2 tablespoons extra-virgin olive oil
1 ounce Italian salami, finely diced, or pulsed in a food processor
4 cloves garlic, minced
1 28-ounce can San Marzano plum tomatoes, drained, juices reserved
5 or 6 fresh basil leaves, plus more for garnish
Pinch of sugar
Kosher salt and freshly ground pepper
1 1/2 pounds frozen spinach-and-cheese ravioli
1 ounce ricotta salata or parmesan cheese, grated

Steps:

  • Bring a large pot of water to a boil. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the salami and garlic and cook, about 1 minute. Crush the tomatoes into the pan with your hands and cook until slightly dry, about 5 minutes. Add the reserved tomato juice, basil, sugar, and salt and pepper to taste. Increase the heat to high and cook until the sauce thickens, about 5 minutes. Stir in 3/4 cup water and reduce the heat to medium-low. Let simmer while you cook the ravioli.
  • Add salt to the boiling water, then add the ravioli and cook as the label directs; drain. Divide the ravioli among shallow bowls, spoon the sauce on top and sprinkle with the cheese. Garnish with more basil.

Steps:

  • Heat oven to 400°. Cook and drain ravioli as directed on package.

2 heirloom tomatoes, sliced
1 cup cherry tomatoes
4 cloves garlic, minced or grated
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
large handful fresh basil, roughly chopped
4 sprigs fresh thyme
1 pinch crushed red pepper flakes
kosher salt and pepper
3 medium zucchini or summer squash
kosher salt and pepper
1 cup whole milk ricotta cheese
1/2 cup crumbled feta cheese
1/2 cup grated parmesan cheese
2 tablespoons chopped fresh basil

Steps:

  • Preheat the oven to 425 degrees F.In a baking dish, layer the tomato slices, garlic, and cherry tomatoes. Add the olive oil, balsamic vinegar, basil, thyme, crushed red pepper, and a pinch each of salt and pepper. Toss lightly to combine. Bake for 15 minutes or until the tomatoes begin to burst. Meanwhile, make the ravioli. Using a mandolin or vegetable peeler, peel the zucchini into 1/4 inch wide strips and lay them flat on a paper towel lined counter. Sprinkle the zucchini with salt. In a medium bowl, combine the cheeses, basil, and a pinch each of salt and pepper. Grab 4 zucchini "noodles" and layer them to make a star. Start with 1 noodle, then add another to make a X. Now make another X with the remaining 2 noodles that will overlap with the current X (see above photo). Spoon about 1 tablespoon of filling onto the center of the zucchini. Bring the ends of the zucchini together, laying them over the cheese. Repeat with remaining zucchini and filling. Remove the tomatoes from the oven and lay the ravioli seam side down in the sauce. Drizzle the ravioli lightly with olive oil and season with salt and pepper. Bake for 15 minutes or until the ravioli is warmed though. Serve with fresh basil and grated parmesan. Enjoy!

3 large eggs
6 egg yolks
3 cups flour
A pinch of salt

1 (16-ounce) container ricotta
1 cup grated Parmesan
Salt and black pepper to taste
2 egg yolks (set the whites aside)
Fresh tomato sauce

Steps:

  • Make the pasta dough:
  • Combine the ingredients in a food processor. Process until the dough mixture leaves the sides of the bowl. Remove to a mixing bowl and knead by hand for a few minutes until smooth. (If the dough is too dry, add a few drops of water.) Divide into 4 equal parts and shape them into discs. Wrap in plastic wrap and let rest for 1 hour.
  • Make the ravioli filling
  • Put the cheeses, salt, and pepper in a blender and pulse. Add the egg yolks and pulse until incorporated.
  • Make the ravioli
  • Roll the discs of dough into thin sheets in a pasta machine. Arrange tablespoon-size dollops of the filling 1 1/2 inches apart on one of the sheets. Brush a little egg white around each dollop, then place another sheet directly on top. Gently press around the filling to remove any air pockets and seal the sheets. Using a ravioli cutter or a knife, cut out ravioli squares. Sprinkle with flour to prevent the dough from sticking.
  • Cooking the ravioli
  • Cook the ravioli in plenty of boiling salted water until they float to the top, 3 to 4 minutes. Drain well and toss with the Fresh tomato sauce . Garnish with the remaining chopped basil and serve immediately.

4 cloves garlic, minced
½ teaspoon onion powder
1 teaspoon Italian seasoning
1 tablespoon fresh lemon juice
¼ cup chicken stock (or vegetable, see notes)
1 cup EACH: heavy cream AND fresh baby spinach (packed)
2 (9-10 ounce) package of ravioli (see notes)
⅓ cup sun-dried tomatoes, packed in oil (reserve 1 tablespoon oil)
Freshly grated parmesan cheese + basil, for topping

Steps:

  • BOIL: Bring a large pot of water to boil. Salt the water liberally, then add the ravioli and cook for 1 minute less than package directions, drain and set aside.
  • SAUCE: Start on the sauce while the ravioli is boiling. Add the butter and the 1 tablespoon of sun-dried tomato oil to a large sauté pan over medium heat. Once melted, add the garlic and allow for it to cook for 30 seconds or until fragrant. Add the onion powder, Italian seasoning, lemon juice, chicken stock, heavy cream, and sun-dried tomatoes to the skillet and allow for it to become smooth and heat through; about 1-2 minutes.
  • FINISH: When the ravioli is done, add it to the prepared sauce, stir to combine. The sauce should thicken significantly once the ravioli sits for a minute. Top with spinach, basil, and cover the pan and allow for it to just wilt. Once wilted, stir to combine and top with freshly grated parmesan before serving!

1 red onion (finely chopped)
2 garlic cloves (crushed)
2 cups cherry tomatoes (quartered)
1/2 cup water/stock
1 tablespoon Balsamic vinegar
1 teaspoon sugar (optional)
salt & pepper to taste
500 g ready-made (shop-bought ravioli (I used a butternut-filled ravioli))
150 g mozzarella (thinly sliced)
fresh basil leaves (for garnish)

Steps:

  • Pre-heat the oven to 200°c
  • To make the sauce, fry the onion and garlic in a splash of olive oil until soft and translucent then add the tomatoes, stock, Balsamic and sugar.
  • Bring the sauce to a simmer then reduce the heat and allow to simmer for 10 minutes until reduced and thickened slightly. Season to taste.
  • In the meantime, blanche the ravioli in plenty of salted water for a minute then drain and set aside.
  • To assemble the bake, layer the blanched ravioli with the tomato sauce and sliced mozzarella.
  • Place in the oven and bake for 10-15 minutes until golden and bubbling.
  • Remove from the oven once baked and allow to cool for 5 minutes.
  • Garnish with fresh basil and serve.

3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound cherry tomatoes
2 shallots (cut into wedges)
16 ounces ravioli (I used cheese and spinach)
2 tablespoons chopped fresh basil (or more to taste)
salt and pepper to taste
olive oil to taste
Parmesan cheese (to garnish, optional)

Steps:

  • Preheat oven to 425°.
  • In a large bowl, combine the 3 tablespoons of olive oil with the balsamic vinegar, salt, and pepper.
  • Halve half of the cherry tomatoes. Add the whole and halved tomatoes to the bowl, along with the wedged shallots. Toss to coat.
  • Line a large jelly-roll pan with tin-foil. Arrange the cut tomatoes, whole tomatoes, and shallots on top. Drizzle with any remaining oil/vinegar. Bake at 425° for 30-35 minutes, or until tomatoes are wrinkly and soft.
  • Cook ravioli according to package directions. Add plenty of salt to the water, even if it doesn't call for it. You want the salt to taste like the ocean.
