This rich, cheesy bean dip is a crowd-pleaser and so easy to prepare. Two kinds of cheese and sour cream balance the spicy flavor of chiles and taco sauce. Leftovers are great served cold in lunches. -Lorraine Wilson, Moses Lake, Washington

4 cups shredded Monterey Jack cheese
4 cups shredded cheddar cheese
1 can (16 ounces) refried beans
1 bottle (16 ounces) taco sauce
2 cups sour cream
2 medium tomatoes, chopped
1 medium onion, chopped
1 can (6 ounces) pitted ripe olives, drained and chopped
1 can (4 ounces) chopped green chiles
1 tablespoon lemon juice
Tortilla chip scoops and thinly sliced green onions

Steps:

  • Combine the first 10 ingredients in a greased 5- or 6-qt. slow cooker. Cook, covered, on low until cheese is melted, 4-5 hours, stirring every hour. Serve with tortilla chips and green onions.

2 cups shredded Monterey Jack cheese
2 cups shredded cheddar cheese
1 can (16 ounces) refried beans
1 cup sour cream
1 package (8 ounces) cream cheese, softened
2 tablespoons taco seasoning
Tortilla chips

Steps:

  • In a bowl, combine cheeses; set aside 2 cups for topping. Add beans, sour cream, cream cheese and taco seasoning to the remaining cheese. Transfer to a greased 2-qt. baking dish; sprinkle with reserved cheese. Bake, uncovered, at 350° for 20-30 minutes or until bubbly around the edges. Serve warm with tortilla chips.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
2 (16 ounce) cans refried beans
1 can chopped green chili
1 package taco seasoning mix
5 drops hot pepper sauce (or more)
2 tablespoons dried parsley
1/4 cup chopped green onion
1 (8 ounce) package shredded cheddar cheese
1 (8 ounce) package shredded monterey jack cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, blend the cream cheese and sour cream.
  • Mix in the refried beans, taco seasoning, hot pepper sauce, parsley, green onions, 1/2 the Cheddar cheese and 1/2 the Monterey Jack cheese.
  • Transfer the mixture to an 8x12 inch baking dish.
  • Top with remaining Cheddar and Monterey Jack cheeses.
  • At this point you can refrigerate up to a day ahead before baking.
  • Bake in the preheated oven 20 to 30 minutes, until cheese is slightly browned.
  • Serve right away with tortilla chips.

Truly the BEST easy, cheesy bean dip full of savory southwest flavors and great for serving a crowd. Grab your favorite tortilla chips and get ready to dig into this flavorful, party appetizer!

For the bean dip:
2 15.4 ounce cans BUSH'S Southwestern Style Pinto Beans™
⅓ cup enchilada sauce or your favorite salsa (mild or medium)
½ tablespoon olive oil
½ yellow onion, finely diced
1 orange bell pepper, diced
¾ cup fresh or frozen sweet corn
1 ½ cup shredded Mexican blend cheese
For garnish:
1 jalapeno, sliced
½ avocado, sliced
2 tablespoons diced cilantro
A few sliced cherry or grape tomatoes
Cotija or feta cheese
Lime wedges
For serving:
Tortilla chips

Steps:

  • Preheat oven to 350 degrees Grease a 9x9 inch pan with oil or cooking spray. Set aside.
  • Add one can of BUSH'S Southwestern Style Pinto Beans™ and 1/3 cup enchilada sauce or salsa to a blender or food processor and process/blend until smooth. Pour it into prepared pan. Stir in the remaining beans from the other can.
  • Add olive oil to a large skillet and place over medium heat. Add diced onion, bell pepper and corn and saute for 3-5 minutes until onion and peppers cook down a bit. Add mixture to the pan with the beans.
  • Gently stir all the ingredients in the pan together so that they are well incorporated. Add shredded cheese on top, then cover with foil and bake for 20-25 minutes until bean dip is bubbling along the edges and cheese is nice and melted. Garnish with jalapeno slices, avocado slices, cilantro, sliced cherry tomatoes and crumbled cheese. Serve immediately with tortilla chips for dipping. Serves 10.

1 package (16 ounces) mild Mexican pasteurized prepared cheese product with jalapeño peppers, cut into cubes
1 can (16 ounces) Old El Paso™ refried beans
1 can (4.5 ounces) Old El Paso™ chopped green chiles, undrained
2 pounds tortilla chips, if desired

Steps:

  • Place Reynolds™ Slow Cooker Liners inside a 5- to 6 1/2 -qt slow cooker bowl. Make sure that liner fits snugly against the bottom and sides of bowl and pull the top of the liner over rim of bowl.
  • Mix cheese, beans and chiles in cooker.
  • Cover and cook on Low heat setting 2 to 3 hours or until cheese is melted. Stir until cheese is smooth.
  • Scrape down side of cooker with rubber spatula to help prevent edge of dip from scorching. Serve with tortilla chips. Dip will hold on Low heat setting up to 2 hours; stir occasionally.

  • Pour pinto beans into a colander or strainer and allow to sit for a few minutes. DON'T RINSE them--our goal is to remove some of the liquid but not all of it.
  • Transfer beans to a large mixing bowl. Use a potato masher or some forks to mash the mixture until relatively smooth, with some chunks. Add the cream cheese and mash some more, until combined. Stir in the sour cream, taco seasoning, salsa, and 1/4 cup shredded cheese.
  • Pour mixture into an 8 inch or similar size baking dish and sprinkle the remaining shredded cheese evenly on top. Bake in preheated oven for 25 minutes or until cheese is melted and bubbly.
