CHEESE-STUFFED PORK CHOPS

Cheese-Stuffed Pork Chops image

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

Kosher salt
1/4 cup sugar
4 bone-in, thick-cut pork chops (6 to 8 ounces each)
1/2 medium head escarole
2 cloves garlic
4 tablespoons extra-virgin olive oil, plus more for brushing
Freshly ground pepper
4 slices provolone cheese (about 2 ounces)
4 fresh sage leaves, chopped
1 (19-ounce) can cannellini beans, drained and rinsed

Steps:

  • Dissolve 1/4 cup salt and the sugar in 3 cups warm water in a large bowl. Insert a paring knife into the curved side of each pork chop to make a deep pocket, about 2 inches wide. Soak the chops in the brine, about 5 minutes. Meanwhile, finely chop the escarole and garlic. Toss with 2 tablespoons olive oil, and salt and pepper to taste. Remove the chops from the brine and pat dry. Fold each cheese slice and tuck into the pocket of a pork chop, then stuff with the escarole mixture. Brush the pork with olive oil, sprinkle with the sage and season with salt and pepper. Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Sear the pork in batches, turning once, until golden brown, 3 to 4 minutes. Transfer to a plate. Add the beans and 1/3 cup water to the skillet, scraping up any browned bits; season with salt and pepper. Return the pork to the skillet, cover and cook over medium heat until no longer pink, 5 to 7 more minutes. Serve the pork with the beans.

SWEET BALSAMIC PORK WITH CARAWAY SLAW

Sweet balsamic pork with caraway slaw image

Griddle pork shoulder steaks with a sweet and tangy glaze, then serve with a creamy coleslaw for a quick weeknight meal

Provided by Sara Buenfeld

Categories     Dinner, Main course, Supper

Time 20m

Number Of Ingredients 11

4 pork shoulder steaks (about 600g)
2 tbsp ketchup
2 tbsp balsamic vinegar
1 tbsp clear honey
2 garlic cloves , finely grated
225g white cabbage , shredded
1 large carrot , coarsely grated
1 small red onion , finely chopped
½ tsp caraway seeds
4 tbsp mayonnaise
baked potato , to serve

Steps:

  • First, take a look at the pork steaks. If they are thick, bash them with the base of a saucepan or a rolling pin to make them thinner, as you want them to cook quite quickly to stop the sweet glaze from burning.
  • Mix the ketchup, vinegar, honey and garlic in a shallow dish, then add the steaks and turn them until well coated. Cook now, or set aside to marinate in the fridge for up to 24 hours. Heat a griddle pan and cook the steaks for about 3-4 mins each side.
  • Mix all the ingredients for the slaw with some seasoning. Serve the pork and slaw with a baked potato.

JOHN'S BAKED PORK CHOPS STUFFED WITH SMOKED GOUDA AND BACON

John's Baked Pork Chops Stuffed with Smoked Gouda and Bacon image

It was too rainy to grill so I prepared a baked version using boneless center-cut pork chops. I breaded the chops and added a baked apple garnish for flair. We were very pleased by the outcome. I used the fat line as marker for making the cuts for the stuffing. We like our pork well done so cooking time may vary according to your tastes.

Provided by jckane59

Categories     Main Dish Recipes     Pork     Pork Chop Recipes     Stuffed

Time 1h

Yield 2

Number Of Ingredients 13

2 ounces smoked Gouda cheese, shredded
4 slices cooked bacon, crumbled
¼ cup chopped fresh parsley
⅛ teaspoon ground black pepper
2 (2 1/4-inch thick) center-cut boneless pork chops
1 teaspoon olive oil
1 egg
1 cup bread crumbs
¼ teaspoon salt
ground black pepper to taste
1 apple, cored
1 green onion
2 pieces red grapes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine Gouda cheese, bacon, parsley, and 1/8 teaspoon black pepper together in a bowl.
  • Cut each pork chop from one side through the middle horizontally to within 1/2 inch of the other side. Open the two sides and spread them out like an open book. Stuff cheese mixture into each pocket and close; secure with a wooden toothpick. Coat each stuffed pork chop with olive oil.
  • Whisk egg in a bowl. Mix bread crumbs, salt, and black pepper to taste together in a separate bowl. Carefully dip each stuffed pork chop in the egg; press chop into bread crumb mixture until evenly coated. Place breaded pork chops in a 9x13-inch casserole dish.
  • Bake in preheated oven until no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Garnish pork chops with cored apple, green onion, and red grapes.
