MAC & CHEESE STUFFED BBQ MEATLOAF

3 lb lean ground beef
2 c bbq sauce
2 tsp granulated garic
1 tsp cumin
1 tsp black pepper
2 tsp mrs. dash original
salt, opt.
1/2 c onions, finely chopped
2 eggs
1 c crushed cracker crumbs
4-8 slice paper thin ham (depends on size of ham)
2 - 3 c prepared mac & cheese (your fav recipe)
8 slice bacon, cut in half

Steps:

  • 1. Prepare your favorite mac and cheese recipe. Let cool.

  • 3. Mix meat, spices and 1 c. bbq sauce together with 2 eggs and 1 c. crushed crackers. Pat down into a rectange shape. Place ham slices on leaving about 2 inches around all sides.
  • 4. Place mac & cheese in center of ham. Using foil as a tool, roll up into a log. Seal ends.
  • 5. Using the foil, left and place on a bakers rack or in a pan. Brush outside of meatloaf with bbq sauce.
  • 6. Place bacon halves on top of loaf. Place a pc. of foil loosely on top and bake for one hr. check temp with meat thememoter, cook a few minutes longer is needed.

It's your basic meatloaf but kicked up! My husband hates meatloaf but when I make this he can't get enough!

1 1/2 lbs ground beef
26 -28 ounces spaghetti sauce, ragu chunky garden style is what I recommend
1 egg
1/4 cup plain breadcrumbs
2 cups of shredded mozzarella cheese
1 tablespoon finely chopped fresh parsley
salt and pepper, however much desired
wax paper

Steps:

  • Preheat oven to 350°F.
  • In large bowl mix beef, 1/3 cup of sauce,egg, and bread crumbs.
  • Season with salt and pepper.
  • Roll out wax paper on table and flatten mixture on it.
  • Shape into a rectangle.
  • Sprinkle 1 1/2 cups of cheese and parsley down center leaving 3/4 inch border.
  • Then roll the meatloaf like a jelly roll tightly and be sure when rolling to pull the wax paper off.
  • Press and seal the ends closed put in to pan.
  • Bake uncovered 45 minutes. Pour remaining sauce and cheese on top and bake an additional 15 minutes or until cheese is melted.

1 c bread crumbs
2 c cheese, shredded
2 eggs
1 large sweet onion, chopped
1 c barbecue sauce, divided use
1 Tbsp worcestershire sauce
3/4 tsp salt
1/2 tsp pepper

Steps:

  • 1. Preheat the oven to 350°F
  • 2. In a skillet, saute the onion until lightly browned, about 5 minutes.
  • 3. In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, cheese, eggs, sauteed onion, 1/2 cup of the barbeque sauce, worcestershire sauce, salt, and pepper
  • 4. Shape the mixture into a loaf and place in a large 2" deep baking pan. Spread the top of the loaf with the remaining 1/2 cup of barbeque sauce.
  • 5. Bake until the loaf is firm, 60 to 75 minutes, or until done. Let the meatloaf stand in the baking dish for 10 minutes, then cut into slices to serve.

Steps:

  • Combine ground beef, one cup spaghetti sauce, eggs, breadcrumbs, onion, parsley, salt and pepper.
  • Mix well.
  • Divide meat mixture into thirds.
  • Spread 1/3 in the bottom of an ungreased 9x5 inch loaf pan.
  • Cover with half of the Mozzarella cheese.
  • Repeat layers, ending with meat.
  • Bake at 350 degrees Fahrenheit for 30 minutes.
  • Spread meatloaf with reserved sauce.
  • Bake for an additional 30 minutes.

2 pounds lean ground beef
2 eggs, beaten
3/4 cup crushed Ritz crackers, about 17 crackers
1 1/2 cups sweet and tangy barbecue sauce, divided use
4 oz cheddar cheese, sliced into 1/4 inch pieces.

Steps:

  • Place ground beef in a large mixing bowl, add beaten eggs, 1 cup of barbecue sauce and crushed crackers.
  • Mix together until well combined.
  • To cook direct on the grill: line a pan with parchment paper or butcher paper. Pour mixture onto paper and form into a loaf. Alternately: Form meatloaf on a grill pan that you can just set on the grill.
  • Make an indent in the center of the loaf and fill with cheese. Press meat mixture together, sealing over cheese.
  • Prepare a grill or smoker to 300° with hickory wood.
  • Fold paper into a roll over meatloaf. Gently unroll onto grill or if using grill pan, place over indirect fire.
  • Close the lid and cook 30 minutes.
  • Brush meatloaf over top and sides with remaining barbecue sauce.
  • Continue to cook with the lid closed until internal temperature reaches 160°, about 15 minutes.
  • Carefully remove from grill and allow meatloaf to rest 10 minutes before slicing and serving.

My family loves meatloaf but this is the one we come back to time and time again - it truly is delicious!

3 lbs ground beef
3 cups oatmeal
2 (2 1/2 ounce) packets Lipton Onion Soup Mix
4 eggs
2 cups shredded cheese, of your choice
1 (8 ounce) bottle barbecue sauce

Steps:

  • Combine the beef, oatmeal, onion soup and eggs until well mixed.
  • Take half of the mixture and form into an oval in the bottom of a roaster.
  • Sprinkle with the cheese.
  • Form the rest of the beef mixture into and oval and press over the top, pressing the edges together to seal.
  • Pour the barbecue sauce over the top, just enough to cover.
  • Bake covered at 350°F for 1 hour and 15 minutes. Uncover and bake for an additional 30 minutes.
  • Note: For a quick and easy side I put baby carrots and cut up red potatoes along the side of the meatloaf and let them all bake at the same time.

6 cheese sticks (or more if desired)
1/4 cup bread crumbs (optional)
1 small onion (grated)
1/4 cup ketchup
1 1/2 tsp salt

Steps:

  • Preheat the oven to 375F.
  • Line the baking sheet with foil or parchment paper.
  • In a bowl, mix the ground meat, bread crumbs, grated onion, salt and pepper.
  • Put half of the meat mixture on a baking sheet and shape into a loaf.
  • Put the cheese sticks on top of the meat mixture.

Steps:

  • Heat oven to 375ºF.
  • Mix ground beef, cracker crumbs, eggs, onions, garlic, pepper and 1/4 cup barbecue sauce just until blended.
  • Place meat mixture into 11x8-1/2-inch rectangle on sheet of waxed paper; top with ham and cheese, spreading ingredients to within 1-1/2 inches of edges. 1 lb ground beef (or any meatloaf mix you like!)
2 eggs
1/2 cup breadcrumbs
2 tablespoons italian seasoning
1/4 cup chili sauce
2 teaspoons salt
2 teaspoons pepper
2 teaspoons garlic (powder or salt)
1/4 cup chopped onion
8 -12 ounces cooper sharp cheese (I like the sharp cheeses, alter depending on your own taste)
1 frozen chopped spinach
1 (8 ounce) can tomato paste

Steps:

  • Preheat Oven to 350 degrees.
  • Mix meatloaf ingredients in a large bowl.
  • Flatten meatloaf mix on a piece of wax paper, mix should be in a rectangle shape about 1/2 thick in wax paper.
  • Cut cheese in thin slices and place on top of meatloaf mix (being sure to leave about a 1/2 inch without cheese around perimeter).
  • Microwave frozen spinach according to package information, then drain.
  • Place spinach on top of cheese making sure to leave perimeter empty.
  • Take on side of wax paper and roll meatloaf carefully, being sure not to let meatloaf crack while rolling.
  • After you have rolled the meatloaf pinch the edges to ensure that the cheese/spinach does not leak out while cooking.
  • Cover entire meatloaf with the can of tomato paste. (You may want to add some italian seasoning to the tomato paste as it is slightly bland).
  • Bake covered for about 35 - 45 minutes or until desired temperature.
