1 8 oz can fire roasted tomatoes (undrained )
2 cups chicken broth
1.5 cups long grain rice
1 tbsp garlic powder
1 tbsp paprika (smoked or unsmoked, you decide!)
1 tsp chili powder
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees farenheit.
  • Combine all ingredients into casserole dish & stir. Cover tightly with foil.
  • Bake for 30-35 minutes or until rice is done and fluffy. Tomatoes will rise to top; stir in before serving and top with cheese.*Bake time depends upon oven.

4 cups rice (cooked)
1 1/3 cups sour cream
1 can diced jalapenos
2 cups colby jack cheese (grated)
1 1/2 tsp salt

Steps:

  • If you need to cook your rice - using white rice place white rice, water, 1 tbsp butter and 1 tbsp Better than Bouillon in water (check package for measurements) and bring to a boil. Simmer with lid on for 20 minutes. Remove from heat for 5 min and fluff.
  • Preheat oven to 350
  • Spray baking dish with non-stick spray
  • Mix together cooked rice, sour cream, jalapenos (no need to drain) and cheese into a baking dish
  • If you'd like, top with french fried onions or tortilla strips
  • Bake for 20 minutes

1 cup shredded colby jack or cheddar cheese (divided)
2 eggs
1 cup milk
1/2 cup salsa
1/2 cup sour cream
1/2 teaspoon salt

Steps:

  • In a bowl mix all the ingredients but using only half the cheese.
  • Spread into a greased 8x8 pan or similar casserole dish and spread remaining cheese on top.
  • Bake at 400° for 20-25 minutes or until hot through and cheese is melted.

1 large onion chopped

2 pkg bovril dry beef stock
1 tsp salt
2 tsp black pepper
1 c salsa, chunky
3 c shredded cheddar cheese
3 c water
1 1/2 c white rice
lettuce, chopped tomato, olives, sour cream, nacho chips, salsa.

Steps:

  • 1. Brown ground beef in skillet
  • 2. Add in onions, peppers, and seasonings and saute until vegetables are just soft
  • 3. Pour in water,add Bovril,salsa and rice and heat just until liquid is just starting to boil.
  • 4. Place mixture in a 6 cup, greased casserole dish and bake in 350 degree oven for 30 minutes.
  • 5. Place cheese on top of casserole and continue to bake until melted and golden.
  • 6. Remove from oven and let sit 5 minutes before serving.
  • 7. Top with all of your favorite Taco toppings and enjoy.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 3 1/2 quart casserole dish.
  • In a saucepan, bring water to a boil. Stir in rice, reduce heat, and cover. Simmer for 20 minutes.
  • In a wok or large skillet, heat the broth and saute the garlic, bell pepper and onion until tender, about 5 minutes. Stir in cooked rice, cream-style corn, Mexican-style corn, whole kernel corn, diced tomatoes with chiles, green chiles, Mexican-style processed cheese, salt, pepper and chili powder. 2 tablespoons canola oil
3 cloves garlic, minced
1/2 to 1 whole large onion, chopped
4 cups long grain rice
Two 14.5-ounce cans whole tomatoes
One 10-ounce can diced tomatoes and green chiles, such as Rotel
1 teaspoon cumin (or more to taste)
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon turmeric
6 to 8 cups low-sodium chicken broth (more if needed)
1 1/2 cups grated Cheddar
Fresh cilantro, chopped, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the oil in a large dutch oven and add the garlic and onions. Cook, 3 to 4 minutes. Reduce the heat to low and add the rice. Stir constantly, making sure the rice doesn't burn. Cook over low heat, about 3 minutes.
  • Next, add the whole tomatoes, diced tomatoes, cumin, salt, pepper, cayenne and turmeric. Stir to combine and let cook, about 2 minutes. Finally, add the chicken broth and stir the mixture together. Bring the mixture to a boil, and then reduce heat to low. Cover, and simmer until the rice is not quite done, 10 to 15 minutes.
  • Top with the cheese, and then bake with the lid off until the cheese is melted and the rice fully cooked, about 15 minutes. Serve with chopped cilantro.

3 tablespoons vegetable oil
1 cup long grain white rice
2 ½ cups chicken broth
1 (4 ounce) can tomato sauce
1 (4 ounce) can canned chopped green chiles, drained
1 small onion, minced
2 cloves garlic, minced
1 ½ teaspoons salt
½ teaspoon ground cumin
¼ teaspoon chili powder
1 ½ cups shredded Monterey Jack cheese

Steps:

  • Heat vegetable oil in a large skillet over medium heat. Stir in rice; cook and stir until rice is lightly browned and gives off a toasted fragrance, 5 to 7 minutes. Stir in the chicken broth, tomato sauce, green chiles, onion, garlic, salt, cumin, and chili powder. Bring to a boil, then reduce heat to low. Cover and simmer until rice is tender, about 25 minutes, stirring occasionally. Spread Monterey Jack cheese on top, then replace the lid and allow the cheese to melt, about 5 minutes more.

1 large onion, diced
4 garlic cloves, finely chopped
1 jalapeno pepper, finely diced (to taste)
1 cup corn
2 tablespoons chili powder (chipotle, ancho, etc.)
2 teaspoons cumin
1 (15 ounce) can black beans, drained and rinsed well
1 (10 ounce) can diced tomatoes and green chilies, drained
2 cups shredded cheddar cheese (plus extra for melting on top) or 2 cups monterey jack cheese (plus extra for melting on top)
chopped cilantro, chopped green onion, sour cream and avocado for garnish
tortilla chips (optional)

Steps:

  • In a large pan, heat olive oil over medium heat. Add the onion and saute until soft and translucent, about 5 minutes. Add garlic and continue sauteing another 2 minutes. Add the jalapeno pepper then the corn; stir well. Add chili powder and cumin and stir together until mixed.
  • Add beans and drained tomatoes; stir well. Remove from heat and fold in the prepared rice, incorporating all ingredients. Add cheese and stir together until cheese is distributed and melted. Salt and pepper to taste, if desired. Sprinkle remaining cheese on top. (If your rice is cold, placing the lid on top a few minutes should warm it through.).

  • Turn the heat down to medium-low and heat the oil for the sauce. Once hot, add the garlic and onion and soften for 3 minutes. Add the tomato puree and stir for one minute. Add the rest of the ingredients for the sauce and simmer for approximately 20 minutes, stirring occasionally.
