My mom made this cheeseball every Christmas when I was growing up. It is still one of my favorites! I am not sure of the ranch dressing's envelope size. I don't think it comes in multiple sizes though.

8 ounces sour cream
8 ounces cream cheese (softened)
0.5 (8 ounce) envelope ranch dressing mix
1/2 cup chopped pecans

Steps:

  • mix cheddar cheese, sour cream, cream cheese, and ranch dressing mix.
  • chill for 1 hour or until set.
  • roll in chopped pecans.
  • serve with Ritz crackers.

2 cups shredded swiss cheese
2 cups shredded cheddar cheese
1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1/2 cup chopped onion
1 (2 ounce) jar pimiento
2 tablespoons sweet pickle relish
10 slices bacon, crisp-cooked, drained, and crumbled
1/2 cup finely chopped pecans
1 dash salt
1 dash pepper
1/4 cup snipped parsley
1 tablespoon poppy seed
assorted cracker

Steps:

  • Let swiss and cheddar cheeses come to room temperature.
  • In a large bowl beat together cream cheese and sour cream till fluffy.
  • Beat in swiss cheese, cheddar cheese, onion, undrained pimiento, pickle relish, half of the bacon, 1/4 cup of the pecans, salt and pepper.
  • Cover and chill till firm.
  • Shape into 1 large or 2 small balls on wax paper.

A holiday tradition at our house. A food processor makes quick work of the job. You can roll the cheese ball in pecans if you like but we prefer cayenne pepper for that extra kick.

12 ounces sharp cheddar cheese (softened)
8 ounces cream cheese
1/4 teaspoon garlic powder
cayenne pepper

Steps:

  • Insert the metal blade into your food processor and turn it on.
  • Drop chunks of the sharp cheddar cheese into the food processor and process until the cheese is smooth.
  • With the processor still running, add in the cream cheese and mix until you no longer see white streaks.
  • Add the garlic powder and mix.
  • Remove the blade from the bowl and dump the cheese on to a sheet of waxed paper.
  • At this point the cheese ball may be too warm and you may need to refrigerate it for a few minutes before you can shape it.
  • Sprinkle cayenne pepper on a sheet of waxed paper and roll the cheese ball in the cayenne pepper.
