Easy to make Toffee Bars - simply delicious cookie bars topped with chocolate and chopped nuts.

1 cup all-purpose flour
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1 egg yolk
1 tsp vanilla extract
1 cup mini milk chocolate chips
1/2 cup finely chopped pecans, or substitute another type of nut

Steps:

  • Preheat oven to 350° F.
  • Spray a 8 x 11 inch rectangular pan with baking spray or line with parchment paper.
  • In a small bowl whisk together flour and salt, set aside.
  • In a large mixing bowl cream butter and sugar together until smooth.
  • Beat in egg yolk and vanilla extract.
  • Slowly mix in flour/salt mixture.
  • Press dough into the prepared baking dish and bake for 15 minutes or until set.
  • Immediately remove the pan from the oven and sprinkle chocolate chips over the top and return to the oven for two minutes.
  • Remove the pan from the oven and use an offset spatula to spread the chocolate evenly over the top. It will become clumpy and pull away from the top of the bars, but keep working it until smooth across the top.
  • Sprinkle the chopped pecans on top of the chocolate, slightly pressing them down into the layer of chocolate.
  • Place pan on cooling rack.
  • Once cool, remove from the pan and cut into bars.

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, mix butter, brown sugar, vanilla and egg yolk. Stir in flour and salt. Press in pan.
  • Bake 25 to 30 minutes or until very light brown (crust will be soft). Immediately sprinkle chocolate chips on hot crust. Let stand about 5 minutes or until chocolate is soft; spread evenly. Sprinkle with nuts.
  • Cool 30 minutes in pan on cooling rack. For bars, cut into 8 rows by 4 rows.

1 package Betty Crocker™ white angel food cake mix
1 1/4 cups cold water
6 bars (1 1/8 ounces each) chocolate-covered toffee candy, crushed (1 cup)
1 container (8 ounces) Cool Whip frozen whipped topping, thawed

Steps:

  • Move oven rack to lowest position (remove other racks). Preheat oven to 350°F.
  • Beat cake mix and cold water in extra-large glass or metal bowl on low speed 30 seconds; beat on medium speed 1 minute. Pour into ungreased 10x4-inch angel food cake pan (tube pan). (Do not use fluted tube cake pan or 9x3 1/2-inch angel food pan, or batter will overflow.)
  • Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and not sticky. Do not underbake. Immediately turn pan upside down onto glass bottle until cake is completely cool, about 1 hour. Run knife around edges; remove from pan.
  • Crush or finely chop candy bars; reserve 1/3 cup. Fold remaining crushed candy into whipped topping.
  • Tear cake into about 1-inch pieces. Mix cake pieces and whipped topping mixture. Press lightly in ungreased 13x9x2-inch rectangular pan. Sprinkle with reserved crushed candy. Freeze dessert about 1 1/2 hours or until firm. Cut into squares or spoon into dessert dishes. Freeze any remaining dessert.

These Toffee Bars are a delicious combination of cookie bar and toffee candy. Buttery shortbread, gooey toffee filling, melted chocolate, and toffee bits.

1/2 cup unsalted butter, softened
1/2 cup light brown sugar, packed
1-1/4 cups all purpose flour
1/4 teaspoon salt
1 cup toffee bits*, divided
1/3 cup sweetened condensed milk
1 tablespoon unsalted butter, melted
1 cup milk chocolate chips
flaky sea salt (optional )

Steps:

  • Preheat oven to 350°F. Line an 8x8 square baking dish with foil or parchment paper, grease and set aside.
  • Using a hand mixer or stand mixer fitted with the paddle attachment, beat butter and brown sugar until smooth and combined. Add flour and salt and beat until combined (the mixture will be crumbly, but should hold together if you press it between two fingers).
  • Dump the crust into the prepared pan and use the bottom of a measuring cup to press the crust into a flat even layer. Bake for about 15 minutes, until the edges are just beginning to turn golden brown.
  • Immediately after removing the crust from the oven, sprinkle the top with 1/4 cup toffee bits. Combine the sweetened condensed milk and melted butter, then evenly pour it over the top of the toffee chips (I pour it in a zig-zag/back and forth motion so that there is even coverage).
  • Return to the oven and bake for another 7-10 minutes, until the mixture is bubbling.
  • Remove from the oven and place the pan on a wire rack. Sprinkle the chocolate chips over the top. Wait 3-5 minutes for the chocolate chips to soften, then gently spread the softened chocolate chips using a small offset spatula. Be careful not to push down too hard with spatula, you only want to spread the chocolate, not the toffee layer underneath. Immediately top with 3/4 cup toffee bits, and a sprinkling of flaky sea salt (if desired).
  • Allow the bars to continue to cool until they are room temperature. After cooling you can move them to the refrigerator briefly to firm up the chocolate (if necessary).

¾ c. unsalted butter, room temperature (1 ½ stick)
¾ c. light brown sugar
1 ½ c. flour
2 sticks butter
1 c. brown sugar
½ c. chopped pecans
½ c. toffee pieces
2 c. Symphony Chocolate Bar w/ toffee pieces, chopped (or semi-sweet chocolate chips)

Steps:

  • Preheat oven to 350 Degrees and line a 9X13 casserole dish with aluminum foil and spray with baking spray. Set aside.
  • In a large mixing bowl, add the softened butter, brown sugar and mix until the sugar and butter has combined. Add the flour and stir together. Use your hands to bring all of the ingredients together until the dough becomes coarse crumbs.
  • Pour the mixture into the pan and press into an even layer in the pan. Bake for 10 minutes. Remove from heat and set aside.
  • In a medium saucepan, melt 2 sticks of butter on medium-high heat. Add the brown sugar and whisk. Slowly whisk until the mixture comes to a foamy boil and allow to boil for 1-2 minutes while slowly stirring. Pour the sugar mixture on top of the crust and place back in the oven for 7 minutes. Remove from oven.
  • While still warm, sprinkle on top the pecans, toffee pieces, and chocolate. Allow to sit for a minute so the chocolate can melt. Spread the chocolate across the bars and allow to sit until the chocolate sets. You can put the bars in the fridge to expedite this process. Cut into squares and serve.

I can't keep enough made ahead for company! I always have some on hand in the fridge! No need for an oven! You can substitute any nut of your choice in place of the sea salt for a change of taste.

1 pkg graham crackers, whole
1 c real butter
1 c brown sugar, firmly packed
1 c chopped pecans or walnuts
1/2 tsp instant coffee powder
2 c semi sweet chocolate chips
1-2 tsp coarse sea salt

Steps:

  • 1. Spray 9x13 pan with Pam. Line the pan with graham crackers. Break to fit if needed. Bring butter,brown sugar, coffee and nuts to a boil and then cook over medium heat for 5 minutes. Pour and spread over crackers. Let cool about 5 minutes, then Sprinkle chocolate chips over the top and spread as they melt. Sprinkle the sea salt or nuts over the melted chocolate as desired.
  • 2. You will use one sleeve (package) of crackers from the box of crackers. There seems to be a few left that have to be nibbled on while I cook the toffee:)

1 cup semisweet chocolate chips (recommended: Ghirardelli)
1 teaspoon vegetable oil
1 cup (8 ounces) mascarpone cheese, at room temperature

Steps:

  • Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
  • Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to overhang the sides. Spray the parchment paper lightly with cooking spray.
  • In a medium bowl, combine the cookie dough, 1/2 of the chopped chocolate-toffee candy pieces and vanilla extract. Using damp fingers, gently press the dough into the prepared pan. 1 graham cracker pie crust (8 oz if ready-made)

Steps:

  • Spread dessert topping on bottom of crust.
  • Pour milk into large bowl.

This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

1 cup light brown sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour

3/4 cup dried cranberries, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.

1 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
24 full size Ghirardelli Milk Chocolate Caramel Squares plus more for the topping (wrappers removed)
¼ cup toffee bits

Steps:

  • Preheat the oven to 350 degrees. Lightly grease a 9×13" baking pan. Line it with parchment paper so that you can easily remove the bars.
  • Using a mixer, cream the butter and brown sugar until smooth - about 2 minutes.
  • Add the egg and vanilla. Mix again, scraping the sides of the bowl as needed.
  • Add the flour and mix until just combined. The mixture will be thick and moist.
  • Place the mixture into the prepared pan and press along the bottom to cover it evenly.
  • Bake for 18 minutes or until the shortbread is set and just slightly browned around the edges.

You can create these sweet Skor toffee bars with just four simple ingredients- Ritz crackers, toffee bits, condensed milk, and milk chocolate.

11 oz (1 box) Ritz crackers
14 oz (1 can) sweetened condensed milk
8 oz (1 bag) toffee bits
1 cup milk chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line an 8x8 with aluminum foil or parchment paper and spray with cooking spray. Set aside.
  • Put the Ritz Crackers into a food processor and pulse until they are fine crumbs. Or put into a gallon sized baggie and crush until fine with a rolling pin.
  • In a medium mixing bowl mix together the Ritz cracker crumbs, toffee chips, and sweetened condensed milk until incorporated.
  • Press the crumbs into the bottom of your 8x8 pan. Sprinkle the chocolate evenly on the top. Bake for 10 minutes. Once the pan comes out of the oven, spread melted chocolate chips evenly with a spoon. Allow to cool for about an hour and enjoy!
