SAUSAGE STUFFING BALLS
This baked sausage ball recipe was given to me by my cousin. They are appetizers, but they also make great meatballs.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, mix herb-seasoned dry bread stuffing mix with hot water. Gradually mix in pork until blended with the stuffing mix. Stir in onion, celery, egg and baking powder.
- Shape the mixture into 1 inch balls. Place the balls on a large baking sheet, cover with foil and bake in the preheated oven 15 minutes.
- Remove foil. Raise oven temperature to 350 degrees F (175 degrees C). Continue baking 25 minutes, until golden brown.

This reinterpretation of meatballs combines breakfast sausage, cheddar cheese, and onion for a very flavorful holiday appetizer, enough for a crowd of hungry folks.

- Preheat oven to 400 degrees. In a large bowl, whisk together flour, salt, pepper, cayenne pepper, and baking powder. Add cheddar and toss to coat. Add sausage, onion, and butter. With your hands, mix until well combined and roll mixture into 1-inch balls. Place balls, 1/2 inch apart, on a parchment-lined baking sheet. Bake until balls are golden and cooked through, 25 minutes. Serve warm.

CHEESY SAUSAGE AND SAGE STUFFING
This holiday-worthy recipe was inspired by bread pudding and ended up somewhere between a strata, a gratin, and a traditional Thanksgiving stuffing.

Steps:
- Preheat oven to 300°F. Butter a shallow 13x9" baking dish and a large piece of foil. Place 9 cups bread in a large bowl.
- Heat oil in a large skillet over medium-high. Cook sausage, stirring occasionally and breaking into small pieces with a wooden spoon, until browned and cooked through, 7-10 minutes. Transfer to bowl with bread.
- Place onions, celery, sage, and 2 Tbsp. butter in same skillet; season with salt and pepper. Cook, stirring often, until onions are golden brown and soft, 10-12 minutes. Add wine and cook, stirring occasionally, until almost completely evaporated, about 5 minutes; scrape into bowl with bread and sausage.
- Whisk eggs and broth in a medium bowl until smooth, then pour over bread mixture. Pour in half-and-half and add 3 cups cheese; toss to combine. Season with salt and pepper. Transfer to prepared baking dish and cover with foil, buttered side down. Bake until a paring knife inserted into the center comes out hot, 40-50 minutes .
- Heat broiler. Uncover stuffing and top with remaining cheese. Broil until top is golden and bubbling, about 4 minutes. Let sit at least 10 minutes and up to 30 before serving.
- Do Ahead
- Stuffing can be assembled 1 day ahead; cover with foil and chill. Stuffing can be baked (but not broiled) 3 hours ahead. Store tightly wrapped at room temperature until ready to broil.
CHEESY SAUSAGE-STUFFED SHELLS

- Cook pasta shells according to package directions. Meanwhile, in a large saucepan, cook sausage over medium heat until no longer pink; drain. Set half of the sausage aside for filling. , Add tomato sauce, tomato paste, water, brown sugar and Italian seasoning to remaining sausage. Bring to a boil. Reduce heat; simmer, uncovered, 15 minutes, stirring occasionally., Preheat oven to 350°. Drain pasta. In a large bowl, combine cottage cheese, 1 cup mozzarella, egg, parsley and reserved sausage. Stuff into shells. , Spread 1/2 cup meat sauce into an ungreased shallow 2-qt. baking dish. Arrange stuffed shells in dish; drizzle with remaining meat sauce. Sprinkle with remaining mozzarella and Parmesan if desired. , Bake, uncovered, 25-30 minutes or until bubbly.

STUFFING BITES RECIPE BY TASTY

Steps:
- Cook sausage in a skillet over medium heat. Add onion after 1-2 minutes and cook until sausage is cooked and onion is tender.
- Remove sausage from heat and transfer to a large mixing bowl and let cool.
- Add remaining ingredients to the bowl and mix until thoroughly incorporated.
- Using a large spoon or ice cream scoop, measure out mixture into 8 evenly sized balls and space them out on a parchment paper lined baking sheet.
- Bake at 350˚F (180˚C) for 20 minutes or until bites are cooked and slightly browned on top.

These are great as an appetizer! Someone brought these to a pot luck and everyone couldn't get over how good they were! You can serve them with chili or BBQ sauce or they are just as delicious plain.

- Heat oven to 350. Lightly grease bottom & sides of Jelly Roll pan (15 1/2 x 10 1/2 x 2 x 1-inch).
- Stir together all ingredients.
- Shape into 1-inch balls. Place in pan.
- Bake 20-25 minutes until brown. Immediately remove from pan. Serve with sauce--BBQ or chili (they are great served plain as well).

SAUSAGE STUFFING CREAM CHEESE BITES
Steps:
- Heat oven to 400°F.
- Remove puff pastry from the freezer and allow it to thaw for about 15 min. until you can unfold it without breaking. (Make sure you don't let it get too warm.)
- Prepare the STOVE TOP Stuffing according to instructions on box and set aside. In a skillet on stove top, cook sausage until browned and crumbled, set aside.
- In a large bowl with a hand mixer or stand mixer fitted with paddle attachment, mix together cream cheese and 1 egg until creamed together and smooth. Stir in cooked sausage until fully incorporated. Gently fold in stuffing with a spatula.
- Unfold the puff pastry sheets, roll out each sheet and cut into 12 squares. (The squares don't have to be perfect but each should be about 3-1/2-inch square.) Press 1 square on bottom and up side of each of 24 nonstick muffin pan cups. In a small bowl, whisk the remaining egg with a fork to create an egg wash. Brush the egg wash over the puff pastry, especially the edges. (This will give the pastry a darker golden finish. If you don't use an egg wash that is fine, you'll just get a paler finish.)
- Using a cookie scoop, divide the sausage-cream cheese mixture among the puff pastry cups, using 2 heaping teaspoons of filling per cup. Bake for 12 to 15 min. or until the puff pastry is golden brown. Top with a dollop of cranberry sauce, or serve it on the side. Serve immediately.
