- Prepare macaroni shells according to package directions; drain and set aside.
- Cook ground beef, onion, and garlic in a large skillet until beef is browned.
- Drain excess fat.
- Stir in next 6 ingredients.
- Set aside.
- Combine spaghetti sauce and wine.
- Spoon one-fourth of sauce into a lightly greased oblong baking pan; set aside remaining sauce.
- Stuff macaroni shells with beef mixture, and place in baking dish.
- Spoon remaining sauce over shells.
- Sprinkle Parmesan cheese over shells.
- Bake, uncovered, at 400 degrees for 20 minutes.

- Preheat the oven to 400 degrees F.
- Bring a large pot of salted water to a boil. Cook the paccheri for 1 minute less than the package directions. Reserve 1/2 cup pasta water, then drain. Rinse the pasta thoroughly with cold water after draining.
- Combine the ricotta with 1/2 cup of the pesto and 2 cups of fontina, then mix well. Season with salt and pepper. Transfer to a piping bag or resealable bag with the corner snipped off. Pipe the mixture into each paccheri. (This doesn't need to be perfect. If a paccheri is very torn or broken, do not use.) Stand each filled paccheri upright in a 10-inch springform pan until it is packed tightly.
- Thin the alfredo sauce with the reserved pasta water in a bowl, then pour it into the pan over the filled paccheri, spreading evenly. Sprinkle with the remaining 2 cups fontina cheese.
- Bake until the mixture is bubbly and the cheese on top is melted, 35 to 40 minutes. Remove from the oven and let sit for 5 minutes. Drizzle with the rest of the pesto and garnish with the fresh basil. Remove the springform side, then slice and serve.

- Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Make the sauce: Heat the olive oil in a medium saucepan over medium heat. Add the carrot, zucchini, onion and celery and saute until soft but not brown, 5 minutes. Add the garlic and cook for 5 minutes, stirring occasionally. Add the basil, oregano, tomato paste, crushed tomatoes and 2 cups water. Bring to a boil, then reduce the heat and simmer for 15 minutes. Season with salt and pepper.
- Meanwhile, prepare the shells: Add the pasta to the boiling water and cook for 8 minutes; drain. Mix the tofu, spinach, cottage cheese, parmesan, 1/2 cup mozzarella, the egg and garlic in a medium bowl and season with salt and pepper.
- Mist a 9-by-13-inch baking dish with cooking spray. Spread about 1 cup of the sauce in the dish. Stuff the cheese mixture into the shells and place in the baking dish, open-side up. Pour the remaining sauce over the shells. Cover tightly with foil and bake for 30 minutes. Uncover, sprinkle with the remaining 1 cup mozzarella and bake for 15 minutes. Let cool slightly before serving.

- Bring a large pot of lightly salted water to a boil. Add shells and cook for 8 to 10 minutes or until al dente; drain and rinse in cold water.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain and crumble. In a large bowl, combine cooked sausage, spinach, ricotta cheese, egg, garlic, lemon juice and Parmesan cheese. Season with salt, pepper and oregano.
- Preheat oven to 350 degrees F (175 degrees C).
- Stuff pasta shells with the sausage and cheese mixture and place in a 9x13 inch baking dish. Top with spaghetti sauce and mozzarella cheese.

- Meanwhile, melt the butter in a large pot over medium heat.
- Add the flour and cook, stirring for 2 minutes; whisk in the milk.

SPINACH, PESTO, AND BEEF STUFFED SHELLS
This is a light, cheesy and very easy manicotti. Use whatever shell type pasta you like. I have homemade pesto and tomato sauce in the freezer but this is fine with store bought. This recipe makes a large amount so we have enough for two dinners and a lunch for three people. Enjoy!

- Brown the ground meat and season well with salt and pepper.
- Drain off the grease and put in a large bowl.
- Boil the shells, drain and set aside.
- Preheat the oven to 350 degrees.
- In the same skillet in which you browned the meat, add some olive oil and saute the spinach until completely done.
- Mix the pesto, cream cheese, Parmesan and spinach into the ground meat.
- Pour a little marinara into a large (large enough to hold all the manicotti in one layer) casserole dish, enough to allow the shells to sit on and not stick to the bottom of the dish.
- Then stuff the shells with the meat mixture and lay the stuffed shells into the casserole.
- Top each shell with Provolone.
- Pour remaining marinara over shells, top with shredded mozzarella.
- Bake for 45-60 minutes, until hot and bubbly with the cheese all melted but not too browned.

- Heat oven to 350°F. Cook and drain pasta shells as directed on package.
- In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Cool slightly, about 5 minutes.
- In large bowl, mix pasta sauce and water. Pour 1 cup of the pasta sauce mixture in bottom of ungreased 13x9-inch (3-quart) glass baking dish. In medium bowl, mix cheese spread, 1 cup of the Italian cheese, the Parmesan cheese, egg and cooked beef. Spoon heaping tablespoon mixture into each shell.
