This is a delicious twist to broccoli, rice, and cheese casserole, and is VERY easy to make. You can also cut this in half. I use the 1 can cream of mushroom soup when I make half. You can also leave out the onion. It just gives it a little added flavor, but is still very good without it.

2 cups uncooked instant rice
2 (10 ounce) cans chunk chicken, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup butter
1 cup milk
1 (16 ounce) package frozen chopped broccoli
1 small white onion, chopped
1 pound processed cheese food

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, bring the water to a boil. Mix in the instant rice, cover, and remove from heat. Let stand 5 minutes.
  • In a 9x13 inch baking dish, mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese.
  • Bake in the preheated oven for 30 to 35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly.

4 skinless, boneless chicken breast halves - cut into bite size pieces
salt and pepper to taste
2 cups cooked white rice
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
3 slices soft white bread, cubed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Cook Chicken: Season chicken with salt and pepper to taste, place in a microwave-safe dish, cover and cook in microwave for 5 to 6 minutes. Turn and cook another 2 to 3 minutes or until cooked through and no longer pink inside. Let cool.
  • In a 9x13 inch baking dish, combine chicken, rice and soup and mix well. Top with cheese, then with bread cubes.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes, or until cheese is melted and bubbly and bread is crunchy.

2 cloves garlic, finely chopped
4 scallions, sliced
2 cups broccoli florets
2 cups shredded rotisserie chicken (skin removed)
1 cup medium-grain white rice
1 plum tomato, chopped
Kosher salt and freshly ground pepper
2 cups low-sodium chicken broth
1/4 cup sour cream
1 cup diced dill havarti cheese (about 4 ounces)
1/4 cup grated parmesan cheese (about 1 ounce)

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a large ovenproof skillet over medium heat. Add the garlic and about three-quarters of the scallions and cook, stirring occasionally, until soft, about 2 minutes. Add the broccoli, chicken, rice, tomato, 1 teaspoon salt, and pepper to taste; stir to combine.
  • Whisk the chicken broth and sour cream in a bowl, pour into the skillet and bring to a simmer. Stir in half each of the havarti and parmesan. Cover tightly with a lid or aluminum foil, transfer to the oven and bake until the rice is tender and most of the liquid is absorbed, about 20 minutes.
  • Turn on the broiler. Uncover the skillet and sprinkle with the remaining havarti and parmesan, then broil until golden, about 2 minutes. Sprinkle with the reserved scallions.

I love to make this simple dish when my garden tomatillo plants give me too much and I'm left asking asking "What to do!".

1 pound tomatillos, husks removed ((approximately 10 tomatillos))
1 small onion
1 small green pepper
1 jalapeno pepper (seeds removed)
1/2 cup cilantro
1 teaspoon minced garlic
1 tablespoon lime juice
1/2 teaspoon salt
1 pound cooked, shredded chicken breast
2 cups crushed tortilla chips
1 15 oz can black beans
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 375 degrees.
  • Add tomatillos, onion, green pepper, jalapeno pepper, cilantro, garlic, lime juice and salt to a food process or blender. Blend until smooth and no chunks from the vegetables are left. Pour mixture into a small saucepan and bring to a boil. Cook on medium heat for 10 minutes.
  • Add chicken to tomatillo sauce mixture and continue cooking for 10 more minutes. If sauce is very liquidy turn up the heat. Important: you want to try to reduce all the extra liquid or it will make your casserole soggy.
  • Spread 1/2 of the tortilla chips in a 8x8 baking dish. Add 1/2 of your chicken tomatillo mixture on top. Add 1/2 of black beans on top. Add 1/2 of cheese on top. Repeat one more time.
  • Bake for 35 minutes. Allow to cool for a few minutes before serving.

1 package frozen spinach, thawed, drained and chopped

2 eggs

1 cup sliced onion
8 oz sliced mushrooms
1/4 teaspoon salt
3 cups fresh broccoli florets, coarsely chopped
2 1/2 cups cooked white rice (without added salt or butter)
1 1/2 cups coarsely chopped cooked chicken breast
1 tablespoon butter
1 tablespoon all-purpose flour
1/4 teaspoon salt
1 cup fat-free (skim) milk
1/2 cup light sour cream
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
1/3 cup shredded Parmesan cheese

Steps:

  • Heat oven to 350° F. Spray 8-inch square baking dish with cooking spray.
  • In 12-inch nonstick skillet, heat olive oil over medium heat. Add onion; cook 3 to 4 minutes, stirring frequently, until translucent. Add mushrooms and salt; continue to cook 4 to 6 minutes or until any liquid evaporates and mushrooms are brown. Add broccoli; cook 30 seconds to 1 minute or until bright green. Transfer mixture to large bowl.

  • Bake 20 to 25 minutes or until heated through. Top with remaining Parmesan cheese. Bake 5 minutes longer.

Add granulated garlic and black pepper and any other spice you want. Mix together really well. Place in casserole dish or elec. skillet. If you use regular rice, I suggest putting two tablespoons butter and some garlic powder in with your rice while it simmers. Feel free to add a bag of frozen veggies in. I normally don't buy them except for specific things, so I didn't have them.

1 cup cooked rice
3/4 cup cubed Velveeta cheese
1 (10 1/2 ounce) can cream of chicken soup

  • Preheat oven to 375°.
  • Cook rice as per directions on box or bag, more rice can be used but at least a cup.

  • Add pepper to taste and veggies (optional).
  • Mix well and cover with tinfoil.
  • Check chicken to see if its done after about 40 minutes, depends on if you kept them whole or how big the strips are.

1 cup uncooked rice
3 cups chicken broth
1 cup sour cream
1/2 teaspoon garlic powder
1/4 teaspoon onion powder

2 tablespoons butter
2 tablespoons flour or Bisquick (I use gluten free Bisquick)
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees F.
  • In a small saucepan bring two cups of chicken broth to a boil, pour in rice, simmer on low until all liquid is absorbed.
  • In a large mixing bowl combine shredded chicken, rice, spices and sour cream together, set aside.
  • In the same small saucepan you used for the rice, melt 2 tablespoons of butter over medium heat.
  • When it is completely melted and bubbling, add 2 tablespoons of flour, stir mixture and let it simmer for about 1 minute, stirring occasionally.
  • Slowly pour last cup of chicken broth into the flour mixture, stirring as you go.
  • Let your cream of soup simmer for a couple minutes until the mixture thickens. This usually takes me 3-5 minutes.
  • When mixture is thick pour it into the mixing bowl with the rest of your ingredients.
  • Add in 1/2 cup cheese, stir well and pour into greased baking dish.
  • Top with remaining cheese and bake for 25-30 minutes.

18 corn tortillas
2 cups Monterey Jack cheese ((shredded, divided))

Steps:

  • Preheat oven to 350°F.
  • Heat oil in a large skillet over medium-high. Season the chicken with salt, pepper and cumin and add to the pan.
  • Cook until the chicken is done through and no longer pink in the center, about 5-7 minutes.
  • Stir in the chicken stock and 1/2 cup of the tomatillo sauce. Cook over medium for just a minute or two to blend and warm everything through.

  • Spray a 8x8" baking dish (or equivalent-sized baking dish) very well with nonstick spray then set aside. Bring chicken broth and salsa verde to a boil in a medium-sized saucepan then add rice, place a lid on top, turn heat down to medium, and then cook according to package directions. Remove pan from heat then fluff rice, sprinkle green onions on top, and then place the lid back on the pan for 5 minutes.
  • Meanwhile, heat extra virgin olive oil in a large, deep skillet over medium-high heat. Add chicken and green chilies, season with salt and pepper, and then saute until chicken is just cooked through. Add garlic then saute for 1 more minute. Remove chicken and chili mixture to a plate then very carefully wipe out the inside of the skillet with a couple of paper towels (don't burn yourself!) Let the skillet cool off the heat while you whisk the flour into a dish with 1/2 cup milk.
  • Return the skillet to the burner over medium-high heat, add the flour and milk mixture, and then add the remaining 1-1/2 cups milk. Season with salt and pepper then let the mixture come to a bubble (NOT a rolling boil,) stirring constantly. Turn heat down to medium then simmer until thickened, 8-10 minutes, stirring constantly. Remove the skillet from the heat then stir in 6oz shredded cheese and sour cream. Taste then add salt and pepper if necessary.
  • Add the chicken mixture and rice to the cheese sauce then stir to combine and scoop into the prepared baking dish. Top with remaining cheese then broil until golden brown.
