1 medium-sized head of cauliflower (cut into florets)
8 slices of bacon (cooked and crumbled)
1 cup of shredded cheddar cheese
1 medium red pepper (diced)
1 medium red onion (diced)
1 cup of mayonnaise
2 tsp sugar

Steps:

  • Combine the bacon, cheese, red pepper, onion, and cauliflower in a large bowl.
  • In a separate small bowl, combine the mayo and sugar.
  • Pour the mayo mixture over the veggie mixture and toss until the salad is completely coated. Cover and refrigerate for a couple of hours before serving, to give the flavors time to mingle.

1/2 teaspoon pepper

Steps:

  • Chop the cauliflower into bite-sized pieces and place in a steamer basket.
  • Steam for 3-5 minutes or until tender-crisp.
  • Add the cauliflower to a large mixing bowl and place in the fridge to chill for 2 hours.
  • Add the remaining ingredients to the bowl of cauliflower and stir well to combine.
  • Serve immediately.

This simple but delicious Bacon & Cheddar Cauliflower Salad is the perfect side dish for your next picnic or potluck. Throw some meat and veggies on the grill and mix up this easy cauliflower salad and you're good to go! The dressing reminds me of the type of dressing you'd find on a potato salad, but it also has a bit of a honey mustard vibe goin' on. THM S and low carb. 8 cups chopped fresh cauliflower (approx. 1 large head of cauliflower)
⅔ cup mayonnaise
½ cup sour cream
2 tablespoons prepared yellow mustard
1 tablespoon apple cider vinegar
2 teaspoons dried minced onion
1 teaspoon THM Super Sweet Blend
1 teaspoon onion powder
½ teaspoon each smoked paprika, salt, black pepper

⅔ cup shredded cheddar cheese
2 tablespoons real bacon bits

Steps:

  • Whisk the dressing ingredients together. In a large bowl combine the chopped cauliflower, dressing, cheddar cheese, and bacon bits. Mix well. Garnish with additional bacon bits if desired.
  • I like to let the salad "marinate" in the fridge for 30-60 minutes before serving. Leftovers will keep a day or two in the fridge, but the salad gets softer. If you want to prep this for an event, chop the cauliflower and mix the dressing up in advance; but keep the cauliflower, dressing, cheese, and bacon separate. It'll take all of 2 minutes to mix it up an hour or two before serving.
  • PS: I've been getting some questions so I thought I'd clarify here that YES, the cauliflower is raw! It softens a bit in the dressing, but it has a nice crunch to it. It's like a broccoli salad, but with cauliflower. It's not really meant to be a low-carb mock of a potato salad. I'll leave that to the Picnic Radishto Salad on page 224 of Convenient Food, which was specifically formulated for that purpose.

A nice twist to a classic. Layered and baked until golden brown. A great side dish for any meal. I prefer a grilled steak or some roasted chicken, but this is so good and creamy. Originated as a recipe I developed for a restaurant I worked for, this has been a long standing favorite of friends and family. Give it a try and I am sure you will enjoy.

3 large potatoes, peeled and diced
1 head cauliflower, chopped
1/2 cup milk
1 tablespoon butter
salt
pepper
1 red pepper, diced fine
3 scallions, diced fine
1 medium onion, dice fine
3 slices bacon, chopped and sauteed
salt
pepper
1 1/2 cups shredded swiss cheese
1 cup Italian seasoned breadcrumbs
1 tablespoon butter, melted

Steps:

  • Potato and Cauliflower Layer -- In a large pot of boiling salted water on medium high heat, cook the potatoes for about 10 minutes and then add the cauliflower and cook another 5 minutes under tender. Remove from the heat and drain. Using a potato masher or even just a fork, slightly mash. I like to do a rough mash for this dish. Add, salt, pepper, milk and butter and set to the side.
  • Bacon, Pepper and Onion Layer -- In a medium saute pan, add the bacon and saute until crisp. Remove and let it drain on a paper plate lined with a paper towel. In the same pan, use the bacon drippings (no more than 1 teaspoon, you don't want too much oil) to cook the onion and red pepper red pepper until tender. Once the onion and pepper are done add the scallions, salt and pepper to taste and remove from the heat, drain if necessary (you don't want this oily) and set to the side.
  • Cheese and Crumb Mixture -- In a small bowl, add the melted butter, bread crumbs and cheese and mix well to combine.
  • Casserole -- In a casserole dish, spray with non stick spray and heat the oven to 375. Add a layer on the potato cauliflower mix; then a layer of the bacon, pepper and onions; then a layer of the cheese and bread crumb mix. Next, again, the potato cauliflower; bacon, pepper and onions; and then the cheese and bread crumbs.
  • Bake -- Thirty (30) minutes until golden brown and bubbly. This is a great side dish and makes a great presentation when you cut into it and serve.

200g smoked bacon lardons or cubetti di pancetta
2 large onions , sliced
800g potatoes , thickly sliced
1kg cauliflower , cut into bite-size florets
100g medium-mature cheddar or gruyère , coarsely grated
250ml double cream

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a pan and fry the bacon for 5 mins until just starting to crisp. Add the onion and sizzle for 12 mins until soft and golden.
  • Meanwhile, tip the potatoes into a large pan of water, making sure they are well covered. Bring to a gentle boil, then add the cauliflower and cook everything for 6-7 mins until both are tender. Tip into a colander and drain thoroughly.
  • In a gratin dish, layer the potato and cauliflower, then scatter with bacon, onion and a small handful of cheese. Drizzle each layer with a little cream and season. Continue until all the layers are finished, pour over the remaining cream and scatter with the last of the cheese. Bake for 30 mins until bubbling. Remove from the oven and set aside for 1 min to rest. Serve straight from the dish with a crisp green salad.

1 head cauliflower, chopped into bite size pieces
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced

4 ounces shredded sharp white Cheddar cheese
4 green onions, chopped
1 bunch chopped fresh chives
2 dashes hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. When cool, crumble into bacon bits.
  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
  • Combine the cauliflower, olive oil, garlic, salt, and black pepper in large bowl. Spread the cauliflower on the foil-lined baking sheet, and roast in the preheated oven until the cauliflower is lightly browned, about 15 to 20 minutes. Cool.
