There are other recipes out there like this chicken style casserole that uses canned soups. This one is from scratch and make a huge impact on taste.

1 lb fresh broccoli break in pieces, and steam for 2 minutes.
3 c cooked chicken breasts -cubed
3 c grated cheddar cheese divided
2 pkg ritz crackers (sleeves)
1 stick melted butter
1 Tbsp poppy seeds (optional)
sauce
1/3 c butter- melted
1/4 c cornstarch, dissolved in 1/2 cup cold water
1/3 c cup chicken broth
1/4 tsp salt
1/4 tsp pepper
2 c milk
1 1/2 c of the above cheddar cheese

Steps:

  • 1. In greased 13×9 pan, layer the broccoli and chicken, then set aside
  • 2. In saucepan over medium heat, combine the melted butter, cornstarch dissolved in water, chicken broth, seasonings, and milk. Stir well, and continue stirring until sauce has thickened.
  • 3. Turn heat down to low, and add 1- 1/2 cups grated cheddar cheese. Stir until melted. Pour over the chicken and broccoli. Top with 1- 1/2 cups grated cheddar cheese.
  • 4. Melt the butter, and add the poppy seeds, and stir well. Crush Ritz crackers in large zip-lock bag with a rolling pin. Don't crush too small. Add crumbs to the melted butter.
  • 5. Sprinkle crumbs over the top of the grated cheese.
  • 6. Bake uncovered at 350 degrees for about 30 minutes, or until hot & bubbly.

6 chicken breasts, halved, boneless and skinless
vegetable oil
10 oz cream of broccoli soup
1/2 c milk
1 c cheddar cheese, shredded
cheddar cheese, additional to taste

Steps:

  • 1. Brown chicken breasts on both sides in a small amount of oil; drain off excess oil.
  • 2. Combine soup and milk; pour over chicken. Bring to a boil; cover and cook over low heat 5 to 10 minutes or until chicken is cooked.
  • 3. Remove chicken from pan; keep warm.
  • 4. Add 1 cup of cheddar cheese to sauce; stir until melted. Pour sauce over chicken.
  • 5. Sprinkle additional cheese over all. Serve with hot cooked pasta or rice.

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

3 cups cooked shredded chicken
2 cups cooked chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
½ cup sour cream
1 pinch ground black pepper to taste
2 ½ cups shredded Cheddar cheese
1 ½ cups bread crumbs
¼ cup salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine chicken, broccoli, condensed soup, sour cream, and pepper in a bowl. Mix in 1 cup Cheddar cheese. Pour into a 2-quart casserole dish and top with remaining Cheddar cheese.
  • Combine bread crumbs and butter in a bowl. Sprinkle over casserole.
  • Bake in the preheated oven until bubbly and cheese is melted, 30 to 35 minutes.

  • Melt the butter in a medium saucepan over medium-low heat. When it's melted, add in the flour and stir until smooth. Over medium heat, whisk continuously for a few minutes. Gradually add the milk and chicken broth. Season with salt and pepper. Continue to cook over medium heat and stir continuously until the mixture thickens. Whisk in the 1 cup of grated cheese. Pour over the chicken and broccoli. Top with the 1/2 cup of cheese
  • Melt the 3 tablespoons of butter, then add the poppy seeds and stir. Crush the Ritz crackers in a large zip-lock bag. Don't crush to finely, leave some bigger pieces of cracker. Add crumbs to the melted butter and stir. Sprinkle crumb topping over the casserole.
