  • Steam broccoli; transfer to a large bowl.
  • Heat butter in a small saucepan over medium heat until foamy. Whisk in flour; cook, whisking, until mixture darkens slightly, 2 to 3 minutes. Add mustard and milk; simmer, whisking, until thickened, 3 to 5 minutes. Remove from heat.
  • Stir in cheese until just melted; season with salt and pepper. Pour sauce over broccoli; serve.

3 medium carrots, finely chopped
1 small onion, finely chopped
4 cups fresh broccoli florets, chopped

4 cans (14-1/2 ounces each) chicken broth

1/2 cup all-purpose flour
1/2 cup water
3 cups shredded cheddar cheese
1 package (8 ounces) cream cheese, cubed
1 bottle (12 ounces) beer or nonalcoholic beer
Optional toppings: Additional shredded cheddar cheese, cooked and crumbled bacon strips, chopped green onions, sour cream and salad croutons

Steps:

  • In a Dutch oven, melt butter over medium-high heat. Add celery, carrots and onion; saute until crisp-tender. Add broccoli and red pepper; stir in broth and pepper. Combine flour and water until smooth; gradually stir into pan. Bring to a boil. Reduce heat; simmer, uncovered, until soup is thickened and vegetables are tender, 25-30 minutes., Stir in cheeses and beer until cheeses are melted (do not boil). Top with additional shredded cheese, bacon, green onions, sour cream and croutons as desired., Freeze option: Before adding toppings, cool soup; transfer to freezer containers. Freeze up to 3 months. Kosher salt and freshly ground black pepper
Cheddar Cheese Sauce, recipe follows
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
Kosher salt and freshly ground black pepper
1 cup grated sharp Cheddar

Steps:

  • Fill a medium saucepan with 1 inch of water and place a steamer inside. Bring the water to a boil, place the broccoli in the steamer, reduce the heat to medium, cover and steam until tender and bright green, about 5 minutes.
  • Transfer the broccoli to a bowl and sprinkle lightly with salt and pepper. Top the broccoli with the Cheddar Cheese Sauce, or serve it on the side.
  • Melt the butter in a medium saucepan over medium heat until foamy. Spoon the flour over the butter and cook, while stirring, until the flour becomes pasty. Pour in the milk while whisking and season with salt and pepper. Bring to a boil, reduce the heat to a medium simmer and cook for 5 to 8 minutes. 2 ounces bread flour
4 cups milk
1/2 small onion, peeled
1 whole clove
1/2 small bay leaf

nutmeg

8 ounces cheddar cheese
1/2 teaspoon dry mustard
2 teaspoons Worcestershire sauce

Steps:

  • Make a Bechamel sauce as follows: Heat clarified butter in medium size saucepan.
  • Whisk in bread flour and stir and cook over low heat until light cream color, but at least 1 minute.
  • Cool slightly.
  • In another saucepan, scald the milk.
  • Gradually add milk to the roux (flour and butter mixture) beating constantly with whisk.
  • Bring sauce to a boil, stirring constantly.
  • Reduce heat to a simmer.
  • Stick the bay leaf to the onion with the clove.
  • Place onion in sauce.
  • Simmer at least 15 minutes stirring occasionally.
  • Season very lightly with salt, nutmeg and white pepper.
  • Strain through a china cap.
  • Place plastic wrap on sauce to prevent formation of skin.
  • Cool in cold water bath and store in freezer in ziplock bags for later use, or keep warm over warm water bath for use in dishes being currently prepared.
  • To 1 qt of this Bechamel Sauce, add the cheddar cheese, dry mustard and worcestershire sauce.
  • Whisk over low heat until the cheese is melted and sauce is smooth.

10 cups water
3 tablespoons kosher salt
1/3 cup olive oil, plus more for drizzling
3 tablespoons fresh lemon juice
2 tablespoons unsalted butter
1 tablespoon granulated sugar
2 teaspoons crushed red pepper flakes
2 teaspoons whole black peppercorns
1 bay leaf
1 head of cauliflower, leaves removed
1 teaspoon smoked paprika
2 tablespoons butter
2 tablespoons all-purpose flour
½ cup whole milk
¾ cup beer (something light like a pilsner or amber)
2 teaspoons Worcestershire sauce
2 teaspoons spicy brown mustard
½ teaspoon salt
½ teaspoon black pepper
2 cups sharp cheddar cheese, grated

Steps:

  • To make the cauliflower, pour water into a large pot and bring to a boil. Once boiling, add the salt, olive oil, lemon juice, butter, sugar, red pepper flakes, peppercorns, and bay leaf. Stir until butter has melted.
  • Gently lower the cauliflower into the simmering water. The cauliflower should simmer top down in the liquid. No need to stir much. Just let it simmer away for 15 minutes or until very soft. To test the softness, insert a thin knife into the cauliflower. The knife should meet no resistance.
  • While the cauliflower simmers, place a rack in the center of the oven and preheat oven to 450 degrees F.
  • Carefully lift the cauliflower from the water and place in a colander to drain.
  • Place warm cauliflower in a pie plate. Drizzle generously with olive oil. Sprinkle with smoked paprika.
  • Roast for 30 minutes, rotating the pan two or three times during baking.
  • To extra brown the cauliflower, turn the oven to broil and roast for 3 to 5 more minutes. Keep an eye on the cauliflower to ensure it doesn't burn too much.
  • Remove from the oven and allow to cool while you make the cheese sauce. The cauliflower will be piping hot.
  • To make the Cheddar Beer Sauce, heat butter in a small sauce pot over medium-high heat. Add the flour and whisk together to form a paste and cook for a few seconds to develop a nutty aroma.
  • Slowly stream in the milk and whisk until thickened, about 2 minutes. Add the beer and Worcestershire sauce and whisk until smooth, well incorporated and thickened, about 5 minutes.
  • Add the mustard and season with salt and pepper. Remove from heat and add the cheese. Stir with a wooden spoon until melted and smooth.
  • To serve, place warm cauliflower in a serving dish. Pour the warm cheddar beer sauce around the cauliflower and serve. Enjoy!
