Yield 20 muffin cups.

Number Of Ingredients 11

2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon pepper
6 large eggs, room temperature
1 cup 2% milk
1/2 pound fully cooked ham, cubed
1/2 pound cheddar cheese, diced or shredded
1/2 pound sliced bacon, cooked and crumbled
1 small onion, finely chopped

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, salt and pepper. Beat eggs and milk; stir into dry ingredients until well combined. Stir in the ham, cheese, bacon and onion. Fill well-greased muffin cups three-fourths full. , Bake at 350° until a toothpick inserted in the center comes out clean, about 45 minutes. Cool for 10 minutes before removing to a wire rack.

2 cups cheddar cheese, finely shredded
2 (2 1/2 ounce) packages ham, thinly sliced chopped
3/4 cup mayonnaise
1/3 cup bacon bits
2 -3 teaspoons Dijon mustard
1 (12 ounce) package ready-to-bake refrigerated buttermilk flaky biscuits

Steps:

  • In a bowl, combine the cheese, ham, mayonnaise, bacon and mustard. Split biscuits into thirds. Press onto the bottom and up the sides of ungreased miniature muffin cups. Fill each with about 1 tablespoon of cheese mixture.
  • Bake at 450º for 9-11 minutes or until golden brown and the cheese is melted. Let stand for 2 minutes before removing from the pans.
  • Serve warm.
