Halved jalapeños stuffed with cream cheese, shredded cheese, paprika, and garlic and wrapped up with crispy bacon. If you like spicy, you will love these!

12 fresh jalapeño peppers*
8 ounces cream cheese, softened to room temperature
1 cup shredded cheddar cheese*
1 clove garlic, chopped
1/2 teaspoon smoked paprika
12 slices bacon, cut in half
24 toothpicks

Steps:

  • Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper (best for clean-up) or a silicone baking mat. Place a baking rack on top of the baking sheet. Set aside.
  • Cut the jalapeño peppers in half lengthwise; remove seeds and center membrane. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. You could also do this by hand using a rubber spatula. Salt to taste - I add just a pinch. Spoon filling equally among all 24 jalapeño halves.
  • Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place. Place each on the baking rack and bake for 25-28 minutes or until the bacon is crisp to your liking. I like to turn the oven to broil for the last minute or two to get things extra crispy. Serve immediately. Cover leftovers and keep in the refrigerator for up to 4 days.

This recipe is always a crowd favorite. I got the original from food network with a slight modification. You can play with the ingredients to suit your taste. Enjoy!

12 -24 large jalapeno peppers (as large as possible)
16 ounces cream cheese, room temp. (2 packages Philadelphia works best)
4 large garlic cloves, minced
1/4 cup finely chopped sun-dried tomato
2 tablespoons finely chopped fresh cilantro
1/2 teaspoon coarse sea salt (to taste)
1 lb bacon
toothpick, soaked for about 15 minutes in water

Steps:

  • Mix cream cheese, garlic, sundried tomatoes, cilantro and salt until well blended. You can now set the mixture aside or even freeze for up to a couple of months in a freezer bag.
  • You'll want to wear some kitchen gloves for this step! Slice the jalapeños lengthwise, being careful not to slice them in half. Then slice at the top along the width of the pepper just about a quarter inch below the base of the stem until you cut through the core, again being careful not to cut completely through the pepper (This step will probably take some practice). Now you need to decide whether you want to keep the seed webbing for those that like it really hot, or remove them for a lot less heat. I like to do about half and half so that you can please everyone. Anyway, if removing the seeds, gently remove the core using a paring knife by spreading the pepper carefully, you may need to shake some of the remaining seeds out.
  • Separate the strips of bacon and cook in the microwave for about 5 minutes on high, just enough to give it a head start. Then pat dry with paper towels. Just to soak up some of the grease. Set it aside to cool.
  • Fill either a pastry bag or just a freezer bag (cutting one corner out), and pipe some of the filling into each pepper until full but still able to almost close the pepper.
  • Wrap each pepper with a strip of bacon then use two or three toothpicks to secure the pepper closed.
  • Place the jalapeños on a medium heat grill and cook until the bacon is crisp. you'll need to turn frequently to heat them evenly. you may even want to use foil to prevent the mess. I find that by cooking the bacon a little first and not over filling that you'll get minimal mess however.
  • Let them sit for about 5 to 10 minutes and serve them up! Don't forget which ones have the seeds!

12 jalapeno peppers
½ (8 ounce) package pepper Jack cheese (such as Tillamook®)
12 slices bacon

Steps:

  • Slice caps off the jalapeno peppers; reserve. Core and seed the peppers.
  • Cut pepper Jack cheese into 1/4-inch-thick slices. Cut each slice into sticks the thickness of a pencil. Stuff jalapeno peppers with as many cheese sticks as will fit. Secure caps back on the jalapenos, using at least 2 toothpicks per pepper.
  • Wrap 1 slice bacon around each jalapeno pepper. Keep bacon secure by skewering the end on one of the toothpicks.
  • Preheat grill for medium heat and lightly oil the grate. Grill jalapeno peppers, watching for flare-ups, until bacon is browned, about 20 minutes.

Delicious stuffed jalapeno recipe I got from my sister. Great for parties, especially barbecues. You can cook either in the oven or on the grill, but I prefer the grill. You can also substitute Anaheim peppers for a little less heat.

30 jalapeno peppers (or Anaheim peppers)
2 (16 ounce) packages bacon
16 ounces cream cheese, softened
2 cups sun-dried tomatoes, chopped (out of a jar is fine, they don't have to be fresh)
1 tablespoon garlic powder

Steps:

  • Wash and remove the seeds of the jalapenos by making a "T" cut in the jalapenos and scooping out the seeds. (A "T" cut is where you cut the pepper horizontal about half way and then in the middle of the slit, you cut a vertical slit forming a "T" cut in the pepper.).
  • In a bowl, combine cream cheese, sun dried tomatoes, and garlic powder. Using a teaspoon "stuff" the jalapeno with the cream cheese mixture.
  • Wrap jalapeno in bacon and secure with a toothpick. (If you are cooking on the grill remember to soak toothpick in water for 15 minutes before securing pepper with it, to ensure it doesn't catch fire on the grill).
  • Cook on the grill or bake at 450° F for 15 minutes or until bacon is cooked through.
  • Enjoy!

20 jalapenos
1 (8 ounce) package cream cheese
1 lb bacon

Steps:

  • Wash Jalapenos then cut off top.
  • Cut the Jalapenos length wise in half and take out seeds until hollow.
  • Take room temp cream cheese and fill the Jalapenos.
  • Cut Bacon in half.
  • Wrap bacon around Jalapenos.
  • Lay bacon wrapped Jalapenos on sprayed baking sheet.
  • Bake for 45 minutes on 375.
  • Drain on paper towel and ENJOY!
  • Note: Make sure when wrapping the bacon around that you end with bacon on bottom, if not they will unwrap.

2 whole jalapenos, roasted, skinless, cut in half and deseeded
4 chicken breast halves, boneless and skinless (about 4 ounces each)
garlic salt
fresh cracked pepper
4 ounces monterey jack cheese or 4 ounces gouda cheese, cut into 4 pieces
4 slices bacon

Steps:

  • Flatten chicken breasts to approx 1/4" thickness. Season both sides of chicken with garlic salt and pepper.
  • Divide and place sliced smoked jalapenos on each breast with cheese. Fold over the chicken and secure with a tooth pick or two. Then wrap each chicken breast with bacon.
  • Brown rolls over medium heat until bacon just begins to crisp. Place on a baking sheet and bake in a 350 degree oven for 20 minutes.
  • Grilling Method: Skip step #3. Grill on all sides until chicken and bacon are cooked through, being careful because the cheese will melt and seep out. Watch for flare ups from bacon fat.
