Here's what you need: ground beef, salt, pepper, cheddar cheese block, hawaiian sweet roll, roma tomato, red onion, lettuce, sriracha mayonnaise

2 lb ground beef
salt, to taste
pepper, to taste
8 oz cheddar cheese block, 2 blocks
2 packages hawaiian sweet roll
roma tomato, sliced
red onion, sliced
lettuce
sriracha mayonnaise

Steps:

  • Add ground beef, salt, and pepper to a large bowl. Combine until the meat is evenly seasoned.
  • Roll into 16 meatballs and set aside.
  • Cut each cheddar cheese block into 8 cubes (totaling 16 cubes).
  • Press the cheddar cheese cube into the meatball and wrap the meat around it, completely covering the cheese.
  • Preheat a skillet on medium heat for 10 minutes. After preheated, carefully coat with a light layer of oil with a high smoke point (we used canola oil).
  • Add sliders to the pan, frying on the first side until the bottom is browned and crisp and the sides begin to brown (about 2-4 minutes, depending on the desired doneness). Flip and finish cooking on the other side.
  • Serve immediately on Hawaiian sweet rolls with your favorite burger garnishes. (We added Roma tomatoes, red onion, lettuce, and Sriracha mayo.)

1 package dinner rolls (12)
1 tablespoon steak seasoning
1 pound thinly sliced deli roast beef
8 ounces shredded processed Cheddar cheese
4 ounces shredded provolone cheese
1/4 cup chipotle mayonnaise
2 scallions, white and green parts, chopped
1/2 cup (1 stick) unsalted butter, melted
2 tablespoons onion pulp (grated on a rasp)
2 tablespoons grated Parmesan cheese
1 tablespoon Worcestershire sauce
1/2 teaspoon red chili flakes
12 pickled sweet or hot pepper slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice the rolls in half and place the bottom half of the rolls in a 13-by-9-inch baking dish. Season the bread with the steak seasoning and arrange the roast beef on top in mounds. Top with the shredded Cheddar.
  • In a medium bowl, combine the provolone, mayonnaise and scallions. Spread this mixture on the cut sides of the top portion of the rolls. Place the tops spread-side down in the dish on top of the Cheddar.
  • Mix the butter, onion, Parmesan, Worcestershire and red chili flakes in a bowl. Pour over the top of the rolls. Cover with foil and bake 25 minutes. Remove the foil and place a pepper slice on top of each sandwich. Bake 5 minutes more to toast the roll tops. The sandwiches will be extremely hot; rest a few minutes before serving.

The recipe can be halved or doubled easily, so if there are a lot of kids in your crowd, you might want to cut back on the number you make. If a bunch of your drinking buddies are on their way over, however, you'll likely want to do 1 1/2 times the recipe, or even double it. We've given you suggestions for toppers and meat-and-cheese combinations, but those are just ideas to get your imagination going. Burgers:
3 pounds ground beef, turkey, lamb, or pork
2 large eggs, lightly beaten
2/3 cup grated Parmesan cheese
1/2 cup chopped fresh parsley (or other fresh herbs; see Cooks' Notes)
2 small garlic cloves, crushed with a garlic press
6 ounces Cheddar, feta, Saga blue cheese, Gouda, Pepper Jack, or whatever cheese you're partial to, chilled and cut into 1/2-inch cubes
30 (2-inch; a.k.a. party size) soft rolls, such as potato and brioche, or mini pitas
Toppers:
lettuce, sliced tomatoes, coleslaw, pickles, sliced raw onion and/or sautéed golden brown onions (see Cooks' Notes), ketchup, barbecue sauce, and garlic yogurt sauce (see Cooks' Notes)

Steps:

  • Gently combine meat, eggs, cheese, parsley, garlic, 1 teaspoon salt and 1/2 teaspoon pepper with your hands. (Do not overmix).
  • Form scant 1/4 cupfuls of meat mixture into about 30 meatballs. Push a cheese cube into center of each ball and encase meat around cheese, then slightly flatten each ball to a 2-inch diameter.
  • Broiler directions:
  • Preheat broiler. Put half of sliders on an oiled rack of a broiler pan and broil, turning over once, until just cooked through (no longer pink), 4 to 8 minutes total. Repeat with remaining sliders.
  • Grill directions:
  • For easy entertaining, go with a gas grill. Preheat all burners on high, covered, 10 minutes, then adjust heat to medium-high. Grill sliders, in batches if necessary, turning once, until just cooked through, 4 to 8 minutes total.
  • Make sliders with toppings and rolls.

1/4 cup melted butter

Steps:

  • Preheat oven to 350°. Combine ground beef, bread crumbs, pesto and egg; mix lightly. Shape into 12 meatballs; place on a greased rack in a 15x10x1-in. baking pan. Bake until browned and a thermometer reads 160°, about 35 minutes. Toss meatballs with sauce; set aside., Meanwhile, without separating rolls, cut horizontally in half; arrange bottom halves in a greased 13x9-in. baking dish. Place half of cheese slices over roll bottoms; sprinkle with oregano. Add meatballs and sauce. Top with remaining cheese slices and bun tops., Combine butter, olive oil, garlic, Italian seasoning and red pepper flakes; brush over buns. Bake, covered, for 20 minutes. 1/2 cup KRAFT Finely Shredded Triple Cheddar Cheese
8 small lettuce leaves
1 large plum tomato, cut into 8 slices
1 small red onion, slivered
8 slider buns
1/3 cup HEINZ Tomato Ketchup

Steps:

  • Heat grill to medium-high heat.
  • Shape meat into 8 thin patties. Place 1 Tbsp. cheese on center of each patty; press meat around cheese to completely enclose cheese. Roll each into ball, then flatten into 1/4-inch-thick patty.
  • Grill 3 to 5 min. on each side or until done, adding buns, cut sides down, to grill to toast for the last 2 min.

4 ounces cheddar cheese, cubed into 8 pieces
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Mix together the beef, salt, salt and pepper. Shape into 8-2 ounce balls.
  • Fill each ball with a cube of cheddar cheese.
  • Shape each burger ball into a small slider burger shape.
  • At this point you can freeze in a resealable freezer proof bag or cook.
  • I like to cook in the broiler for a few minutes to the desired doneness as the sliders are so small on the grill grates. You can also cook in a toaster oven if you are doing just a few as a quick after school snack.
  • My kid likes to eat these without bread and dipped in ketchup with a side of dill pickles. You can use hot dog rolls cut into pieces to make mini cheeseburgers.
