SOLE GOUJONS WITH MANGO & LIME DIP



Sole goujons with mango & lime dip image

Coat strips of white fish fillets with breadcrumbs, then bake for a delicious make-ahead canapé, perfect for entertaining or a party buffet

4 skinless sole or plaice fillets, each about 85g
50g plain flour
2 large eggs
200g panko or coarse dried breadcrumbs
4 tsp medium curry powder
½ tsp fine sea salt
spray oil
100g half-fat crème fraîche
4 tbsp mayonnaise
2 tbsp mango chutney
finely grated zest 1 lime
juice 1 lime
small pack coriander , leaves only, finely chopped

Steps:

  • Put the fish on a board and cut each fillet on the diagonal into about 12 slivers. You should end up with around 48 finger-sized pieces of fish. Put the flour in a bowl and season.
  • Beat the eggs in a medium bowl. Sprinkle half the breadcrumbs into a large bowl and stir in half the curry powder. Toss the fish pieces with the seasoned flour, then take one at a time and dip into the beaten egg, then coat in breadcrumbs evenly.
  • Put on a tray lined with baking parchment while the rest are prepared, adding the reserved breadcrumbs and remaining curry powder to the large bowl after coating roughly half the fish pieces. Spray all the fish generously with oil and season again. Can be covered with cling film at this stage and kept in the fridge for up to 8 hrs before baking (or to freeze, see tips below, left.
  • Heat oven to 220C/200C fan/gas 7. Bake the goujons for 8-10 mins until golden and crisp. To make the dipping sauce, mix all the ingredients in a bowl, then soon into a serving dish or dishes.

Goujons have fallen out of favor over the last two decades, but it is hard to work out why. The crunch of the bread crumb casing, the tender, yielding softness of the white fish within: this is a fishfinger taken to the highest level. The traditional accompaniment is a tartar sauce, but my favourite sauce is a dill mayonnaise, with perhaps some cornichons tumbled on a plate nearby. Consider these a fabulously quick starter when you've got people over or a real treat of a midweek supper for two. The trick is to prepare ahead for that. I make up a vast batch of these and freeze them. Then, when it's dinner time and I don't know what I'm going to cook, I heat some oil in a pan and fry a handful from frozen. They barely need an extra minute. I prefer to fry in batches in a small saucepan rather than fill a frying pan with a lot of oil and try and get them all done at once. If you can find the Japanese seasoned bread crumbs, panko, then get them: they create an almost feathery but crunchy casing.

2 fillets lemon sole, skinned
1/2 cup cornstarch
Salt and freshly ground black pepper
1 cup breadcrumbs or 2 cups panko
2 eggs
1 cup groundnut or grapeseed oil, as needed depending on the size of pan
1 cup mayonnaise, preferably organic
Small bunch dill, about 1/3 cup
1/2 to 1 teaspoon lime juice, to taste

Steps:

  • Cut the sole fillets in half lengthways, and then slice each fillet half into about 4 long strips on the diagonal. This will give you 8 goujons from each fillet.
  • Put the cornstarch into a shallow bowl and season with salt and pepper. Put the bread crumbs or panko into another shallow bowl, and beat the eggs together in an additional bowl.
  • Dip each goujon into the seasoned cornstarch, coating it well, then the beaten egg, and finally the bread crumbs.
  • Lay the goujons on a cooling rack for a while, and heat the oil in a pan. (Or at this point you can freeze them in layers of baking parchment in an airtight container.)
  • Fry the goujons for about 2 minutes, or until crisp and golden. Remove to pieces of kitchen towel, as you go, to remove excess oil.
  • For the Dill Mayonnaise:
  • Put the mayonnaise into a bowl, and finely chop the dill, adding it to the mayonnaise. Stir in some lime juice and taste for seasoning. Serve with the prepared fish.

8 cups vegetable oil
1/2 teaspoon smoked paprika (sweet or hot)* or 1 teaspoon regular paprika (sweet or hot)
2 pounds sole fillets
3/4 cup all-purpose flour
1 cup chilled fresh seltzer or club soda
Special Equipment
a deep-fat thermometer

Steps:

  • Heat oil and make paprika salt:
  • Heat oil in a 4-quart heavy pot over moderate heat until thermometer registers 375°F.
  • Stir together 1 tablespoon salt and half of paprika in a small bowl.
  • Make batter and fry fish:
  • Pat sole dry, then cut crosswise on a diagonal into 1/2-inch-wide strips. Whisk together flour, remaining paprika, 3/4 teaspoon salt, and 1/4 teaspoon pepper, then whisk in seltzer. Working with 6 pieces at a time, dip fish in batter to coat, shaking off excess, and fry, turning occasionally, until golden brown and fish is just cooked through (cut a piece open to test), 3 to 4 minutes. Transfer with a slotted spoon to paper towels to drain, then sprinkle with some of paprika salt. Skim any bits of fried batter from pot and return oil to 375°F between batches.
  • Serve remaining paprika salt on the side for dipping.

CRUNCHY FISH GOUJONS WITH SKINNY CHIPS

This superhealthy, oven-baked version of fish goujons and chips is sure to be a winner with all ages

2 large potatoes , cut into skinny chips
2 tbsp olive oil
450g chunky fish fillets cut into finger-sized strips
2 eggs , beaten
140g cornflakes , crushed into crumbs
tartare or tomato ketchup and lemon wedges, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put chips on a baking tray, toss with oil and season. Cook for 20 mins on the top shelf.
  • Dip the fish strips in the egg and then the cornflakes. Lay on a rack over a baking tray. Transfer the chips to a lower shelf, then cook the fish above for 15 mins, turning half way, until crisp and golden.

This can be served as an entree or as finger food before dinner begins. Best to serve hot. Kids really will love this. Prepare more, it is always not enough.

400 -500 g fillets of sole, boneless (choose to buy the tail end where there are less bones)
120 g plain flour
3 eggs, beaten
1 teaspoon salt
1 teaspoon pepper
2 loaves day old white bread
1 cup corn oil

Steps:

  • For the fish------------.
  • Cut fillet into 4-inch strips about 1/2 inch thick.
  • When cutting, cut down not across or else the fish tends to break.
  • Season the flour with salt and pepper.
  • Pass the fish through the flour.
  • For the breadcrumbs-----------------.
  • Decrust the old loaves and cut into chunks.
  • Throw into the blender to get a nice, dry, fine breadcrumbs.
  • Should make about 5 cups.
  • Place in a bowl.
  • Frying------------------.
  • Pour in corn oil and heat until oil is still.
  • Dip the fish strips into the beaten egg and roll in breadcrumbs.
  • Deep fry at moderate heat till golden brown, about 5 to 6 minutes.
  • Drain well and place on absorbent paper towels.
  • Serving---------------.
  • Place fish strips on dish paper.
  • Serve with lemon wedges and 3 sauces: mayonnaise, thousand island dressing and tartar sauce.
