CHEDDAR-CHIVE BISCUITS

Cheddar-Chive Biscuits image

Here's another of my favorite Easter recipes from my holiday cookbook that came out last fall.

Categories     baking     breakfast     main dish

Time 30m

Yield 30 servings

Number Of Ingredients 7

6 c. All-purpose Flour
1/4 c. Baking Powder
3/4 tsp. Salt
8 oz. weight White Cheddar Cheese, Grated
1/3 c. Sliced Chives (or Green Onions)
1 1/2 c. Cold Salted Butter, Cut Into Small Pieces, Plus More For Brushing
2 1/2 c. Buttermilk

Steps:

  • Preheat oven to 425 F.Combine flour, baking powder, salt, cheese, and chives in a food processor. Pulse until everything is mixed together. Add butter and pulse until mostly incorporated, but with a few remaining chunks of butter. Pour in buttermilk while pulsing, stopping just when the dough comes together. (Add a little more buttermilk if dough is overly dry.)Drop dough onto a baking sheet in 1/4 cup portions (bigger if you'd like!) and bake for 12-15 minutes, or until golden brown.Brush with melted butter and sprinkle with more chives! If you do not have a food processor, cut together the dry ingredients with the butter, then stir in the other ingredients.Note: Recipe can easily be halved.

7 slices bacon
3 cups flour
3 tablespoons sugar
4 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into small pieces or grated
1 1/2 cups shredded Cheddar cheese
1/4 cup chopped fresh chives
1 cup buttermilk

Steps:

  • Using a food processor, pastry cutter, or fingertips incorporate the chilled butter into the dry ingredients until the mixture resembles coarse meal. Add the Cheddar cheese, fresh chives, and cooked bacon. Mix to distribute the ingredients evenly.
  • Add the buttermilk and stir just until moistened. Using 1/2 cup dough for each biscuit and using a cup measure or an ice cream scoop, drop the biscuits onto the prepared baking sheet, spacing the mounds about 2-inches apart.

EASY PARMESAN CHIVE DROP BISCUITS

Easy Parmesan Chive Drop Biscuits image

I had some fresh chives left over that I wanted to use, and just threw this together. I was pleasantly surprised by the result, these little biscuits are very moist and flavorful. I made mine with fresh chives, but I'm fairly certain that the dried ones would be just as good. They would be good with a variety of main dishes, but I've been eating them as a snack. They're good with butter, but better with a dab of mayo.
