CHEESY CHEDDAR AND SPINACH MASHED POTATOES

Steps:
- Place the potatoes in a large pot, cover with water and bring to a boil. Reduce the heat and simmer about 20 minutes, until tender. Drain and return to pot.
- Add the milk, broth, butter and 3/4 tsp. salt. Mash with a potato masher until fairly smooth.
- Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally until very tender, about 8 minutes. Add garlic and remaining 1/4 tsp. salt, stirring until fragrant, about 1 minute.
- Add the spinach in batches and cook until spinach is wilted and any liquid is absorbed, about 5 minutes.
- Spread half the potato mixture into a sprayed 2-qt. baking dish. Top with half of the spinach mixture and half of the cheese. Top with the remaining potato mixture, the remaining spinach mixure and the remaining cheese.
- Bake, uncovered, in a preheated 400º oven until the filling is heated through and the topping is browned and bubbly, about 25 minutes. Let stand 5-10 minutes before serving.
CHEDDAR CHEESE MASHED POTATO CASSEROLE
I used this recipe a lot when my kids were younger and it was helpful to have part of supper ready ahead of time. Especially because babies ALWAYS seem to be fussy when it is time to make dinner. Works great for company or potluck too.

- Mash potatoes with onion salt and sour cream.
- Add butter.
- Place in a 2 quart casserole dish and press down slightly.

- Preheat oven to 400 degrees Fahrenheit.
- Peel and cook potatoes (slice 1/2-3/4 inch thick and boil for about 15 minutes) and put through ricer.
- Add salt, pepper, yogurt or sour cream, milk and butter (if using) to potatoes. Beat well until fluffy.
- Fold in spinach, chives and dill (if using).
- Place in lightly greased 8x8 casserole dish or loaf dish, top with cheddar cheese and bake 25-30 minutes or until cheese is browned.
- Recipe can be prepared a day ahead before final bake.

MASHED POTATO SPINACH CASSEROLE
This is one of my old stand-by recipes from the More with Less Cookbook. It's a good one for those nights when I don't really feel like cooking. I suppose this is meant to be a side dish, but I always up the amounts a bit and serve it as a meatless main dish. The original recipe calls for the addition of dill seed and chives, but I never use them for our family.

Steps:
- Peel, cook and mash potatoes.
- Add sour cream, salt, pepper (and butter if desired).
- Mix in enough milk to bring it to your favorite mashed potato consistency.
- Add spinach (and seasonings if desired).
- Place in casserole dish and top with grated cheddar cheese. (sometimes I also mix a bit of the cheese in with the potatoes before topping).
- Bake in 350 oven for 20-30 minutes.
- We like to serve this with corn, which usually ends up mixed in with all the rest.
CREAMY MASHED POTATO CASSEROLE WITH SPINACH AND FETA CHEESE

- Cook the poatoes in boiling water until very tender.
- Mash with a potato masher or a fork.
- In a large bowl, mix together the mashed potatoes with the butter, sour cream, salt and pepper.
- Set the oven to 350 degrees.
- Butter a 10 cup casserole dish.
- Wash the fresh spinach leaves (if using fresh spinach).
- Place the wet leaves in a microwave-safe dish; cover, and microwave on HIGH for 2-3 minutes, when cool, enough to handle, squeeze out all excess moisture.
- Chop coarsley, and place in a medium-size bowl; stir in the feta cheese and the garlic.
- Stir the spinach mixture into the potatoes.
- Spoon the mixture into the prepared baking dish (swirling the top slightly to design).
- Sprinkle with the grated Parmesan cheese.
- Bake, uncovered in the center of the oven at 350 degrees about 40-50 minutes, or until the top is golden.

--Adopted Recipe-- This is a simple scalloped potato recipe. Everyone has their own way of preparing them, and I guess some people will like it and some won't, but this method is very similar to the way I make them. The original directions gave the crockpot cooking method as the preferred method, with oven baking as an option. I have reversed this option, since I don't do much cooking in the crockpot. - Cook potatoes, then add butter, salt, pepper and milk.
- Mash potatoes until smooth.
- Fold whipped cream and cheddar cheese together.
- Butter a 9x12 casserole dish.
- Line bottom of dish with the mashed potatoes.
- Spread cheese/cream mixture over the potato layer.
- Bake at 350 degrees for about 25 minutes, until golden brown.
- Let set 10 minutes after removing from oven and then serve.
- Note: Swiss cheese can be used instead of cheddar and it's still great.

- In a large skillet over medium-high heat, brown the ground beef, onion, and 1/2 of the garlic until beef is cooked through. Add Worcestershire sauce and season with salt and pepper. Remove beef mixture from skillet and set aside.

- Bring large pot of salted water to boil. Add baby spinach from four 6-ounce bags and cook 1 minute. Drain well. Squeeze out as much water as possible from spinach. Set spinach aside.
- Cook potatoes in large pot of boiling salted water until very tender, about 30 minutes. Drain well. Return potatoes to pot and mash until almost smooth. Set pot over low heat. Add butter and stir until melted. Gradually add 1 1/4 cups milk, mashing until smooth. Add cheese and reserved spinach and stir until cheese melts. Thin with more milk, if desired. Season to taste with salt and pepper. Transfer potatoes to bowl.
