1 cup butter, softened
2 cups sugar
1 teaspoon salt
4 large eggs, room temperature
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups all-purpose flour
2 cans (21 ounces each) cherry pie filling
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Gradually add flour., Spread 3 cups dough into a greased 15x10x1-in. baking pan. Spread with pie filling. Drop remaining dough by teaspoonfuls over filling. Bake 35-40 minutes or until golden brown. Cool completely in pan on a wire rack., In a small bowl, mix confectioners' sugar, extracts and enough milk to reach desired consistency; drizzle over top.

1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
⅓ cup lemon juice
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling

Steps:

  • Place softened cream cheese in a mixing bowl; add condensed milk, lemon juice, and vanilla. Beat until well blended. Pour mixture into the pie crust. Chill for 5 hours. DO NOT FREEZE!!!
  • Pour cherry pie filling on top of pie. Serve.

1 cup butter (softened)
2 cups sugar
1 teaspoon kosher salt
4 eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
3 cups all-purpose flour
1 teaspoon baking powder
2 cans (21 ounce each) cherry pie filling
1 package (8 ounces) cream cheese (softened)
1/4 cup sugar
1 egg
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 - 3 tablespoons milk

Steps:

  • Begin by preheating your oven to 350 degrees F.
  • With a stand mixer, cream together the butter, sugar, and salt until light and fluffy. Add the eggs one at time. Beat well after each addition. Then, put in the vanilla and almond extract. Finally, gradually add in the flour and baking powder.
  • Spread about 2 1/2 cups of this batter into a greased 15x10x1-inch baking sheet. (I found it easiest to use an offset spatula greased with a little cooking oil to spread out the batter.)
  • In a medium-size bowl, beat together cream cheese, sugar, and egg. Add this on top of the first layer of batter. Then, spread out the cherry pie filling.
  • Drop the remaining batter by spoonfuls over the filling. Bake about 35-40 minutes or until golden brown. Cool in pan on a wire rack.
  • Once the bars are cool, in a small bowl mix together confectioners' sugar, extracts, and enough milk to reach a drizzling consistency. Drizzle over the top.

1 lb. fresh dark sweet cherries, pitted, cut in half

3/4 cup packed brown sugar
1/2 tsp. baking soda
3/4 cup cold butter, cut up
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

Steps:

  • Heat oven to 350ºF.
  • Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray. Mix cornstarch and water until blended.
  • Bring cherries, lemon juice and 1/4 cup granulated sugar to boil in medium saucepan on medium-high heat, stirring frequently; simmer on medium heat 5 min. or until cherries are softened, stirring occasionally. Add cornstarch mixture; cook and stir 1 to 2 min. or until thickened. Remove from heat.
  • Mix flour, oats, brown sugar and baking soda in large bowl. Cut in butter with pastry blender or 2 knives until mixture forms coarse crumbs; press half onto bottom of prepared pan. Bake 10 min. Meanwhile, mix cream cheese, egg and remaining granulated sugar until blended.
  • Pour cream cheese mixture over crust; top with cherry mixture and remaining crumb mixture.
  • Bake 25 to 30 min. or until golden brown. Cool completely. Use foil handles to lift dessert from pan before cutting into bars.

½ stick butter, chilled and cut into small pieces
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 egg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 9x13-inch baking pan with cooking spray.
  • Pour cookie mix into a large bowl. Cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs into the bottom of the prepared baking pan.

1 pkg cherry chip cake mix
1/2 c butter, room temperature
2 large 8 oz. packages of cream cheese
1 tub cherry frosting(already made)

Steps:

  • 1. Heat oven to 350. Beat cake mix and butter until crumbly. Reserve 1 cup.
  • 2. Press into 9x13" pan. Beat cream cheese, eggs, and frosting mix together.
  • 3. Pour over crust. Top with reserved crumbs. Bake 45 minutes. Cook and refrigerate at least 2 hours or more.
  • 4. Cut into 4x6 rows. They are so rich you won't need to cut any larger. Yummy!

CRUST:
1 cup walnut pieces, *divided
1 1/4 cups flour
1/2 cup firmly packed light brown sugar
1/2 cup butter flavor crisco
1/2 cup sweetened flake coconut
FILLING:
2 ( 8 oz.) pkgs. cream cheese, softened (16 oz. total)
2/3 cup sugar
2 eggs
2 tsp. vanilla
1 (21 oz.) can cherry pie filling, or you can use another flavor if preferred

Steps:

  • 1. Heat oven to 350°F. Grease a 13x9x2-inch pan. *Or line pan with foil and spray pan for easy removal and cutting later. Coarsely chop 1/2 cup nuts for the topping. Set aside. Finely chop remaining 1/2 cup nuts. Combine flour and brown sugar. Cut in shortening until fine crumbs form. Add finely chopped nuts and coconut. Remove 1/2 cup of this mixture and set aside. Press remaining crumbs into bottom of pan. Bake at 350°F for 12-15 minutes until edges are lightly browned. Beat cream cheese, sugar, eggs, and vanilla at medium speed until smooth. Spread over hot, baked crust. Return to oven and bake 15 minutes longer. Spread cherry pie filling over cheese layer. Combine reserved nuts and reserved crumbs. Sprinkle over cherries. Return to oven and bake 15 minutes more. Cool. Refrigerate several hours. Cut into 2 x 1 1/2" bars or small squares for parties ir cookie trays.

TART CHERRY CHEESECAKE CRUMB BARS

A four-layer delight! Shortbread-like cookie bottom layer, topped with a creamy cheesecake layer, a tart cherry layer, and then a crispy almond-crumb layer! This recipe makes a 13x9 pan. I cut mine into 24 bars, but you could cut them larger if you like! These stay fresh covered in an airtight container at room temperature for 2 days, but keep in the fridge if you still have them longer.

4 c (about 1 1/4 lb, or .6kg) Tart Cherries, pitted, or 20 oz. frozen
3/4 c (148g) Granulated Sugar
2 t (10ml) Lemon Juice
4 T (32g) Cornstarch or Cornflour
1/4 tsp (3ml) Almond Extract
Large pinch Kosher salt
12 oz (339g) Cream Cheese, room temperature
1/2 c (50g)Confectioners' Sugar
1 Large Egg
1.5 c (180g) All-Purpose Flour
1.5 c (180g) Whole Wheat Pastry Flour
1 c (198g) Granulated Sugar
1 tsp (4g) Baking Powder
1/4 tsp Salt
1 c (227g) Unsalted Butter, cut into small cubes
1 Large Egg, whisked slightly chilled
1/2 c (60g) Sliced Almonds

Steps:

  • Line a 13×9 Baking Pan with parchment and/or baking spray. Set aside.
  • In a medium saucepan (3-4 qt), place the cherries. Add in the sugar, lemon juice, cornstarch, almond extract and pinch of salt.
  • Heat over Medium temperature, stirring regularly, until mixture first boils, and then thickens. On my gas stove, this took just a few (less than 5) minutes. It would take a bit longer over an electric burner. Once thickened and glossy, remove from heat to a bowl to cool a bit while you make the other layers.
  • In a Medium bowl, whisk the room temperature cream cheese, sugar and egg until smooth. Set aside.
  • Whisk together the flours, sugar, baking powder, salt in a mixing bowl. Using your fingers, work the butter cubes into the dry ingredients until a crumbly dough is formed, much like the dough of a pie crust before adding the water. Butter pieces should be irregularly sized.
  • Add the egg and mix until incorporated.
  • Press half of the crumb mixture firmly into the bottom of lined/sprayed baking pan.
  • Using an offset spatula or a knife, evenly spread the cream cheese mixture over the layer of crumb mixture, leaving about 1/2″ around the edges.
  • Evenly spread the cooled cherry filling over the cream cheese mixture.
  • Using your hands, mix the sliced almonds into the remaining half of the crumb mixture. Then scatter small pieces of the crumb mixture over the cherry layer, until all the crumb mixture is used. The cherry layer should be completely covered (or almost completely) with crumb mixture
  • Bake in preheated oven 35-45 minutes, until top is golden brown. Mine took 42 minutes.
  • Cool completely before cutting into bars.

4 c. fresh Bing or other sweet cherries, pitted and halved (about 1 1/2 pounds)
1/3 c. granulated sugar
2 tsp. cornstarch
1/8 tsp. almond extract
2 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 sticks salted butter, softened
1 c. granulated sugar
Grated zest of 1 orange
1 large egg plus 1 egg yolk
1/2 tsp. vanilla extract
2 tbsp. whole milk
1 c. powdered sugar
Grated zest of 1 lemon
1 tbsp. whole milk, plus more as needed

Steps:

  • Preheat the oven to 350 ̊. For the filling: Combine the cherries, granulated sugar, cornstarch and almond extract in a bowl and let stand while you make the dough.
  • For the dough: Sift the flour, baking powder and salt into a medium bowl; set aside. Cream the butter, granulated sugar and orange zest in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until combined, about 2 minutes. Add the egg, egg yolk and vanilla and mix until fully incorporated, about 1 minute. Add the dry ingredients in three batches, alternating with the milk, and beat until the dough comes together (it will be soft).
  • Press two-thirds of the dough into the bottom of a 9-by-13-inch baking dish. Pour the cherry filling and any juices on top and spread it out. Crumble the remaining dough over the filling. Bake until the cherries are bubbly and the dough is golden, about 35 minutes. Transfer to a rack to cool completely, about 1 hour.
  • For the glaze: Combine the powdered sugar, lemon zest and milk in a medium bowl until smooth; thin with more milk, if necessary. Drizzle on the bars and cut into pieces.

MARASCHINO CHERRY BARS

1 cup butter or margarine
1 egg
1 tsp vanilla
1/2 tsp almond extract
2 1/4 cups flour
1/8 tsp salt
3/4 cup chopped maraschino cherries
1/2 cup powdered sugar
1-2 tsp maraschino cherry juice (approximately)

Steps:

  • Cream sugar and butter in a mixing bowl till smooth and creamy.
  • Beat in egg, vanilla, and almond extract. Stir in flour and salt, then cherries.
  • Chill for at least 30 minutes or until no longer sticky. Pat dough into a lightly greased 15" x 10" jelly roll pan. I periodically dip my hands in water so the dough doesn't stick to them.
  • Bake at 350 for 15-18 minutes. Cool completely and drizzle with glaze.
  • To make glaze, combine powdered sugar and enough cherry juice till you get the right consistency.

3 cups fresh Bing cherries (pitted and chopped)
1/2 cup granulated sugar
1 cup butter (softened (2 sticks))
1 cup granulated sugar
2 eggs
1 tsp almond extract
2 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup powdered sugar
2 tbsp milk

Steps:

  • Preheat oven to 350 degrees F. Coat a 9x13 pan with cooking spray and set aside. In a small bowl, combine the chopped cherries and 1/2 cup sugar. Mix well and set aside.
  • Using a stand mixer fitted with the paddle attachment (or a large mixing bowl with a hand mixer), combine the butter, 1 cup granulated sugar, eggs and almond extract and beat on medium speed until creamy and free of lumps.
  • In a separate bowl, combine the flour, baking powder and salt. Mix well. Gradually add to the butter mixture and beat on medium speed until just combined.
  • Using your fingers, press approximately half of the dough into the bottom of the prepared pan and bake in the preheated oven for 8 minutes. Remove from the oven and top with the cherry mixture. Drop the remaining dough in clumps over the top and bake for an addition 25-30 minutes, or until cherries are bubbling and the dough is golden brown. Let cool.
  • Using a stand mixer fitted with the whisk attachment (or a large mixing bowl with a hand mixer), combine the confectioner's sugar and milk. Beat on medium speed until smooth. Scrape the sides of the bowl if necessary. Drizzle the glaze over the bars, cut into squares and serve!

I ripped this recipe from a magazine a long time ago. I made it many times and it always turned out delicious as well as beautiful. Since then, I misplaced my box of recipes torn from magazines until the other day. I had previously tried to find this recipe on Zaar, but couldn't so I was happy to find the clipping so now I can share the recipe with all of you. Since the layers are baked separately, the cook time and the prep time overlap somewhat. Prep time does not include refrigeration time. I have used low-fat cream cheese and it turns out just as good. Enjoy!

1 egg
1 can (21 oz) cherry pie filling
1/3 cup sliced almonds

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, place cookie mix. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. Reserve 1 1/2 cups of the crumb mixture for topping. Press remaining mixture in bottom of pan. Bake 10 minutes. Cool.
  • Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth. Spread cream cheese mixture evenly over partially baked crust. Spoon cherry pie filling evenly over cream cheese layer.
  • In small bowl, mix reserved 1 1/2 cups crumb mixture and the almonds. Sprinkle over pie filling.

2 Tbsp. butter
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened, divided
1/2 cup sugar
2 eggs
1 tsp. almond extract
1 can (21 oz.) cherry pie filling
1/2 cup sliced almonds

Steps:

  • Heat oven to 350ºF.
  • Mix cookie crumbs, butter and 4 oz. cream cheese with mixer until blended. Reserve 1-1/4 cups crumb mixture; press remaining onto bottom of 13x9-inch pan sprayed with cooking spray. Bake 10 min.; cool.
  • Beat remaining cream cheese, sugar, eggs and extract until blended. Spread over crust; top with pie filling. Combine nuts and reserved crumb mixture; sprinkle over pie filling.
  • Bake 30 to 32 min. or until edges are lightly browned.
