CHEESY BAKED PASTA WITH SAUSAGE AND RICOTTA
Like a cross between baked ziti and sausage lasagna, this mozzarella-topped pasta is rich with ricotta and crushed tomatoes - and cooks entirely in one pan, including the pasta. The Italian sausage adds meaty depth to the sauce, but vegetarians can leave it out or use their favorite plant-based sausage instead.

- Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.
- Stir in whole tomatoes and their juice, using a spoon to break them up. Add crushed tomatoes, bay leaves and 2 teaspoons salt, and bring to a simmer. Simmer for 10 minutes to thicken slightly.
- Stir in pasta and 1 cup water and return to a simmer. Continue to simmer for 2 minutes, stirring frequently to make sure pasta doesn't stick to the bottom of the pan. Remove from heat, pluck out the bay leaves, and fold in about a third of the mozzarella.
- Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.

- Pre-heat oven to 350°F.
- Cook pasta in large pot as directed on package, omitting salt. After draining, add back to the pot.
- Meanwhile, combine Italian sausage and onion in a large fry pan and cook over medium heat. Cook until sausage is no longer pink. Drain off excess grease.
- Combine meat, jar of sauce and parmesan cheese with pasta and stir until well combined.
- Pour mixture into a greased 13x9 inch pan. Top with cheese and cover with foil.
- Bake 15-20 minutes or until heated through.
- Sprinkle with minced parsley if desired and serve immediately.

A friend gave this recipe to me a few years back, and my family can't seem to get enough of it. It sounds strange with cream in it, but that just enhances the flavor and texture. This is a very easy recipe.

- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.

CHEESY SAUSAGE RIGATONI

- Bring a large pot of water to a boil. Cook the rigatoni according to the package instructions; drain and set aside to cool.
- Saute the onions in the olive oil in a skillet over medium heat until golden, 3 to 4 minutes. Crumble in the sausage, add the crushed red pepper and cook for a couple of minutes. Add the marinara sauce, mix everything together and cook for 5 to 7 minutes. Set aside to cool.
- To assemble, add about 2 spoonfuls of the sauce--just enough to coat the bottom--to a baking dish. Then layer half of the cooled noodles, half of the mozzarella cubes and half of the remaining sauce. Repeat the process: layer the remaining noodles, mozzarella and sauce, then top with the Parmesan. Cover and put in the fridge or freezer until ready to cook.
- When ready to cook, preheat the oven to 350 degrees F. Cook the rigatoni until heated through and bubbling, 25 minutes straight from the fridge, or 2 hours straight from the freezer. Garnish with minced parsley before serving.

- Pre-cook the sausage (Pan-fry,bake,etc.) cut into circles or semi-circles.
- Chop garlic; put into a large measuring cup.
- Chop basil and add to garlic.
- Add a little salt and pepper before covering the garlic and basil with olive oil.
- Put measuring cup in refrigertor.
- Boil pasta, rinse and drain.
- Toss with sausage and oil mixture.
- Salt and pepper to taste.
- If pasta is too dry, add more olive oil.
- Stir in Parmesan Cheese and enjoy.

- Cook and slice Italian Sausage, set aside.
- Lightly sautee green onions, mushrooms and peppers in butter.
- In the meantime cook pasta in generous amount of salted water, drain.
- Prepare Sauce:.
- Melt butter on medium setting in a large pot.
- Slowly add flour to make a thin paste, stirring constantly.
- Slowly add milk.
- Add all cheeses, salt and black pepper.
- Simmer until partially thickened, adding more milk if neccessary.
