- Preheat the oven to 450 degrees F (232 degrees C).
- In a large bowl, toss the cauliflower florets with butter. Season with sea salt and black pepper.
- Transfer the cauliflower to a small 1.5 quart (1.4 L) casserole dish in a single layer. (Line the pan unless it's glass or stoneware. If there's too much cauliflower to fit in a single layer, roast on a larger baking sheet instead.) Roast in the oven for 15-20 minutes, until crisp-tender.
- Meanwhile, in the same bowl, whisk together the sour cream and heavy cream, until smooth. Stir in the minced garlic, half of the cheddar cheese, half of the bacon bits, and half of the green onions. If desired, season sauce with sea salt and black pepper. (Don't oversalt - it will get more salty as the cheese melts later.)
- When the cauliflower is done roasting, take it out and leave the oven on. Add the cauliflower to the bowl and mix with the sauce.
- Return the cauliflower mixture to the casserole dish. Top with remaining cheese and bacon bits.
- Bake for 5-10 minutes, until the cheese melts. Top with remaining green onions.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish.
- Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, and steam until crisp-tender, about 5 minutes. Drain, and set aside.
- Combine sour cream, Cheddar cheese, corn flakes, bell peppers, and salt in a medium bowl. Stir in the cauliflower, and transfer to the prepared baking dish. Sprinkle Parmesan cheese and paprika over the top of the dish.
- Bake uncovered until heated through, 30 to 35 minutes.

- Spray a 9x9 or similar sized baking dish with cooking spray and set aside. Preheat oven to 375°F.
- Bring a large pot of salted water to a boil then add in the cauliflower. Lower the heat to medium and cook for 10-15 minutes or until the cauliflower is very soft. Drain the water then return the cauliflower to the pot.
- Add the smoked paprika, granulated garlic, salt and pepper and cream cheese. Use an immersion stick to purée the cauliflower until smooth. Add in the Greek yogurt and all of the cheese minus 1/4 cup and purée again until smooth. Taste for seasoning. Stir in the green onions then transfer to the prepared baking dish. Top with the remaining cheese.
- Bake for 15 minutes or until bubbly and the cheese on top is golden and melted. Sprinkle with extra smoked paprika and green onions.

- Preheat oven to 400º
- Cut the cauliflower into bite-sized pieces. Steam in a steamer or microwave until slightly tender (about 5 minutes).
- If necessary, drain and allow to dry before using. Add to an 8x8 baking dish and set aside.
- In a medium saucepan melt the butter and then mix in the flour to form a paste.
- While mixing constantly, slowly pour in the milk until smooth.
- Mix in the salt, and Parmesan cheese until combined.
- Mix in 1 cup of cheddar until melted.
- Mix in the pepper.
- Pour the cheese sauce over the steamed cauliflower in the pan.
- Top with the remaining ½ cup of cheddar

- Preheat oven to 425 degrees F.
- Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.

- Bring a large saucepan of water to the boil, then add 1 large cauliflower, broken into pieces, and cook for 5 mins - lift out a piece to test, it should be cooked.
- Drain the cauliflower, then tip into an ovenproof dish. Heat oven to 220C/200C/gas 7.
- Put the saucepan back on the heat and add 500ml milk, 4 tbsp flour and 50g butter.

- Place racks in the upper and lower thirds of your oven and preheat to 425 degrees F. Lightly coat a wide 3-quart (9x13) casserole dish, with nonstick spray, and line a rimmed baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets with olive oil, garlic powder, salt, pepper, and nutmeg.
- Transfer the cauliflower to the prepared casserole dish and spread it into an even layer. Keep the bowl handy. Roast cauliflower on the lower rack for 30 minutes, until the florets are tender and begin to brown.
- Meanwhile, arrange the bacon strips in a single layer on the prepared foil-lined baking sheet. Bake on the upper rack until crisp, about 10 to 15 minutes.
- Remove the bacon and cauliflower from the oven. Stir the cauliflower, spread it back into an even layer, and place it on the upper rack to continue cooking until the end of its baking time.
- Transfer the bacon to a paper-towel-lined plate and lightly pat dry. Once cool enough to handle, roughly chop or crumble the bacon into small pieces.
- In the same bowl that you used to toss the cauliflower, beat together the cream cheese and Greek yogurt until combined. Stir in 1/3 cup Gruyere cheese, 2 tablespoons of Parmesan cheese, and half of the chopped bacon.
- Remove the roasted cauliflower from the oven and dollop the cream cheese mixture over the top. Sprinkle with the remaining 1/3 cup of Gruyere and 2 tablespoons of Parmesan.
- Return the pan to the upper third of the oven and bake until the cheese is melted and gooey, about 5 to 7 minutes. Turn the oven to broil. Broil the casserole until golden on top, 1 to 3 minutes. Do not walk away, and watch carefully to make sure the cheese does not burn.
- Remove from the oven and sprinkle with fresh chives and remaining bacon. Serve hot.

So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. - Cook the entire bag of cauliflower in the microwave. I use a covered dish with about a tablespoon of water on the "frozen vegetable" setting. Or follow instructions on the package. You can use fresh cauliflower. One medium head should yield about one pound and cook in a microwave in 4-5 minutes with a bit of water.
- Slice 3 green onions.
- Move cauliflower to the mixing bowl and mash with a potato masher. You could also use a mixer or food processor, but you are NOT trying to cream this. Add cheddar cheese, sour cream, scallions, salt, and pepper. Add bacon if using.
- Mix well and move to a baking pan. Maybe refrigerated or cooked now.
- Cook in preheated oven 375° convection until the top is browned. About 20 minutes until nicely browned. (you may adjust the temp depending on your needs for timing or cooking with other foods)
- Try to let set for 5 minutes before serving.

- Cook cauliflower: Add 1-inch of water to a large pot. Bring the water to a boil. Place the cauliflower florets in a steamer basket and insert the basket into the pot. Cover the pot, reduce the heat to medium and steam until the cauliflower is tender-crisp, about 5-8 minutes. Drain the cauliflower and transfer it to a clean work surface lined with paper towels.
