Pack classic cheese and pickle filling into puff pastry to make these moreish pinwheels. They're ideal for summer picnics or buffets

100g strong cheddar , grated
50g lancashire cheese , grated
2 heaped tbsp pickle
1 tsp English mustard powder
320g sheet all-butter puff pastry
1 beaten egg

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Mix the cheeses together. Mix through the pickle and English mustard powder. Unravel the pastry on a lightly floured surface, spread the cheese mixture over and tightly roll into a sausage shape from the longest side. Trim off the ends. Cut into 10 rounds and put on a lined baking sheet (swirl-side up), brush with the egg and bake for 15-20 mins or until golden brown. Leave to cool a little before eating.

1 (1 ounce) package ranch dressing mix
2 green onions, minced
4 (12 inch) flour tortillas
½ cup red bell pepper, diced
½ cup diced celery
1 (2 ounce) can sliced black olives
½ cup shredded Cheddar cheese

Steps:

  • In a medium-size mixing bowl, combine cream cheese, ranch dressing mix, and green onions. Spread this mixture on each tortilla. Sprinkle red pepper, celery, black olives, and cheese (if you'd like) over the cream cheese mixture. Roll up the tortillas, then wrap them tightly in aluminum foil.
  • Chill 2 hours or overnight. Cut off ends of the rolls, and slice the chilled rolls into 1 inch slices.

1/4 teaspoon garlic powder
1/3 cup black olives, chopped

Steps:

  • Mix all of the ingredients (except tortillas) together in a large bowl.
  • Spread the mixture thinly and evenly over each tortilla.
  • Roll up each tortilla tightly and wrap in plastic wrap.
  • Chill in the refrigerator for several hours or overnight.
  • Cut the tortillas about an inch thick and place them on a serving tray.

1/2 cup Thousand Island dressing
1/2 cup packed sauerkraut (rinsed and well drained)
2 cups shredded swiss cheese
12 ounces thinly sliced deli corned beef (16 slices)
8 (9-inch) flour tortillas

Steps:

  • In a medium bowl, mix together the cream cheese, Thousand Island dressing, and sauerkraut until smooth and well blended.
  • Scoop 2 heaping tablespoons of the cream cheese mixture onto one side of a tortilla; spread evenly almost to the edges.
  • Sprinkle with 1/4 cup of the cheese. Lay 2 slices of the corned beef (tearing the slices to make fit, if necessary) on top of the cheese.
  • Roll the tortilla up tightly. Repeat with all other ingredients.
  • Wrap the tortilla rolls in plastic wrap and place in the refrigerator for at least 1 hour.
  • Remove from refrigerator and discard plastic wrap.
  • Cut into rounds about 1 1/2-inches wide. Serve and enjoy!

This is a recipe that I got from my mother. My DS's absolutely love this recipe - one pinwheel isn't enough. We always have to make two. This is NOT a low fat recipe.

1 lb ground pork
1/2 cup fine dry breadcrumb (I use gluten-free)
1 egg, slightly beaten
1 teaspoon salt
1/2 teaspoon Worcestershire sauce
1 (1 lb) can sauerkraut, drained, and snipped
1/4 cup onion, chopped
5 slices bacon

Steps:

  • Combine ground pork, crumbs, egg, salt, and worcestershire; mix thoroughly,
  • On waxed paper, pat meat mixture to a 10 x 7 inch rectangle.
  • Combine sauerkraut and onion; spread evenly over meat.
  • Starting with narrow side, roll up meat jelly-roll fashion.
  • Place loaf in shallow baking dish.
  • Arrange bacon slices across top.
  • Bake in moderate oven (350º ) for 40 - 45 minutes.

3 cups dried spaetzle (uncooked)
1 tbsp olive oil or butter
14-1/2 ounces sauerkraut (reserve juice)
18 ounces shredded mozzarella cheese

Steps:

  • Cook the spaetzle al dente, about 15 minutes in salted water.
  • Add a layer of cooked spaetzle to a casserole dish. Top with a layer of sauerkraut, then a layer of cheese. Season top with salt and pepper.
  • Repeat for a second layer, and a third if needed.
  • Heat the olive oil in a pan and brown the sliced onion. Place the browned onions on top of the casserole.
  • Bake at 450 just till the cheese is melted and the sauerkraut is warmed, about 20 minutes.
  • For a juicier casserole, add some or all of the reserved sauerkraut juice to the casserole before baking.

8 flour tortillas (9″ diameter)

Steps:

  • Mix together cream cheese and Russian dressing until smooth and creamy. Mix in sauerkraut. Spread one side of a tortilla with cream cheese mixture, almost all the way to the edges. Sprinkle with about 1 oz of cheese. Lay a few slices of corned beef on top of the cheese. Roll up tortilla tightly. Repeat with remaining ingredients, laying rolled tortillas on a plate. Cover and refrigerate for at least 1 hour. Remove from refrigerator and slice into rounds and serve.

8 oz can refrigerated crescent dinner rolls
1/4 c chopped,drained roasted red bell peppers(from jar)
1/2 c well drained sauerkraut
1/2 c shredded swiss cheese
1/2 c cooked chopped corned beef or bacon , if using
sprinkle of caraway seed , optional
1/4 c melted butter

Steps:

  • 1. Heat oven to 375^. Generously grease cookie sheet (I use parchment paper too). Unroll dough into 2 long rectangles; press perforations to seal. Sprinkle each with roasted peppers to within 1/2 inch of edges. Top with sauerkraut , cheese , meat,if using; press lightly onto dough. Starting at short side of each rectangle, roll up; pinch edges to seal. With serrated knife, cut each roll into 8 slices. Place slices, cut side up , on greased paper on cookie sheet. Brush tops with melted butter and sprinkle with caraway seed,if desired. Bake at 375^ for 13 to 19 minutes or until golden brown. Immediately remove from paper. Serve warm with sour cream or ketchup if desired.
