Steps:
- In a small bowl, add the sugar, warm water, and yeast together. Stir to combine well. The yeast should be activated when it becomes foamy, about 10 minutes. Transfer the flour to a flat surface and make a well in the middle. Add the yeast mixture, yoghurt, salt and oil, knead the dough until the surface becomes smooth and shiny, about 10 minutes. Cover the dough with a damp cloth and let it rise in a warm place (for example: beside the stovetop or warm oven). The dough should double in size, about 1 hour.
- Divide the dough into 8 equal portions. Roll the dough to a 8" circle using a rolling spin.
- Heat up a skillet (cast-iron preferred) over high heat and lightly grease the surface with some oil to avoid the dough from sticking to the skillet. Place the dough on the skillet. When it puffs up and bubbles and burnt spots appear, flip it over and cook the other side. Repeat the same until all dough are done.
- Brush the naan with the melted butter, serve warm.

- Place all dry ingredients in a mixer, ensuring that the salt and the yeast are separated
- Form a well in the centre of the dry ingredients and add the Oil and Water
- Mix on a low setting for 4 minutes until the dough has formed and has come away from the sides of the mixing bowl
- Remove from mixing bowl and place onto the floured surface
- The dough should be relatively stretchy so gently knead for a maximum of 1 minute and then separate the dough into two equal pieces
- Shape each piece into a ball and place on the baking tray, ensuing they are separated by at least 10cm
- Cover the tray and leave to rise in a warm area for a minimum of 1 hour. If you are covering with a plastic bag or cling film, lightly rub some oil on the top of the dough to prevent them from sticking.
- Once the dough has risen, place onto a lightly floured surface
- Roll each ball out to a maximum thickness of 1cm
- Sprinkle the cheese in the centre of the dough
- Pull the edges of the dough inward and form together to seal the cheese inside

- Heat a large, lightly oiled pan
- Once the oil has heated up, place one of rolled out naans into the pan, folded side down
- Heat for 4 minutes, on a relatively high heat, lightly shaking the pan after 2 minutes to ensure dough does not stick. Bubbles should now have formed on the top layer.
- Turn over and repeat, heating the other side for 3 to 4 minutes or until nicely browned

NAAN BREAD
This is a really good and fairly simple recipe for naan. I pair it along side every indian dish. I found this recipe when searching google for a true naan recipe.. I think I found it on allrecipes.com. Since it's so good, I thought I'd share it with every other RecipeZaar member.

Steps:
- Note: the cook time does not include rising time. This is a pretty time consuming recipe, but it's well worth it!
- In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.
- Punch down dough, and knead in garlic (you can put more, less or no garlic depending on your taste). Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.
- During the second rising, preheat the grill (or skillet) to high heat. A grill would be best, but if you don't have a grill ready to use, you can use a skillet, they just won't come out as pretty.
- At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

- Put the flour in a large mixing bowl. Add the yeast on one side of the bowl and the salt, sugar and chilli powder on the other. Add the yogurt and oil in the centre and mix.
- Slowly add 70-80ml water (or more if needed) – enough to bring the mixture into a soft dough. Knead on a clean work surface for 5 minutes, then put the dough in a lightly oiled bowl, cover and let it rest for 1 hour.
- Combine the spice mix ingredients in a small bowl. Divide the dough into 8 portions. Taking one portion at a time, roll on a lightly floured surface into an oval about 17-18cm long. Brush a tiny bit of water on the naan and sprinkle with spice mix, pressing it into the dough with your fingers so it adheres properly.
- Heat a frying pan, then cook the first naan on a low-medium heat for 2-3 minutes. Turn it over and cook the other side for 1 minute or until golden. Remove from the pan and brush ghee on top. Repeat. Serve the naan warm.
