CHEESE & MARMITE SAUSAGE ROLLS

Love Marmite? We're staking our bets on these being the best sausage rolls you've ever tasted. Cut them into mini portions as a canapé or keep them longer for a filling lunch

Number Of Ingredients 6

375g block all-butter puff pastry
plain flour , for dusting
2-3 tbsp Marmite , depending on how much you like it
85g extra mature cheddar , grated
400g sausagemeat or pork sausages (the best you can afford), skins removed and meat squeezed out
1 egg , beaten

Steps:

  • Roll the pastry out on a lightly floured surface to a rectangle roughly A4 size (30 x 21cm). Drizzle and gently spread over half the Marmite and evenly scatter with two-thirds of the cheddar. Fold the two ends of the rectangle into the middle, then fold everything in half again so the pastry is like a book, then fold in half again so you have a tight block of pastry. Cover with cling film and put in the fridge for at least 10 mins.
  • Tip the sausagemeat into a large bowl with the remaining Marmite and cheese and add 3 tbsp of cold water and squish or mix everything together.
  • Roll out the pastry to a neat rectangle, roughly 35 x 30cm. Trim the edges with a knife so they are perfectly straight, then cut in half lengthways so you have two long strips. Divide the sausage mix in two and mould each half along the middle of each strip in a cylindrical shape, leaving a decent border at either side. Brush the border and top of the sausage mix with beaten egg and roll the pastry over to encase the sausage, tightly pressing both edges of pastry together by crimping or pressing down gently with a fork.
  • Cut the sausage rolls into a length that suits. Place on a baking sheet and chill again for at least 20 mins or until ready to bake (chilling the pastry now will stop it from splitting as it cooks). Can be made up to a day ahead or frozen for a month. To cook from frozen, just add an extra 10 mins to the cooking time.
  • Heat oven to 200C/180C fan/gas 6. Brush the sausage rolls liberally with egg and bake for 30-35 mins until the pastry is deep golden - don't be scared to take them to the edge of dark golden and slightly charred around the edges. Lift from the tray to a rack immediately or they'll stick to the tray and leave to cool for at least 10 mins then eat hot, warm or leave to go cold and pack into a lunchbox.

500g potato , peeled and grated
200g mature cheddar (or vegetarian alternative), grated
100g soft breadcrumb
bunch spring onions , thinly sliced
2 eggs
500g pack shortcrust pastry
a little flour , for dusting
2 tbsp Marmite (or Vegemite)

Steps:

  • Put the grated potato, cheese, breadcrumbs and spring onions into a mixing bowl with 1 egg. Sprinkle over 1 tsp salt and plenty of freshly ground black pepper. Mix together.
  • Roll out the pastry on a lightly floured surface to just slightly thicker than a £1 coin. Use a 16-17cm saucer or bowl to cut out 6 circles of pastry - you may need to re-roll trimmings to get the last one. Warm the Marmite in a small pan or in the microwave with a splash of water so it is a bit runnier, then brush over each circle, leaving a 2-3cm border around each edge.
  • Divide the filling between the middles of each circle, then beat remaining egg and brush a little around each border. For each, bring up 2 sides of pastry to meet over the filling, and pinch and crimp to seal into a pasty shape. If eating straight away, transfer pasties to a baking sheet and chill while you heat oven to 160C/140C fan/gas 3. Or leave on the tray, wrap well in cling film and freeze for up to 3 months.
  • Brush the pasties all over with more egg. Bake for 50 mins-1 hr until golden brown and crisp. Eat warm, or cool, in the next 24 hrs.

320g sheet ready-rolled light puff pastry
1 tbsp Marmite
2-3 large handfuls of spinach
80g cheddar

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with the longer side directly in front of you. Spread the Marmite over the surface. Tear the spinach over the Marmite and scatter with the cheese, making sure it's evenly spread.
  • Tightly roll the pastry away from you (starting from the longer side) to create a long sausage shape, then cut into 12 pieces. Arrange over two baking trays lined with baking parchment, spiral side up, and squash down a little with your hand. Will keep covered and frozen at this stage. Bake for 15-20 mins (or 25 mins if cooking from frozen), until puffed and golden brown.

450g plain flour , plus extra for dusting
1 tbsp baking powder
3 tsp Marmite
1 large egg
about 250ml milk
1 tbsp sunflower oil
140g mature cheddar , grated
100g full-fat cream cheese

Steps:

  • Heat oven to 220C/200C fan/gas 7 and dust a baking tray with a little flour. Mix the flour and baking powder in a large bowl. Put 1 tsp Marmite in a jug, add the egg and make up to 300ml with the milk. Stir in the oil, then beat really well to dissolve the Marmite.
  • Tip 85g of the cheddar into a bowl and mix with the cream cheese and remaining Marmite to make a spread. Toss the rest of the cheese through the flour mixture, then pour in the milk mixture and stir with the blade of a knife until it comes together. (You need to work quickly once you've added the liquid, as it activates the baking powder.) Tip onto a lightly floured work surface and gently knead the mix, taking care not to overwork it, as it will make the scones heavy.
  • Press or lightly roll the dough into an oblong about 20 x 25cm. Spread with the Marmite mixture and roll up from the longest side to create a tight, fat cylinder. Pat the ends of the cylinder to straighten them, then slice into 8 pinwheels and put on the baking tray, patting them to make flattish rounds. Bake for 12-15 mins until golden and cooked.
  • Leave for a few mins on the tray to allow the cheese centre to harden a little, then transfer to a wire rack to cool. Eat warm or cold. Best eaten on the day they are made.

Number Of Ingredients 6

100g wholemeal flour
50g self-raising flour
25g medium oatmeal
100g butter
100g cheddar cheese, finely grated
1 large egg yolk

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Put the flours and oatmeal into a bowl and rub in the butter. Stir in the cheese. Add the egg yolk and mix in using a fork. When the mixture starts to clump together, use your hands to knead to a smooth dough.
  • Place the dough between two sheets of baking parchment and roll out thinly to about 1/2cm. Cut out desired shapes and lift them using a palette knife onto a non-stick baking sheet. Reroll any trimmings and cut out more shapes. Bake in the oven for 12-14 mins until golden brown. Leave on the tray for a few minutes to firm up before removing to a cooling rack.
  • Alternatively, take walnut-sized pieces of dough, roll into balls and place on the baking tray. Flatten slightly with a fork and bake as before.

A rich, cheesy biscuit that is good with soup, chilli, or stew. Medium cheese can be used, but sharp cheese will give more flavour.

2 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons granulated sugar
3/4 teaspoon salt
2 cups grated sharp cheddar cheese
1/3 cup oil
3/4 cup milk

Steps:

  • Measure first 4 ingredients into bowl.
  • Add grated cheese.
  • Stir.
  • Add cooking oil and milk.
  • Stir to form a soft ball of dough.
  • Add more milk if needed to make dough soft.
  • Turn out on lightly floured board and knead gently 8-10 times.
  • Roll to 3/4 to 1 inch thick.
  • Cut with biscuit cutter.
  • Place on ungreased cookie sheet close together for moist sides or 1 inch apart for crisp sides.
  • Bake in 425 degree oven for 15 minutes or until nicely browned.
  • Serve plain or with butter.

500g small elbow macaroni
80g butter , plus extra for tossing through the pasta
3 tbsp plain flour
600ml whole milk
170g can evaporated milk
700g extra mature cheddar , 500g coarsely grated, 200g chopped into small chunks
1 tbsp mustard powder
large pinch cayenne pepper
1 tbsp Marmite
splash of malt, cider or red wine vinegar
50g grated parmesan (or vegetarian alternative)
50g fresh white breadcrumbs
50g panko breadcrumbs

Steps:

  • Heat oven to 220C/200C fan/gas 8. Cook the macaroni in salted water for 2 mins less than the stated cooking time, so it still has plenty of bite. Drain well and toss with a small knob of the butter to stop it from sticking together.
  • In a heavy-bottomed saucepan, heat the remaining butter until frothy and nut-brown. Pour off 1 tbsp into a small bowl and place the pan back on the heat, then scatter over and whisk in the flour and cook for 3 mins until you have a sandy paste. Add the milk, a splash at a time, simmering and whisking until smooth between each addition. Once all the milk has been added, drizzle in the evaporated milk, then add the grated cheddar, a handful at a time, until you have a thick, cheesy sauce. Stir through the mustard powder, cayenne, Marmite and vinegar and taste for seasoning, adding salt and pepper as needed.
  • Remove from heat, stir in the macaroni, then stir through the chunks of cheese. Tip the contents of the saucepan into a large, buttered baking dish. In a small bowl, mix together all the breadcrumbs, the parmesan, another small pinch of cayenne and some crunchy sea salt if you want. Scatter the crumbs over the macaroni, drizzle with the reserved brown butter and bake for 30-35 mins until lightly browned, crunchy all over and bubbling around the edges. Leave to stand for 10 mins before serving straight from the dish.
