Cheese pie, pita sirnica or cheese burek is a great flaky pie with a rich egg and cheese filling.

- Filling: In a large bowl, combine filling ingredients. Whisk until ingredients are completely integrated. Heat oven to 390°F (200°C).
- Assembly: Grease a baking pan. Layer one phyllo sheet on the bottom of the pan. Brush a thin layer of (butter and oil) coating over the sheet. Add another sheet of phyllo on top of the first one and repeat the coating.
- Grab a generous amount of filling (about 4 tablespoons), and spread evenly over the top sheet. Layer two sheets on top of the filling, coating each before adding the next layer (just like in step two). (If phyllo is larger than the pan, you can fold, crumple or cut it until it fits.) Top with the filling again and spread it evenly. Repeat phyllo, coating and filling layers until you run out ingredients. Make sure the last, top, pie layer has at least 2-3 sheets of phyllo. Brush it with coating last time and put the pan in the oven.
- Bake 15 min. Rotate the pan and continue baking another 15-20 minutes. Monitor the pie so it doesn't blush too much (or burn). If it blushes too much lower the temperature to 360°F (180°C) or cover with foil.
- Topping: In a small pan combine milk and butter. Warm up the milk just until the butter melts. Take the cheese pie out of the oven. Using a teaspoon distribute the topping evenly over the pie. Turn the oven off and return the pie inside for a few minutes.
- Serve 20-30 minutes (an hour is even better!) after baking. Store in a cool place (outside) for up to a day. Transfer to the fridge for up to 2-3 days. (Cover in plastic wrap.) Use your favorite reheating method, or eat cold. Do not freeze.

- Heat oil in a saucepan at medium heat.
- Add onion and ground beef, cook on until onion is softened and the beef is browned.
- Add garlic and cook for 1 minute more.
- Add tomatoes and tomato paste and cook for 10 to 15 mins until sauce thickens.
- Stir in oregano, season with salt and pepper and set aside to cool.
- Heat oven to 400°F.
- Brush 1 sheet of phyllo with butter, top with a second buttered sheet and place a third sheet on top. Cut in half. Repeat with remaining phyllo to make four pies, of three layers each.
- Add 1/4 Cup cheese and about 3/4 Cup of beef mixture on the centre of each phyllo section, top with cheese.
- Fold/roll edges over, to enclose, and brush tops with butter.
- Place on a baking tray.
- Bake for 20 to 25 minutes or until golden brown.
- Devour.

- If you choose to prepare this Greek tiropita recipe with commercial phyllo dough, it is important to thaw completely the phyllo dough by putting it in the fridge from the previous day. For the beginners at working with phyllo, check the handling tips before starting.
- Prepare the filling for the tiropita. This traditional tiropita recipe, calls for three different kind of cheese for extra flavour! Use a fork to crumble the feta cheese into a large bowl and add the beaten eggs along with the rest of the grated cheese and heavy cream. Chop some fresh mint and add to the mixture. Season with freshly ground pepper and blend well with a spoon. Place the mixture in the refrigerator for 20-30 minutes.
- For this tiropita recipe you will need a large baking tray, approx. 20*30 cm. Using a pastry brush, butter the bottom and sides of the tray. Place one sheet of phyllo at the bottom of the pan and with a cooking brush sprinkle some olive oil or melted butter. Repeat the procedure, adding 4-5 more sheets of phyllo dough. You will use 5-6 phyllo sheets for the bottom of the tiropita.
- Pour in the feta cheese mixture and smooth with a spatula. With a knife trim some of the excessive phyllo, and fold the excess phyllo sheets flaps over the mixture. Top the tiropita with 4-5 more phyllo sheets, making sure to oil or butter each one, before adding the other; roll in the edges. Brush the top with oil or butter, sprinkle with water and sesame seeds. If using commercial phyllo dough to make this tiropita recipe make sure to scar the top with a sharp knife, to help release the steam.
- Bake the tiropita in a preheated oven at 180C for 45-50 minutes, until the phyllo is crisp and golden. Let it cool down for a while before serving. Enjoy!

- For the spinach and cheese mixture: Preheat the oven to 375 degrees F. Grease a 13-by-9-inch baking dish with cooking spray or butter.
- In a large dry skillet over medium heat, lightly toast the pine nuts. Remove and reserve. In the same skillet, melt the butter with the olive oil. Add the onions and saute until translucent, about 10 minutes. Add the garlic and saute 2 to 3 minutes. Stir in the spinach. Cook until tender and any excess water evaporates, about 5 minutes. - Preheat oven to 350* F.
- Melt the butter in a small saucepan over medium heat.
- Brush 2 sheets of phyllo with the melted butter and spread them gently in the pan, one at a time. The phyllo I use is purposely larger than my baking pan, so I can let the phyllo edges hang outside the pan as I will roll them over later. Take another 2 sheets and repeat the same process adding the phyllo so that the edges cover the rest of the pan. Make sure the phyllo edges are buttered as well. That way, they won't get dry by the time you roll them in.
- In a large bowl, mix well the crumbled feta, grated cheeses, Philadelphia, thyme, the eggs, and salt and pepper to taste.
- Divide the phyllo pack in half and set one half aside, covered with a damp towel, so it does not get dry. Brush one phyllo at a time with butter, crumple it and place in the pan. Repeat the process until all of the sheets of that half of the pack are done.
- Spread the cheeses mix evenly in the pan. Setting two phyllo sheets aside cover with the remaining half of the package in the same process as before. Brush with butter, crumple, and add to the pan.
- Cover pie with the two buttered phyllo sheets. Gently bring all the phyllo edges into the pan, fold them, almost creating a "phyllo border."
- Score gently with a sharp knife.
- Pour the milk evenly all over the pie. Sprinkle with the sesame seeds.
- Cover with aluminum foil and bake for 10 minutes. Uncover and bake for 30 min or until cooked through, and the top is golden brown.

- In a medium mixing bowl combine cream cheese, sugar, egg, and vanilla extract. Beat until light and fluffy. Set aside.
- Remove thawed phyllo from package and unroll. Keep stack covered with a damp towel at all times to prevent drying out and tearing. - Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round cake pans.
- Mix feta cheese and eggs together in a bowl for the filling; set aside.
- Lay out 1 sheet of phyllo on a work surface and brush liberally with olive oil. Top with another sheet and brush with oil. - Preheat the oven to 375 degrees (190 C).
- Lightly brush a 10 or 11 inch round baking dish with the butter.
- Melt the 2 tablespoons of butter in a saucepan.
- Add the flour and stir until bubbly (2 to 3 minutes).
- Stir in the milk and simmer, stirring, until thickened.

" BUREK" OR FETA CHEESE PHYLLO PIE
Ok, there are different version of BUREK (some eastern Europeans even Greeks) roll a fresh dough and then spend more time rolling, folding and waiting. But if you're like me and my mom, use phyllo! It's quick and you can always keep it in the freezer. I remember while I was growing up and my mom would make this every Sunday! The smell alone coming from our kitchen used to make me come running home. Please excuse the directions, but the recipe doesn't really have measurements or written directions! This is an old recipe and no one ever wrote it down.

- FIRST - Let me explain the Feta. We have an Italian Market that sells fresh fruits and veggies etc. and they have a fresh cheese section. I always buy a block of French Feta Cheese. I use half for this recipe and the rest for omelets etc. You can use the prepacked Feta but if you want the full experience you'll need a lot. Also, you may use other variety of Feta (there's Hungarian, Bulgarian even a salt free one) The French is very salty which is why I add cottage cheese. It kind of balances out the saltiness abit. YOU JUST NEED 1 PACKAGE OF PHYLLO. Mine says 32 oz, buy the long box not the country (it's too thick).
- Preheat oven to 350°F.
- In large mixing bowl beat eggs, add 2 cups milk and mix well. Take your block of Feta and cut in half. Use one 1/2 and refrigerate the other. Crumble the Feta into the egg mix and add cottage cheese. Make sure you have nice chunks. Mix well, the mixture should be thick and very lumpy. If too thick add more milk (hence the extra milk).
- Take a large deep baking dish. Sprinkle oil on bottom only (dip your spoon into oil, take out and just drizzle slightly). Lay one sheet phyllo and drizzle with oil, continue until you have 4 sheets. When you add the last sheet place your hand flat on the phyllo sheets and GENTLY gather, without tearing by pulling the sides slightly toward center. (It should resemble a crumpled bed) :).
- Use 1 full Ladle of the egg/feta mixture onto the layer, you don't need to cover all the phyllo (TRUST ME) just don't leave the feta in one spot distribute.
- Layer another phyllo sheet and sprinkle with oil. Layer another sheet of phyllo and again crumple the center then sprinkle the oil (just a little). One Ladle of the egg/feta mix. Continue in this pattern (Don't forget to gather the center each time). If you see that you have alot of the egg/feta mix left you can start to add more than the 1 ladle. Your last layer should be 3-4 layers of phyllo. Don't sprinkle with oil yet. Take a soup spoon and with the handle, tuck in the sides. Now sprinkle with oil.
- Bake for about 30-40 minutes or until the top is puffed and nicely browned.
- Your kitchen with smell wonderful. The Burek will puff high off the top of the pan but once cooled will drop. You must cool completely or you will nto be able to cut with out it falling apart.
- It's moist and a bit salty and goes great with a nice cold beer! You can serve as main meal with salad or as appetizer (cut into small squares).

- Butter a 9 x 13-inch baking dish.
- Combine feta, cottage cheese, salt and eggs. Mix well.

SPINACH AND 3 CHEESE PHYLLO PIE

- Preheat the oven to 180C/350F
- Wash the spinach leaves that have been stripped from the stalk and roughly chop. Drain in a colander.
- Heat a large nonstick frying pan and add a generous splash of olive oil. Fry the onion, leeks, and fennel until translucent over medium / low heat (about 5 minutes). Add the garlic and cook for a further minute or so.
- Add the chopped spinach in parts, wilting it as you go and until you can fit it all into the pan. add the dill, lemon zest, and juice and cook for about 5 - 8 minutes until soft and cooked through. Allow to cool slightly.
- Once cooled, stir through the cream cheese, grated halloumi, Parmesan, chopped parsley, and mint. Adjust seasoning to your taste adding salt and black pepper as required.
- Remove 4 sheets of phyllo from the roll quickly seal the remainder of the pack and either re-freeze or refrigerate until further use (I just refreeze).
- Roughly divide the mixture into 4 parts. Place the first sheet on a work surface with the thinner side at the bottom and spread one-quarter of the mixture along the bottom in a log shape. Lightly brush the whole top side of the sheet with butter. Roll the log of spinach up and place it in a. lined baking pan.
- Repeat with the remaining 3 sheets of phyllo, joining and twirling it into the pan. Allow a little space between the rolls although it should be snug. It does expand slightly when baked. Brush the tops generously with melted butter and sprinkle white and or black sesame seeds over the top.
- Bake for 40 minutes and until golden.
- Serve on its own or with tzatziki.

- To prepare this Greek Feta cheese pie (Tiropita) with phyllo start by buttering the baking dish and preheating the oven to 180c or 356F. Melt the butter and set it aside. Whisk three eggs and set them aside too.
- To prepare the filling, in a mixing bowl, combine crumbled Feta cheese, greek strained yoghurt, melted butter, sunflower oil, whisked eggs and seasoning. Should you wish to taste the seasoning on the filling, do so prior to adding the whisked eggs. Remember that tanginess of Feta differs between brands, and you may wish to add more salt. - Prepare the egg wash by whisking an egg with one tablespoon of water. Pierce the pie evenly and brush with the egg wash. Lay evenly the diced butter on the top phyllo. Bake the Greek Feta cheese pie (Tiropita) with phyllo at 180C (360F) for 55-60 minutes. Cover with foil at around 35 minutes to achieve a nice golden colour.

- In a medium-size skillet, heat oil over medium-high heat. Add onion and cook until golden, about 4 minutes. Transfer to a large bowl.
- Return skillet to the heat. Cook spinach, tossing, about 1 minute or until wilted. Drain spinach and let cool. Press out excess moisture and then roughly chop. Add spinach, beaten egg, feta, and cottage cheese to the bowl with onion and then season with salt and pepper.
- Unroll one package of phyllo. Separate in half (about ten sheets each) and keep covered to prevent drying. Note: do not cover with a damp towel as advised in many recipes because the sheets are thin and delicate and will quickly turn into a mush. Cover them with foil, clear plastic wrap or dry towel. Work quickly to assemble.
