8 ounces shredded swiss cheese
1 (8 ounce) box frozen chopped spinach
1 (9 inch) unbaked pie shells

Steps:

  • Preheat the oven to 350 degrees F. Hand whip eggs, half-and-half, mayonnaise, and flour in a medium mixing bowl. Add remaining ingredients. Pour into an unbaked 9-inch, deep pie crust. Bake for 45 minutes to 1 hour or until the top is golden brown.

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/4 teaspoon salt
1/4 cup butter or margarine
3 to 4 tablespoons cold water
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)
1 tablespoon all-purpose flour
4 eggs, slightly beaten
1 1/2 cups milk
1/2 teaspoon salt
1 cup firmly packed fresh spinach leaves, coarsely chopped
1 small red bell pepper, chopped (1/2 cup)

Steps:

  • Heat oven to 375°F. In medium bowl, mix 1/2 cup all-purpose flour, the whole wheat flour and 1/4 teaspoon salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like small crumbs. Sprinkle with water, 1 tablespoon at a time, tossing with fork just until flour is moistened. Shape into ball; flatten slightly.
  • On floured surface, roll dough into 12-inch round. Fold dough into fourths; place in 9-inch glass pie plate. Unfold and ease into pie plate, pressing firmly against bottom and side; crimp edge. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute.
  • In large bowl, mix cheese and 1 tablespoon flour. Stir in eggs, milk and 1/2 teaspoon salt until well blended. Stir in spinach and bell pepper. Pour into pie crust.
  • Bake 15 minutes. Cover edge of crust with strip of foil to keep crust from overbrowning. Bake 15 to 20 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

Unbleached all-purpose flour, for dusting
1 sheet (14 ounces) frozen all-butter puff pastry, such as Dufour, thawed
10 large eggs, plus 1 egg white
1/4 cup white sesame seeds
10 ounces frozen chopped spinach, thawed, drained, and squeezed dry
3 ounces cheddar, coarsely grated (1 cup)
1 1/4 cups heavy cream
Kosher salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees. On a floured surface, roll out dough to a 12-by-16-inch rectangle; prick all over with a fork. Whisk egg white with 1/2 teaspoon water; brush over dough. Sprinkle evenly with sesame seeds. Roll dough onto rolling pin; unroll onto a 9-by-13-inch rimmed baking sheet or shallow baking dish. Line with parchment; fill with pie weights or dry beans. Bake 20 minutes. Remove weights and parchment (if it sticks, bake a few more minutes); continue baking until golden and set on bottom, 8 to 10 minutes more (if browning too quickly, tent edges with foil). Immediately prick bottom where puffed excessively to flatten. Let cool 10 minutes.
  • Scatter spinach and cheese evenly over pastry. In a large bowl, whisk together eggs, cream, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Pour evenly over spinach and cheese. Bake until quiche is set and puffed slightly, 18 to 22 minutes (if browning too quickly, tent with foil). Let cool on a wire rack; serve warm or at room temperature.

3 slices swiss cheese, torn into pieces
1 small onion, diced
1/2-3/4 teaspoon salt
1/4-1/2 teaspoon pepper
9 inches pie crusts, partially cooked (5-10 minutes)
4 slices swiss cheese

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Mix all ingredients from frozen spinach through pepper in a large bowl and pour into partially cooked pie crust.
  • Top with the remaining 4 slices of swiss cheese and bake in oven for 40 minutes.

One of our favorite quiches. From a local hospital cookbook my mom gave me. We omit the salt as the cheese adds enough salt for us. *Note: Make sure the pie crust is a deep dish! We have made this using a regular one before with messy results!

2 cups swiss cheese, grated
2 tablespoons flour
10 ounces frozen spinach, chopped, cooked, and very well drained
1 cup milk
2 eggs, beaten
3 slices cooked bacon (optional, we use turkey bacon)
1/2 teaspoon salt
pepper, to taste
1 unbaked deep dish pastry shells, 9 inches

Steps:

  • Preheat oven to 350°F.
  • Toss grated cheese with flour.
  • Add spinach, milk, eggs, bacon, and seasonings; mix well.
  • Pour into pastry shell.
  • Bake at 350 for 1 hour or until set.

CHEESY SPINACH (OR SWISS CHARD) AND MUSHROOM QUICHE



Cheesy Spinach (Or Swiss Chard) and Mushroom Quiche image

This quiche is easy to make and really tasty. You can use any kind of cheese combination. Grate the cheese on the large holes of the grater. This is a great way to use up bits and pieces of left over cheese. I usually make this after a party, when I have lots of kinds of left over cheese that may not get used up otherwise. I have even used Parmesan and feta mixed with other cheeses and it always tastes great. Try whisking in 1 1/2 tsp of dijon mustard with the half and half or milk for a little more flavor. I have subsequently made this with 1 bunch of well sauteed, chopped, swiss chard and 1/2 onion, finely diced. I sauteed them in 3 tbsp butter for 15 minutes over med heat, and used 1 1/2 c. of the cooked chard and onion instead of the spinach. Everything else remains the same. It was really, really good.

1 frozen pie crust
1 (10 ounce) box frozen chopped spinach, thawed
3/4 cup half-and-half or 3/4 cup whole milk
4 eggs
1/2 cup grated gruyere cheese
1/2 cup grated asiago cheese
1/2 cup grated gouda cheese or 1/2 cup Fontina cheese
5 mushrooms, sliced
1/4-1/2 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon nutmeg

Steps:

  • Drain the spinach very, very well. I squeeze it and them roll it in paper towels to get all liquid out - otherwise, a soggy pie.
  • Place spinach in pie shell.
  • Top spinach with mushrooms.
  • Sprinkle nutmeg over mushroom.
  • Top mushrooms with cheese.
  • Beat eggs well and add half and half, salt and pepper.
  • Pour egg mixture over cheese, being careful not to let it run over edges of the pie. I use the tip of a knife to move the cheese a bit so that the egg mixture can get through to the bottom of the pie.
  • Bake at 350F for 45-50 minutes. Top will be lightly browned and it won't look wet. Let it sit for about 10 minutes before cutting and serving.

  • Combine butter, flour, and salt. Using a pastry blender cut in the butter until very crumbly. Add chilled water a tablespoon at a time mixing with a fork until the dough pulls together. Form into a disk, wrap in plastic, and chill for at least 2 hours up to overnight.
  • Gently roll the pie dough out to a 12 inch circle on a lightly floured surface. Fold the piecrust or roll it around your rolling pin to move it to the deep dish pie plate. Gently tuck it into the pie pan, trim the edge about an an inch over the side, tuck it in along the edge and flute it. Line the pie crust with aluminum foil and fill with pie weights, rice, beans, or sugar. Bake in the preheated oven for about 15 minutes. Remove from the oven and carefully remove the weights and foil.
