This rich-tasting souffle is always on our Christmas morning menu. Like any puffy souffle, it will settle a bit after you remove the dish from the oven, but the pretty golden top is very attractive. I often add some cubed ham. -Maryellen Hays, Wolcottville, Indiana

1 cup sliced fresh mushrooms
1 tablespoon butter
3 ounces cream cheese, softened
6 large eggs
1 cup 2% milk
3/4 cup biscuit/baking mix
3 cups frozen chopped broccoli, thawed
2 cups shredded Monterey Jack cheese
1 cup 4% cottage cheese
1/4 teaspoon salt

Steps:

  • In a small skillet, saute mushrooms in butter until tender; set aside. In a large bowl, beat the cream cheese, eggs, milk and biscuit mix just until combined. Stir in the broccoli, cheeses, salt and mushrooms. , Pour into a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° until a thermometer reads 160°, 50-60 minutes. Let stand for 10 minutes before serving.

A perfect party treat, these tasty little puffs have a little kick of heat you will enjoy with the Sriracha Mayonnaise topping.

1 bag (12 oz) frozen broccoli & cheese sauce
3/4 cup Original Bisquick™ mix
1/2 teaspoon crushed red pepper flakes
1/8 teaspoon salt
1/2 cup milk
2 eggs
1/3 cup grated Parmesan cheese
6 slices precooked bacon, chopped
1/2 cup mayonnaise
2 teaspoons Sriracha sauce
Sliced green onions, if desired

Steps:

  • Heat oven to 375°F. Generously grease 24 mini muffin cups with shortening or cooking spray. Cook broccoli as directed on bag for minimum time. Chop broccoli.
  • In medium bowl, stir Bisquick mix, crushed red pepper, salt, milk and eggs with whisk or fork until blended. Stir in broccoli and cheese sauce, Parmesan cheese and bacon. Divide mixture evenly among cups. Cups will be full.
  • Bake 16 to 18 minutes or until toothpick inserted in center comes out clean and tops are light brown. Cool 5 minutes. With thin knife, loosen sides of puffs from pan; remove to cooling rack.
  • Meanwhile, mix mayonnaise and Sriracha sauce in small bowl until smooth. Top each warm puff with mayonnaise mixture; garnish with green onion.

½ Cup Whole milk
½ Cup Sour cream
1 Cup Flour
4 Eggs, divided

* TIP: For a little extra zest, substitute shredded cheddar cheese with shredded hot pepper cheese.

Steps:

  • 1. Preheat oven to 425°F. Coat two large baking sheets with nonstick cooking spray.
  • 2. In a medium saucepan over medium heat, combine butter, milk and sour cream, and cook for 2 to 3 minutes, or until a full boil is reached. Add the flour all at once and stir vigorously with a wooden spoon, until dough mixture pulls away from the sides of saucepan and forms a ball. Continue to cook for another minute or until excess moisture is gone, stirring constantly. Transfer to a large bowl and cool for 5 minutes.
  • 3. Beat in eggs one at a time by hand or with an electric mixer on low speed, making sure each egg is fully incorporated into the dough before adding the next egg. Beat the dough until it is shiny and smooth. Stir in cheese, Potatoes and salt, and mix well. Drop a tablespoon of dough at a time onto baking sheets, about 1-½ inch apart.
  • 4. Bake uncovered for 28 to 32 minutes, or until golden brown and firm to the touch. Serve warm or at room temperature.

These cheesy broccoli puffs are a perfect snack or starter and make for great appetizer. Crisp pastry, cheesy filling and delicious broccoli? Yes please!

2 heaped tablespoons butter
4 heaped tablespoons flour
1½-2 cups milk
1 cup grated mature cheddar cheese
pinch of cayenne pepper
salt & pepper to taste
1 small head broccoli (cut into florets and steamed until al dente)
1 roll ready-made puff pastry (cut into 12 squares)
1 egg (beaten)

Steps:

  • To make the sauce, melt the butter in a saucepan and add the flour.
  • Stir for a minute over medium heat then slowly whisk in the milk. The sauce needs to be very thick (but still creamy) in consistency so you might not need all the milk.
  • When the sauce is smooth, creamy and thick, turn the heat down and cook the sauce out for approximately 7-10 minutes, stirring regularly, until the sauce is velvety smooth and all flouriness has been cooked out.
  • When the sauce is cooked, remove from the heat then add the cheese, steamed broccoli, cayenne pepper and seasoning and stir to combine. Cover the surface of the sauce with a piece of plastic wrap to prevent a film from forming then set aside.
  • Pre-heat the oven to 180°c.
  • Place the pastries in the holes of a shallow muffin tin, pressing down properly.
  • Spoon in the broccoli filling then fold over the edges of the pastry.
  • Brush with the beaten egg and place in the oven.
  • Allow the pastries to bake for 20-25 minutes until they pastry is golden, crisp and cooked through.
  • Remove from the oven and allow to rest for 10 minutes before serving.

This has been a traditional Thanksgiving side dish at our house. I looked forward to this casserole almost as much as the turkey, if not more. Even ones who don't like broccoli will take to this dish.

1 lb broccoli, chopped
1 (10 3/4 ounce) can condensed cream of mushroom soup
2 ounces shredded cheddar cheese
1/4 cup milk
1/4 cup mayonnaise
1 egg, beaten
1/4 cup dry breadcrumbs
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • Cook broccoli; drain.
  • Place broccoli in casserole dish.
  • In separate bowl, combine soup, cheese, milk, mayo, and egg until blended.

The broccoli puff is always better the next day. I make this dish around the holidays, it goes great with turkey, lamb, pork and chicken, a nice side dish.

2 (10 ounce) boxes frozen chopped broccoli
1 (10 1/2 ounce) can Campbell's Cream of Mushroom Soup
2 eggs, well beaten
1 cup mayonnaise
1 cup grated cheddar cheese (I like to use 2 cups)
2 teaspoons grated onions
1/2-1 cup butter
1 (6 ounce) bag croutons
salt & pepper (to taste)

Steps:

  • Preheat oven to 400°F.
  • Cook and drain the broccoli.
  • Combine undiluted soup, eggs, mayonnaise, cheese, onions, salt and pepper.
  • Stir in the drained broccoli.
  • Pour mixture in 1-1/2 quart baking dish.
  • Bake at 400°F for 25 minutes.
  • In the meantime, melt butter in a frying pan, toss in the croutons until butter is absorbed.
  • Add buttered croutons to baked broccoli the last 5 minutes of baking time.
  • Note: This dish is always better the next day.

1 stick (8 tablespoons) unsalted butter
1 cup whole milk
1 cup all-purpose flour
6 large eggs
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  • Melt the butter in a medium saucepan over medium heat. Add the milk and heat until small bubbles start to form around the edges. Add the flour and cook, stirring constantly with a wooden spoon, until the mixture is smooth and glossy and a dough ball forms. (The dough should start to pull away from the edges of the pan.)
  • Transfer the dough to a stand mixer fitted with the paddle attachment. Mix in 5 of the eggs, one at a time, on medium speed until completely combined. Stir in the salt, pepper and 3/4 cup of the Gruyere.
  • Spoon large tablespoons of the batter onto the prepared baking sheet, leaving about 1 inch between each puff. Whisk the remaining egg and use it to brush the tops of the puffs. Sprinkle over the remaining 1/4 cup Gruyere.
  • Bake until puffed and golden, about 25 minutes. Serve hot.
