; cook until melted and mixture is well blended, stirring constantly. Garnish with chopped cilantro, if desired.

This bacon-studded 'cheese corn' is a popular bar snack in Korea, made of pure bacon-y, creamy, cheesy, corny decadence. The original recipe uses a combination of mayonnaise and sweetened condensed milk, but we're going with heavy cream here for a lighter approach. This may be the first time in my career that I've 'lightened up' a recipe by adding a cup of heavy cream. Garnished with green onions, this would be amazing with a cold beer!

1 (8 ounce) package bacon, chopped
2 (16 ounce) packages frozen sweet corn, thawed
4 cloves garlic, minced
1 bunch green onions, sliced
2 jalapeno peppers, diced, or more to taste
1 pinch salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 cup heavy cream
2 ounces shredded mozzarella cheese
4 ounces shredded Monterey Jack cheese

Steps:

  • Cook bacon in a 10-inch cast iron skillet over medium-high heat, stirring occasionally, until almost crisp and fat is rendered, 7 to 8 minutes.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Drain frozen corn thoroughly in a colander. Add 1/2 of the corn to the skillet with the bacon. Cook and stir until kernels just start to turn golden brown, 3 to 5 minutes. Add garlic, green onions, and jalapenos; cook until vegetables start to soften and sweeten up, 3 to 4 minutes. Tilt pan to drain off some of the fat, using a paper towel to soak it up.
  • Season with salt, pepper, and cayenne. Pour in cream; stir and bring to a boil. Stir in the remaining corn until heated through. Turn off the heat and add about 2/3 of the mozzarella and Monterey Jack cheese. Stir to combine. Top corn with remaining cheese and a sprinkle of cayenne.
  • Broil until heated through and top is browned, 5 to 10 minutes. Serve immediately.

3 tablespoons unsalted butter
1 1/2 cups chopped scallions (about 6 large)
12 ears corn, kernels cut from cobs
2/3 cup heavy cream
2 teaspoons cornstarch
1 large garlic clove
6 ounces queso fresco or mild feta, crumbled (1 1/3 cups)
1 cup cilantro sprigs

Steps:

  • Heat butter in a deep 12-inch heavy skillet over medium-high heat until foam subsides, then cook scallions, stirring occasionally, until softened, about 5 minutes. Add corn and 1/2 teaspoon each of salt and pepper and cook, stirring occasionally, 5 minutes.
  • Stir together cream and cornstarch in a small bowl until thoroughly combined, then add to corn and simmer, stirring, until slightly thickened, about 3 minutes. Transfer 1 1/2 cups corn mixture to a blender with garlic and purée until smooth (use caution when blending hot liquids). Return to skillet and cook, stirring constantly, until just heated through.
  • Transfer corn to a large shallow serving bowl and sprinkle cheese and cilantro over top.

ROAST TOMATOES, CHICKEN SCHNITZEL & CHEESY CREAMED CORN

4 medium chicken breasts
400ml buttermilk or kefir
2 large eggs, lightly beaten
70g plain flour
130g panko breadcrumbs, blitzed to a fine crumb
50ml vegetable or rapeseed oil
700g large heritage tomatoes (a mix of colours and shapes), stems removed
3 garlic cloves, thinly sliced
½ small bunch of thyme, leaves picked
1 tbsp extra virgin olive oil
30g unsalted butter
1 large shallot or ½ onion, finely chopped
3 sweetcorn cobs
125ml single cream
80g parmesan or cheddar

Steps:

  • Put the chicken breasts on a board, cover with a sheet of baking parchment and bash with a rolling pin to a 1cm thickness. Tip into a large bowl with the buttermilk and 1 tsp heaped salt, turning to coat. Cover and leave to marinate in the fridge for 4 hrs or overnight.
  • Heat the oven to 160C/140C fan/gas 3 and line a baking sheet with baking parchment. Tip the tomatoes onto the baking sheet with the garlic and thyme. Drizzle over the olive oil, season and roast for 50 mins-1 hr, or until soft but holding their shape.
  • For the corn, heat the butter in a saucepan over a medium heat until foaming. Add the shallot, reduce the heat to low and fry for 10 mins until softened. Cut the kernels from the corn cobs and add these to the pan along with 125ml water. Simmer for 5 mins, then add the cream and simmer, uncovered, for 5 mins more. Remove from the heat, blitz the mixture to a rough texture with a hand blender, then stir through the cheese and season to taste. Set aside.
  • Remove the chicken from the marinade, wiping away any excess using kitchen paper. Tip the beaten eggs into a shallow bowl, put the flour in a second and the panko in a third. Dip each marinated chicken breast into the flour, then the egg and lastly the panko. Heat the oil in a large skillet or non-stick frying pan over a medium-low heat and fry the breaded chicken breasts for 5-6 mins on each side or until golden and cooked through (you may need to do this in batches). Gently reheat the creamed corn, then serve with the schnitzel and roast tomatoes.

  • In medium saucepan, warm corn slightly covered in water to about room temperature.
  • DO NOT OVER COOK.
  • Drain corn, place back in pan.
  • Add butter and cream cheese.
  • Cook, stirring over medium heat only until melted, add salt and pepper.
