Number Of Ingredients 10

4 boneless skinless chicken breast halves (6 ounces each)
1 can (4 ounces) chopped green chiles
1/2 cup cubed pepper Jack cheese
2 tablespoons olive oil
3 garlic cloves, minced
6 ounces reduced-fat cream cheese, cubed
1/2 cup chicken broth
2 tablespoons lime juice
1/4 cup minced fresh cilantro
1 teaspoon grated lime zest

Steps:

  • Cut a pocket in the thickest part of each chicken breast. Combine chiles and pepper Jack cheese; spoon into each pocket. Secure with toothpicks. , In a large cast-iron or other ovenproof skillet, brown chicken on both sides in oil. Bake, uncovered, at 350° until a thermometer reads 165°, 15-20 minutes. Remove chicken from skillet; keep warm., Add garlic to skillet; cook for 1 minute. Stir in the cream cheese, broth and lime juice until blended. Bring to a boil. Stir in cilantro and lime zest. , Remove toothpicks from chicken. Serve with cream sauce.

4 thin sliced chicken breasts or 4 boneless chicken thighs
6 -8 slices bacon, cooked & crumbled or 6 -8 slices use bacon bits
1/2 cup sharp white cheddar cheese, grated
1/2 cup monterey jack pepper cheese, grated
monterey chicken seasoning
1 (8 ounce) package cream cheese, softened
1 tablespoon sour cream
1 (7 ounce) can salsa verde
1 teaspoon fresh ground black pepper
1 teaspoon celery salt
1/2 teaspoon ground cumin
2 teaspoons garlic powder
1 bunch fresh cilantro, chopped
1 small lime, juice of

Steps:

  • Take chicken pieces and season each piece with Monterey Chicken Seasoning to taste. Using a lightly greased grill pan or grill, cook chicken until throughly cooked. After chicken has throughly cooked and is brown on both sides, transfer to a pizza pan/cookie sheet. Sprinkle each.

1 (7 ounce) can salsa verde

1 bunch cilantro, chopped
1 small lime, juice of

Steps:

Steps:

  • Place 1 tablespoon of butter in an 11x7-in. microwave-safe dish; set aside. Combine cracker crumbs and pepper. Dip chicken in remaining butter, then spread with sour cream.   • In a large heavy-duty skillet, heat the oil over medium-high heat. Season chicken generously with salt and pepper then add the chicken and cook for 7-8 minutes, turning once or until chicken is cooked through. Remove chicken from skillet and cover with foil on a separate plate, set aside.
  • Add onions to the same skillet (without washing it) and cook onion for 1 minute. Add garlic and cook for just 30 seconds. Add chicken broth, lime juice, cilantro, red peppers flaked, and salt and pepper to taste. Bring to a gentle boil for 8-10 minutes or until liquid is reduced by 1/4 cup.
  • Whisk in cream during the last minute. Turn off heat and return chicken to the sauce. Garnish with more cilantro. Serve with aside of steamed veggies or rice. Enjoy!

  • If the chicken breasts are uneven in thickness, pound them down so they’re all even. This way all the breasts will cook through simultaneously. Sprinkle each with salt and pepper.
  • In a large ovenproof skillet, heat the oil over medium-high heat. Add the chicken and cook for 6-7 minutes, turning once. You want the chicken nice and browned on the outside. (It doesn’t have to be cooked all the way through yet.) Set chicken on a plate and cover tightly with foil until step 5.
  • Remove skillet from heat and add the broth, lime juice, onion, cilantro, and red pepper. Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil. Allow to boil gently, uncovered, for 10 minutes or until the liquid is reduced to around 1/4 cup. (During this time you can steam some veggies to have on the side, like asparagus.) Reduce heat to medium-low, then add the cream and butter. Stir until butter has melted.
