- In a large bowl, dissolve yeast in warm water. Add milk, eggs, butter, sugar, salt and 3 cups flour; beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; knead in cheese. Divide dough in half; shape each portion into a 6-in. round loaf. Place on greased baking sheets. Cover with kitchen towels; let rise in a warm place until doubled, about 45 minutes. Preheat oven to 350°., Bake until golden brown, 35-40 minutes. Remove from pans to wire racks to cool.

- Combine brown sugar, mustard and ketchup in small dish and mix well.
- In separate medium or large bowl, combine remaining ingredients, except ground beef, and mix well.
- Preheat conventional oven to 350 degrees (convection oven at 325 degrees).
- Add ground beef to mixture in large bowl and mix thoroughly (kneading and squeezing with bare hands works well).
- Separate meat loaf mixture into 6 equal sections and shape into loaves.
- Spoon and spread brown sugar mixture on top of each loaf.
- Bake at 350 degrees for 35 minutes (convection oven at 325 for 30 minutes).

MINI CHEDDAR MEATLOAVES
These are so good, everyone loves these, even my grandpa who doesn't like cheese on or in anything, he couldn't even taste it! The sauce is so good! This has become my main meatloaf recipe! I got this from a Ground Beef Cookbook.

- In a bowl beat eggs and milk, stir in cheese, oats, onion, and salt.
- Crumble beef over mixture and mix well.
- Shape into 8 loaves place in 13x9x2 baking dish, I normally make my loaves bigger and can get about 4-5.
- In separate bowl, combine ketchup, brown sugar, and mustard, Mix well.
- The original recipe says to spoon over loafs and bake 45 minutes or until no longer pink and meat thermometer reads 160 degrees, uncovered at 350 degrees. However, I bake mine without the sauce until the last 10 minutes or so and then spoon the mixture over the loaves, replacing them back in oven to finish cooking.

LIL' CHEDDAR MEATLOAVES
We have given up all other meat loaf recipes for this one. I love the individual servings and every bite has the yummy catsup sauce where in "regular" meat loaf it's just a small strip on top! With the smaller loaves it also makes the cooking time a bit quicker. This recipe came from '99 TOH magazine but I added the rubbed sage for some extra flavor. Enjoy!

Steps:
- In a bowl, beat the egg and milk.
- Stir in cheese, oats, onion, salt and rubbed sage.
- Add beef and mix well.
- (It will seem runny at first but will thicken up as you mix.) Shape into 8 equal sized loaves (oval/egg shaped) and place in a greased 9X13X2" baking dish.
- Sauce: Combine catsup, brown sugar and mustard.
- Spoon over each loaf so they are all covered in the sauce.
- Bake uncovered at 350 degrees for 45 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees.
- For OAMC:.
- To Freeze:Place the meat loaves in the casserole dish (without sauce).
- Wrap with foil and freeze.
- To Reheat: Defrost overnight.
- Mix together the sauce and top each meat loaf with sauce.
- Bake at 350 degrees for 45 minutes or until meat is no longer pink in the center.
- Cooked meat loaves (already topped with sauce) also freeze very well and then can be defrosted and heated in the microwave for a quick meal.

For rolls cut the dough into 18 pieces and shape into balls, let rise as directed and bake for 20-25 minutes in a 375 degree oven. Steps:
- Prepare a heavy-duty stand mixer with kneader blade attachment.
- In a small saucepan heat the milk with butter and salt (the sugar will be proofed with the yeast) until the milk is warmed and the butter is melted; remove from stove top and cool to lukewarm (I stick the saucepan in the fridge for about 20 minutes).
- Proof 1 tablespoon plus 1 teaspoon dry yeast in 1-1/2 cups warm water with 2 tablespoons sugar until foamy (about 8-10 minutes).
- Place 4-1/2 cups flour in the stainless steel mixing bowl.
- When the milk mixture is luke warm and the yeast is proofed add to the mixing bowl.
- Start kneading adding in more flour if needed to create a soft smooth dough; knead for about 8 minutes.
- The last couple of minutes of kneading add in the grated cheddar cheese; mix until combined with the dough.
- Remove the dough to the counter; cover with a clean towel and let rest about 5 minutes.
- Gather up the dough and shape into a ball.
- Place in an oiled bowl; cover with plastic wrap or a clean towel, then let rise in a warm place for about 1 hour.
- Punch down the dough and let rest covered for about 5-6 minutes.
- Divide the dough evenly in half and shape into two oval loaves.
- Place the two loaves onto a large greased baking sheet (leaving room between the dough).
- Cover and let rise for about 30 minutes.
- In a small bowl mix together the egg and water; brush liberally onto the top and sides of the dough (you will have some egg mixture leftover).
- Bake in a 400 degree oven for about 23 minutes or until lighly golden brown; remov quickly sprinkle with grated cheese, place back into the oven and bake until browned (another 3-5 minutes).

- Preheat oven to 350°F.
- Butter 8 mini loaf pans, or large muffin tins.
- Combine flour, cornmeal, sugar, paprika, onion powder, baking powder, baking soda, and salt in a medium bowl. Set aside.
- In a large bowl, use a wire whisk to combine buttermilk, egg and melted butter.
- Stir in the flour mixture until just combined.
- Fold in the bacon. and 1/2 cup cheese. and the (OPTIONAL) minced pickled jalapenos.
- Pour about 1/2 cup batter into each of the buttered loaf tins.
- Bake for 8 minutes.
- Sprinkle the rest of the cheese evenly over the tops of the loaves. Bake just until a toothpick inserted in the center of the loaves comes out clean (about 8-10 minutes more.).
- Cool for 10 minutes. Loosen edges and turn out onto a wire rack. Serve warm, or at room temperature.
- NOTE: My little loaf pan has eight openings (3.7" x 2.4" each).

- pe-heat oven to 180C/160Cfan/gas mark 4. line a 2lb loaf tin with baking paper. Melt the butterand leave to cool- don't allow it to solidify.
- grate the courgettes and set aside. Sift the flour, salt,cayenne powder into a bowl. Stir in the cheese.
- Lightly beat eggs, milk and melted butter together with a fork.Add to the flour along with the courgettes and stir until evenly mixed
- Put the mixture in the loaf tin and level the top. Bake for 45-50 minutes or until the springs back when pressed slightly cool on a wire rack. and spread with soft cheese.
