1 small onion (grated or finely chopped)
1 ½ pound ground pork (extra lean)
1 cup breadcrumbs (such as Panko)
2 large eggs
⅓ cup ketchup
2 tablespoon Worcestershire sauce
¼ cup parsley (fresh, chopped)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 cups cranberry sauce (homemade or store bought)
1 cup ketchup
3 tablespoon brown sugar (packed)
1 tablespoon lemon juice (freshly squeezed)

Steps:

  • Preheat your oven to 350 F degrees. Line a baking sheet with parchment paper. Set aside.
  • In a large bowl combine all the meatball ingredients together and mix well.
  • Wet your hands and form the mixture into medium size meatballs. You should end up with about 32 meatballs. Watch the video to see how to use a small ice cream scoop to make the meatballs.
  • Transfer the meatballs to the prepared baking sheet and bake for 20 to 25 minutes or until a thermometer reads 160 F degrees.
  • While the meatballs are baking, prepare the sauce. In a large skillet add all the sauce ingredients, stir and cook over medium heat until it comes to a boil. Turn down the heat and stir in the meatballs. Cook until heated through.
  • Garnish with parsley if preferred and serve warm.

Steps:

  • Mix ingredients: Place all ingredients in a large bowl. Using a hand mixer with the dough hooks attached, mix the ingredients together very well.
  • Shape meatballs: Once the mix is kneaded thoroughly, scoop out about 2-teaspoon-sized balls of meat. Cup the meat between your palms and roll it into a tight ball. Place the meatballs in a single layer on a lightly oiled baking sheet.
  • Bake: Preheat the oven to 425°F. Bake the meatballs for around 10 minutes, or until they're evenly browned on the outside and no longer pink in the middle. Do not overbake them, or they will be dry.

1 small carrot, grated
2 eggs

4 cloves fresh garlic or 1 teaspoon garlic powder, minced
1 cup shredded parmesan romano cheese
6 fresh basil leaves, minced
2 tablespoons dried parsley

5 ounces frozen spinach, thawed and squeezed dry
2/3 cup bread crumbs, seasoned or plain

2 TBS dried parsley
1 TBS dried basil
2 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes (optional)

Steps:

  • In a large bowl, combine all the ingredients thoroughly. Just use your hands to mix everything together.
