- Pierce potatoes all over with a fork. Microwave on Medium, turning once or twice, until soft, about 20 minutes. (Alternatively, bake potatoes at 425 degrees F until tender, 45 minutes to 1 hour.) Transfer to a clean cutting board and let cool slightly.
- Holding them with a kitchen towel to protect your hands, make a lengthwise cut to open the potato, but don't cut all the way through. Pinch the ends to expose the flesh.
- Top each potato with some mayonnaise, beef, lettuce, tomato, red onion and cheese. Serve warm.

Cheeseburger Baked Potatoes are super simple to make and require very few ingredients. It can even be an excuse to get a little more room in your refrigerator by using up the few remaining pickles at the bottom of the jar, or that last little bit of leftover cheese.

- Preheat oven to 450. Scrub potatoes and poke the skin of each potato 5-6 times with a fork or the tip of a knife. Line a baking sheet with foil. Place pricked potatoes on foil and drizzle with olive oil. Sprinkle 1 teaspoon salt over potatoes and cover with another sheet of foil. Seal the foil around the edges and place pan in oven. (Alternately- You can skip the pan, oil and salt and place the potatoes directly on the oven racks) Bake potatoes for 45 minutes. Meanwhile- Chop or puree the onion (I usually puree the onion because my kids revolt if they find a piece of onion). Brown the ground beef and onion in a skillet over high heat with 1 teaspoon salt and ¼ teaspoon ground pepper until cooked through. Sometimes brown bits start to accumulate in the pan. To keep it from burning you can add a couple of Tablespoons of water and scrape up the browned bits. I have very lean beef and often have to do this two or three times as the meat cooks. Slice the cooked potatoes lengthwise and top with the meat mixture, diced pickles, cheese and onions. Drizzle with mustard if desired.

- 1. Mix the potatoes and sauce packet from the potato mix with the water and milk in a 2-qt. casserole dish. Bake uncovered until potatoes are tender, 30 to 35 minutes at 400 degrees. Cool 15 minutes.
- 2. Cook ground beef and onion together in skillet; drain. Stir in worcestershire sauce, garlic powder, and salt.
- 3. Layer over potatoes first the tomatoes, then the beef mixture, then the cheese. Bake at 400 degrees until cheese is melted and potatoes are bubbly, about 10-15 minutes.

- To prepare the baked potatoes, preheat the oven to 350°F. Place the potatoes in an 8" x 8" baking pan. Cover the pan with foil and bake until soft, about 1 hour. When the potatoes have finished baking, let them cool until you're able to handle them comfortably. While the potatoes are cooling, make the cheese sauce and the filling. To prepare the cheese sauce, melt the butter in a small sauce pot. Add the flour and cook, while stirring, for 30 seconds. Add the salt, pepper, and milk. Bring the mixture to a simmer, stirring constantly. When the sauce has thickened, remove from the heat and add the cheese. Stir until the cheese is completely melted. To prepare the filling, brown the ground beef with the onion in a small sauté pan over medium heat. Drain off the extra fat and place the meat into a medium-size bowl. Add the salt, black pepper, Worcestershire sauce, mustard, ketchup, dill relish, and cheese sauce to the bowl and set aside. Once the potatoes have cooled, cut an opening, lengthwise, from the top of the potato. Scoop out the flesh, creating a shell. Take 1/2 cup of the potato flesh and chop it into small pieces and set aside. Repeat with the remaining potatoes. Place the empty potato shells back into the baking pan. To assemble the baked potatoes, fold in the reserved potato flesh with the ground beef mixture. Fill the prepared potato shells with the mixture and bake for 45 minutes.

- Heat garlic and olive oil in skillet, add ground beef. Cook over medium heat until browned. Drain fat, add salt and pepper to taste. Scrub and prick potatoes. Bake at 400' for 1 hour or until done.
- When cool enough to handle, cut a thin slice from the top of each potato, scoop out the pulp, leaving a 1/4" shell. Place the pulp in a medium bowl and set aside.
- Place the potato shells on a baking pan.

- Fry the beef in a nonstick pan, and when finished, drain off the fat and set it aside Place the potatoes in a medium sized mixing bowl, mash them, or if using the instant, follow the directions on the box.
- Add the milk and whip them until creamy.
- In a medium sized baking dish, place a layer of the whipped potatoes about an inch thick. Add all of the ground beef for the second layer. Add half of the cheese for the third layer. Use the rest of the potatoes for the fourth layer. Add the rest of the cheese on top.
- Place in oven and bake at 350°F until the cheese is melted and you see part of the potatoes golden brown.
- Let it set for five minutes and then serve.
