SWEET POTATO CHEESECAKE

1 medium sweet potato
1 loaf pound cake (about 20 thin slices)
3 (8-ounce) packages cream cheese, at room temperature
1 cup granulated sugar
3 eggs
1 cup heavy cream
1 teaspoon lemon extract
2 teaspoons vanilla extract
2 teaspoons ground nutmeg

Steps:

  • Boil the sweet potato until tender, about 20 to 30 minutes. Cool, peel, mash, and set aside. (Should yield about 1 cup).
  • Preheat oven to 350 degrees F. Line 2 (9-inch) pie plates with thin slices of pound cake. Firmly press into bottom of pans. Set aside.
  • In a large bowl, beat cream cheese until fluffy. Gradually add sugar. Mix well. Add eggs, 1 at a time, beating well after each. Pour in cream. Mix well. Add mashed sweet potato. Mix well. Stir in lemon extract, vanilla extract, and nutmeg. Mix well. Pour into lined pans.
  • Bake 45 minutes to 1 hour, or until center is almost set. Remove from the oven and cool at least 1 hour. Remove from pan, if desired, and refrigerate until ready to serve. Garnish as desired.

5 russet potatoes, medium
2 tablespoons all-purpose flour
2 cloves garlic, minced
¼ cup grated parmesan cheese
1 teaspoon salt
½ teaspoon pepper
1 cup heavy cream
3 cups shredded cheddar cheese
3 cups gruyère cheese, shredded
9 slices ham
fresh parsley, chopped, for garnish

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • Using a mandolin or a sharp knife, thinly slice the potatoes lengthwise.
  • In a 13-inch (33-cm) cast iron skillet, layer slices of potatoes around the outside of the pan. Add another layer of potatoes, keeping them centered in the pan and moving clockwise until the pan is covered.
  • Top with a third of the cheddar cheese, a third of the Gruyère cheese, and half of the ham.
  • Add another layer of potato slices around the outside of the pan, then a add layer of slices around the center of the pan. Top with another third of the cheddar and Gruyère and the remaining ham slices.
  • Add a final layer of potato slices around the center of the pan
  • Top with the remaining cheddar and Gruyère cheese.
  • Cover with greased aluminum foil and bake for 40 minutes.
  • Remove the pan from the oven and increase the oven temperature to 400˚F (200˚C).
  • In a medium bowl, combine the flour, garlic, Parmesan, salt, pepper and mix well.
  • Slowly add in the cream, whisking until fully incorporated.
  • Uncover the skillet and pour the cream mixture over potatoes, spreading evenly.
  • Bake for another 10-15 minutes uncovered, until the cheese is melted and golden brown.
  • Cool for at least 30 minutes, then slice and serve.
  • Garnish with fresh parsley.

3 large potatoes, shredded
1 onion, chopped
1 garlic, minced
1 tablespoon olive oil
3/4 cup smoked mozzarella cheese, shredded
salt and pepper
1/4 cup butter

Steps:

  • Shred the potatoes and soak them in water -- changing the water occasionally. Drain well and press out as much moisture into a towel.
  • Heat a small cast iron skillet (or small skillet) until hot. Add olive oil and heat until hot. Add onion and garlic and saute for 5 minutes until golden. Remove to a side plate. (this can be done ahead of time) Reheat the skillet.
  • Add half the butter. Press half the potatoes into the skillet. Sprinkle with salt and pepper. Add onion/garlic mixture. Sprinkle cheese over top then add rest of the potatoes (you may not need the whole amount). Brown for 5 minutes on moderately high heat.
  • Lower heat to medium and cook covered for 5 minutes. Uncover and cook 5 - 8 minutes longer or until surface is dry.
  • Run a spatula under potatoes to check if the pancake is nicely browned. If so, slip a plate over top of skillet and carefully flip over. Melt the remaining butter in the skillet. Slide the potato pancake back onto the skillet and raise the heat to moderate high and brown for 5 minutes. Sprinkle with salt and pepper
  • Check under the potatoes to make sure that the bottom of the pancake is nicely browned. If not, cover and cook until the bottom is browned, approximately 5 minutes more.
  • Remove and cut into 4 wedges.
  • Note: I would not use a large skillet as there is a good chance that you could burn yourself while turning the potatoes over.

Three 10-ounce bricks sharp Cheddar cheese, shredded cold then left at room temperature
1 cup (2 sticks) butter, softened
4 cups sifted all-purpose flour
2 teaspoons salt
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
Dash of garlic powder
Cooking spray

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the softened cheese and butter in the bowl of a heavy-duty electric mixer. Using the heaviest mixer paddle attachment, beat until the mixture has the consistency of whipped cream, 15 to 30 minutes.
  • In a large bowl, sift 3 cups of the flour with the salt, black pepper, cayenne pepper and garlic powder. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the remaining 1 cup unseasoned flour incrementally until the dough is somewhat stiff but still soft enough to be pushed through a cookie press; you may not need to add all the flour.
  • Lightly spray 4 cookie sheets with cooking spray. Put a portion of the dough into a cookie press fitted with the star tube and press the dough onto a cookie sheet in long strips that run the length of the pan. Repeat until the pan is full. Bake until straws are golden brown and crisp, about 20 minutes.
  • With your hands or a sharp knife, break or cut the long strips into 3-inch lengths. Use a flat, thin spatula or an egg turner to remove the cheese strips from the pan. Allow them to cool on a wire rack. When they are completely cool, serve or store in a tightly covered container.

6-ounce piece sharp cheddar cheese
1 1/2 cups all-purpose flour (spooned and leveled), plus more for work surface
8 tablespoons (1 stick) unsalted butter, room temperature
1 teaspoon dry mustard powder
1 teaspoon salt
1/4 teaspoon ground pepper
1/4 teaspoon cayenne pepper

Steps:

  • Preheat oven to 425 degrees. In a food processor fitted with the grating blade, grate cheese. Switch to cutting blade; add flour, butter, mustard powder, salt, ground pepper, and cayenne. Pulse until a dough forms.
  • Transfer dough to a lightly floured work surface; divide into 4 equal pieces. Roll each piece into a rope, about 3/8 inch in diameter and 18 inches long; cut each rope into six 3-inch pieces. Place pieces 1 inch apart on a baking sheet. Drag the tines of a fork down each straw to create ridges.
  • Bake until golden and firm to the touch, 15 to 20 minutes. Transfer to a wire rack to cool completely.

30g salted butter
1 tbsp vegetable oil
2 large onions, halved and finely sliced
½ bunch of thyme, leaves picked
30g plain flour
500ml vegetable stock
1 tbsp wholegrain mustard
1 tbsp white wine vinegar
450g potatoes (we used Maris Piper), cut into 2-3cm chunks
3 apples, peeled, cored and chopped into 1-2cm chunks
150g mature cheddar, grated
300g plain flour, plus extra for dusting
70g cheddar, grated
150g cold butter, cut into cubes
1 egg, beaten

Steps:

  • First, make the pastry. Tip the flour, cheese and a pinch of salt into a large bowl and mix. Add the butter and rub it in using your fingertips until the mixture resembles breadcrumbs. Mix in 4-5 tbsp cold water, and bring together into a dough. Wrap and chill for 30 mins.
  • To make the filling, melt the butter in a medium saucepan over a medium heat, then add the oil and onions and cook for 10-15 mins until caramelised. Add the thyme and fry for 1 min more. Tip in the flour, and stir to combine. Gradually stir in the stock, adding it in small amounts to prevent lumps forming. Bring to a simmer and cook for 10 mins, stirring occasionally. Stir in the mustard and vinegar towards the end of the cooking time.
  • Meanwhile, put the potatoes in a large pan of cold water, bring to the boil and cook for 4-5 mins until just cooked and still holding their shape. Drain well, then stir into the sauce. Add the apples, cheddar and some seasoning, and stir again. Heat the oven to 200C/180C fan/gas 6.
  • Pour the filling into a 28cm oval baking dish (ours was 28 x 18.5 x 6.5cm). While it cools, roll out the pastry on a surface lightly dusted with flour to the thickness of a £1 coin. Cut into strips roughly 1cm wide. Lay half the strips across the dish horizontally, leaving gaps of a few millimetres in-between, then, one by one, weave in the remaining strips vertically, using an over and under technique, also spacing them apart by a few millimetres. Re-roll any trimmings and cut into flowers, leaves, or other shapes to decorate, if you like (see tip, below). Arrange any pastry shapes on top, then brush with the beaten egg.
  • Bake for 50 mins, keeping an eye on it - you may need to cover the top with foil if it's starting to brown too quickly. Leave to cool for at least 10 mins before serving.

This potato cake is a great recipe to build on when seeking to feed a hungry crowd resourcefully, pulling whatever cheese, vegetables or spices might need using up. Here, I've included two variations, one using frozen peas and thyme, and the other using jarred peppers and harissa. You can get as thrifty as you like by making use of what you have: frozen spinach instead of the peas, for example, or some shredded mozzarella to replace the Parmesan. The recipe is yours: Make what you want of it! Serve this potato cake warm with crème fraîche, a squeeze of lemon and a side salad, if you like.

6 large red bliss potatoes (about 2 3/4 pounds/1 1/4 kilograms), scrubbed clean
1/2 cup plus 2 tablespoons/150 milliliters olive oil
16 spring onions or 2 large bunches scallions (about 7 ounces/200 grams), trimmed and thinly sliced (about 2 cups)
6 garlic cloves, peeled and thinly sliced
Kosher salt and black pepper
2/3 cup/160 milliliters heavy cream
3 large eggs plus 1 yolk, beaten
3 ounces/85 grams Parmesan, finely grated
3 tablespoons finely chopped preserved lemon or 1 tablespoon fresh lemon zest
1 teaspoon ground turmeric
5 ounces/140 grams mature Cheddar, roughly grated
7 ounces/200 grams feta (preferably Greek), roughly crumbled
1 cup/200 grams frozen peas, thawed
1 tablespoon chopped fresh thyme leaves, plus a few extra sprigs to garnish
1 (12-ounce) jar roasted red peppers, drained, patted dry and roughly chopped (about 8 ounces/250 grams)
1/2 cup/20 grams roughly chopped fresh cilantro, plus 1 tablespoon for garnish
3 tablespoons harissa paste or 1 teaspoon red-pepper flakes

Steps:

  • Add the potatoes to a large pot and top with enough water to cover by about 1 1/2 inches/4 centimeters. Bring to a boil over medium-high, then lower the heat to medium, cover with a lid and cook until easily pierced with a knife, about 30 minutes. Drain well. Once cool enough to handle, peel the potatoes (saving the skins for another use), and transfer them to a large bowl.
  • While the potatoes are cooking, add half the olive oil to a large (12-inch/30-centimeter) cast-iron skillet or an ovenproof skillet that is at least about 3 inches/8 centimeters deep. Heat over medium. Once hot, add the spring onions and garlic and cook, stirring occasionally, until soft and lightly colored, about 6 minutes. If making with peas, add the peas and thyme; if making with peppers, add the peppers, cilantro and harissa. Add 1/2 teaspoon salt and plenty of pepper, stir to combine and set aside.
  • Heat the oven to 450 degrees Fahrenheit/230 degrees Celsius (non-fan).
  • Add the cream, eggs and yolk, Parmesan, preserved lemon, turmeric, half the Cheddar and 1/2 teaspoon salt to the potatoes in the large bowl. Use a potato masher to break everything down to a rough mash that is still a bit lumpy. Add the feta and the spring onion mixture and fold everything together.
  • Wipe the skillet clean, add the remaining olive oil, then transfer the skillet to the oven for about 5 minutes to heat up. Remove from the oven and carefully add the potato mix. Level the top, sprinkle with the remaining Cheddar and a few sprigs of thyme, if using, in the center and return to the oven.
  • Reduce the oven temperature to 400 degrees Fahrenheit/205 degrees Celsius and bake the cake until golden and bubbling, 25 to 30 minutes. Remove from the oven and set aside for 15 to 20 minutes to firm up before serving. Sprinkle with the extra cilantro, and serve warm, spooned directly from the pan.

2 tablespoons oil (or less)

Steps:

  • Peel potatoes & grate them coarsely, then immediately toss them with melted butter & season with salt & pepper.
  • Heat oil in large frying pan, then add potato mixture.
  • Press mixture down to form an even layer that covers the pan.
  • Cook over moderate heat 7-10 minutes until base is well browned.
  • Loosen potato cake by shaking pan or running a thin spatula under it.
  • To turn it over, invert a large baking sheet over the frying pan &, holding it tightly against the pan, turn them both over together.
  • Lift off frying pan & return it to the heat, adding a little more oil if it looks dry.
  • Slide the upside down potato cake into the frying pan again & continue cooking until it is crisp & browned on the second side.
  • Remove from frying pan & serve hot!
