CHEDDAR CHEESE AND CHIVE BREAD



Cheddar Cheese and Chive Bread image

Please note the RISING TIME for the dough. First rise: 2 hours. Second rise: 30 minutes. This recipe makes 2 loaves.

Number Of Ingredients 10

3/4 cup plus 1 tablespoon whole milk (+ more if needed)
1 1/4-ounce packet active dry yeast (2 1/2 teaspoons)
4 cups bread flour or all-purpose flour (plus more for dusting (I highly recommend using bread flour))
1/3 cup granulated sugar
1 teaspoon fine salt
8 tablespoons unsalted butter (1 stick + more for greasing)
2 large eggs
2 cups shredded cheddar cheese
1/2 cup fresh chives (finely chopped)
egg yolk for egg wash

Steps:

  • In a small saucepan, heat 3/4 cup of the milk until warm to the touch but not hot (about 105°F to 115°F on an instant-read thermometer). Transfer the warm milk to a large mixing bowl and sprinkle the active dry yeast on top. Set aside for about 10-15 minutes to activate the yeast.
  • Sift the flour, sugar, and salt together into a large bowl; set aside.
  • In a small saucepan, melt the butter. Let the butter cool, then transfer to a medium bowl. Add the eggs and beat together. Using your electric mixer, stir the egg mixture into the yeast mixture until combined. Slowly add the flour mixture and mix on low speed. (At this point, if you feel like the dough is too dry, you can add a 1/4 cup milk. You want the dough to be somewhat sticky). When well combined, gently fold in the cheddar cheese and chives. You can do this with your mixer or by hand.
  • Remove your dough from the mixer and turn the dough onto a floured work surface and knead the dough for about 2-3 minutes only.
  • Grease a glass bowl with butter and place the dough into the bowl and cover with plastic wrap. You can also coat the plastic wrap with butter (on the side that faces the dough if desired. Let rise in a warm place until doubled in size, about 2 hours.
  • Prepare a parchment lined baking sheet or use your Silpain non-stick baking mat for breads on a baking sheet. After the dough has doubled in size, remove the plastic wrap and set it aside. Remove the dough from the bowl and set on a lightly floured work surface. It will deflate a little but that is fine. Using a knife or dough scraper, divide the dough into 2 pieces and shape into loaves with your hands. Place both dough loaves on the prepared baking sheet and cover with a towel or with the same plastic wrap from earlier. Set aside again and let rise in a warm place for about 30 minutes. Meanwhile, pre-heat the oven to 350°F and arrange a rack in the middle.
  • When ready to bake, in a small bowl, beat together the egg yolk and remaining 1 tablespoon milk. With a pastry brush, lightly brush the egg wash over the dough and bake for about 30-40 minutes. Let cool before serving.

Steps:

  • In a small bowl, combine the butter, cheese, chives and garlic; spread on one side of each slice of bread. Wrap in a large piece of heavy-duty foil; seal tightly. Place on a baking sheet. Bake at 350° for 15-20 minutes or until heated through.

This bread is a savory treat! I use my heavy-duty mixer and the sponge method. White whole wheat flour works well in this recipe, and the onions can be replaced with chives or scallions.

3 cups flour, more if needed
1 tablespoon active dry yeast
1 teaspoon salt
2 tablespoons sugar
1 cup milk, warmed
1 egg, beaten
1 cup sharp cheddar cheese, grated
1/2 cup onion, chopped

Steps:

  • Put 1 cup of the flour in your mixing bowl. Stir in the yeast, salt and sugar. Pour in the warm milk and mix well for three or four minutes on medium. Let stand for about 10 minutes until bubbly.
  • Add the egg, then the onion and cheese, then the rest of the flour until the dough holds together and is only a bit sticky. Cover with a damp towel and let it rise for an hour.
  • Shape your savory dough into a loaf or two small loaves and put into a loaf pan or on to a baking tray. Let it rise until double, about 45 minutes.
  • Bake at 350 for 25 to 35 minutes until the crust is golden and the bottom sounds hollow when you tap on it.

6 tablespoons unsalted butter, at room temperature, plus more for the baking dish
1 1/2 cups all-purpose flour
1 1/2 cups cornmeal
1 1/4 teaspoons baking soda
1 teaspoon kosher salt
1/2 cup sugar
2 large eggs
1 1/2 cups buttermilk
1 1/2 cups shredded monterey jack cheese (about 6 ounces)
2 scallions, finely chopped
1/4 cup finely chopped fresh chives

Steps:

  • Preheat the oven to 400 degrees F and butter a 9-by-13-inch baking dish. Whisk the flour, cornmeal, baking soda and salt in a large bowl.
  • Beat the butter in a large bowl with a mixer on medium-high speed until light and fluffy, about 2 minutes. Add the sugar and beat until well combined. Add the eggs, one at a time, beating well after each addition. Add the flour mixture in 3 batches, alternating with the buttermilk, beginning and ending with the flour mixture. Add the cheese, scallions and chives and beat until just combined.
  • Transfer the batter to the prepared baking dish; smooth the surface. Bake until golden brown around the edges and a toothpick inserted into the center comes out clean, about 20 minutes. Serve warm or at room temperature.

Easy-to-make irresistible cheese and onion bread. Crumbly but moist with a crunchy crust.

300g plain flour
25g caster sugar
3 tsp baking powder
1 tsp salt
115g cheddar cheese, finely chopped
1 small onion, finely chopped
1 egg, beaten
125ml milk
3 tbsp sunflower oil

Steps:

  • Preheat a fan oven to 200 degrees celsius. Line a baking tray with tin foil and lightly sprinkle with flour.
  • Mix the flour, sugar, baking powder, salt, cheese, and onion in a large bowl.
  • In a separate bowl, mix the egg, milk and sunflower oil.
  • In small quantities, gradually add the wet mixture to the dry until a sticky dough is formed. Careful - you may not need to use all of the wet mixture!
  • On a floured surface, roughly shape the dough into a flattened ball and place on the prepared baking tray. Place in the preheated oven and bake for 35-40 minutes, or until cooked. The crust should be golden brown and starting to darken. A knife should come out clean when placed into the bread.
  • Enjoy warm, straight out of the oven or when cooled.

COTTAGE CHEESE AND CHIVE BREAD ( BREAD MACHINE )

The original recipe was in the instruction book for my ABM (an Oster 2 Pound Expressbake). This bread is quite dense and very moist with a crisp crust. It slices easily and makes wonderful toast and sandwiches. It's our favorite of all the recipes I've tried so far. The cottage cheese is all but invisible in the bread so don't worry about offending those who turn up their noses at the mention of it. I find it to be a sneaky way to get added calcium into their diets.

1/2 cup warm water (110-115 F)
1 cup small curd low fat cottage cheese, drained slightly but not dry
1 egg, slightly beaten
2 tablespoons olive oil
1 1/2 teaspoons salt
3 3/4 cups bread flour
3 tablespoons chopped chives (I use fresh but 2-3 teaspoons of dried would work)
1 tablespoon sugar
1 (1/4 ounce) package active dry yeast (2 1/4 teaspoons)

Steps:

  • Measure and add ingredients to YOUR bread maker according to YOUR instructions. (Mine takes all liquids first, then dry ingredients, with the yeast last.).
  • Select the "Sweet Bread" setting.
  • Select "Crust Color" medium.
  • Press Start, walk away, come back 2 hours and 50 minutes later to behold your creation!
  • Notes:.
  • Cottage cheese - I drain all the whey that will readily pour off but don't actually strain it to remove all the liquid. I suppose the drained liquid could replace all or part of the water but I haven't tried it.
  • Dough Consistency - As with all bread recipes, more flour or water may be needed depending on the humidity. Watch during the first knead & if the bread looks too dry, add water, 1 teaspoon at a time, until the dough gathers up. Likewise, if the dough looks to wet (my machine makes a louder noise when this is the case) sprinkle in flour.
